1 tablespoon olive oil
1 tablespoon butter, melted
3/4 lb sweet potato, left unpeeled and cut into 1/8 inch thick slices
salt

Steps:

  • In a small bowl whisk together the oil, butter and salt and pepper to taste.
  • Arrange the potato slices not touching in rows on an oiled baking sheet.
  • Brush slices with the oil mixture.
  • Roast them in the oven on the upper third or middle layer of a pre heated 450 degree oven turning once.
  • Bake for about 18-22 minutes or until golden crisp.
  • Drain on paper towels and sprinkle with salt to taste.

Wonderful slightly sweet baked potato slices. Ingredients amounts are only a suggestion. I always keep a cinnamon/sugar blend on hand.

4 medium sweet potatoes, peeled and sliced 1/2 inch thick
¼ cup butter, melted
2 tablespoons sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Arrange sweet potato slices on the baking sheet. Brush with 1/2 the butter. Mix the sugar and cinnamon in a small bowl, and sprinkle 1/2 over the potatoes.
  • Bake 15 minutes in the preheated oven. Turn, brush with remaining butter, and sprinkle with remaining cinnamon and sugar. Continue baking 15 minutes, or until tender.

1 -2 sweet potato, uncooked,peeled
1 -2 tablespoon real melted butter
parmesan cheese

Steps:

  • Use a very thin pan (or make a pan with tin foil) on a cookie sheet, spray with Pam.
  • Slice the sweet potato's somewhat thin and dip in butter.
  • Shake off excess butter.
  • Lay flat in pan and top with grated cheese.
  • Bake at 325 for 20 minutes, but watch them.
  • It all depends on how thick you cut them.

  • Arrange sweet potatoes in single layer on parchment paper-lined baking sheet. Bake 25 to 30 min., flipping over halfway, until tender and golden brown around edges. Arrange slices in 9 x13-in. (3 L) baking dish. (Make-Ahead: Cool sweet potato slices in baking dish, cover and keep chilled up to 2 days. Also set aside reserved maple syrup mixture.)
  • Preheat oven to 350ºF (180ºC). Drizzle remaining maple syrup mixture over sweet potatoes. Bake 10 to 15 min., or until hot. Sprinkle with parsley to serve.
