- Whisk brown sugar, soy sauce, pineapple juice, water, vegetable oil, and garlic together in a large bowl; drop beef slices into the mixture and stir to coat. Cover bowl with plastic wrap.
- Marinate beef in refrigerator for 24 hours.
- Remove beef from the marinade, shaking to remove any excess liquid. Discard marinade.
- Thread beef slices in a zig-zag onto the skewers.
- Preheat grill for medium heat and lightly oil the grate.
- Cook skewers on preheated grill until the beef is cooked through, about 3 minutes per side.

- Whisk together the beef marinade ingredients until combined. Place the beef cubes into a large Ziploc bag or a plastic container with a lid.
- Remove 1/4 cup of the marinade and set aside in a container for basting later while BBQ-ing, and pour the remaining marinade into the bag with the beef.
- Refrigerate overnight for the tastiest results.
- When you are ready to cook, drain the beef from the marinade. Preheat your BBQ to medium-high heat. If your BBQ grate tends to stick, grease it accordingly.
- Thread the beef, pineapple, bell peppers and onion onto the skewers.
- Place the skewers on the preheated grill, turning frequently until nicely browned on all sides.
- The beef can be cooked until medium-rare, and the vegetables until tender crisp.
- Remove and serve. The skewers will be HOT!

- Combine sake, mirin, shoyu, 1 cup pineapple juice, sugar, garlic, carrot, and scallion greens in a medium saucepan over high heat. Bring to a boil, reduce to a simmer, whisk to combine, and cook until the mixture is syrupy and reduced to 1 1/2 cups, about 1 hour. Strain through a fine mesh strainer and allow to cool slightly.
- Combine remaining 1/2 cup pineapple juice with 1/2 cup reduced sauce and pour into a gallon-sized zipper-lock bag. Add sliced beef to bag and turn to coat. Allow to marinate for at least 1 hour and up to 4.

Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place skewers on grill and cook without moving until charred, about 2 minutes. Flip and cook until second side is well charred, about 2 minutes longer. Brush with sauce, and allow them to cook for 15 seconds longer. Transfer to a plate, brush with more sauce, and serve, passing extra sauce at the table.
