HOT CHICKEN SALAD
Having my recipe selected as a winner is a special thrill for me-my husband is a manager of the Penn State Univ. poultry research farm. Baking has always been my favorite type of cooking. So, when I got married 9 years ago, I was happy to have this simple yet delicious recipe-which originated with my aunt and was passed on to my mom. Now, with three small children (they're 6, 4, and 1), I need all the fast dishes I can find! It's great for a luncheon...or served with salad and rolls, for supper.

- In a large bowl, combine the first nine ingredients. In a small bowl, combine mayonnaise and soup. Pour over chicken mixture; stir gently to coat. Spoon into a greased 2-qt. baking dish. , In a small skillet, melt butter. Add cornflakes and almonds; cook and stir until lightly browned. Sprinkle over casserole. Bake, uncovered, at 350° for 30-35 minutes or until heated through.

HOT CHICKEN SALAD
This is an old recipe. Not old to me -- I purchased a "favorite recipe's" binder at an estate sale and it was filled with paper clippings and handwritten (yep!) recipe cards, sepia and browned. I thought, "who wants their chicken salad hot?!" But something about the recipe caught my eye and we made it. The incredible RICHNESS of it is beyond compare. There's only two of us, but it didn't last to bedtime, we enjoyed it so much!

Steps:
- Heat chicken broth over low flame until very hot. Add chicken and stir, allowing to warm up. Add celery, mayonnaise, almonds, pimento, onion, and salt -- toss gently together.
- Spread thin in 9 x 13 pan.
- Sprinkle cheese and chips on top.
- Bake for 15 minutes at 450*F.
TARA'S SWEET AND CHUNKY CHICKEN SALAD
A sweet, but healthy chicken salad. The sweet secret is dried cranberries. Awesome on homemade bread or on crackers. I spread cream cheese on the bread or crackers, and top with chicken salad.

SWEET DOWN HOME CHICKEN SALAD
This is an old southern recipe handed down for many gererations and I am sure there are many like it. Plain and simple easy to make but what makes mine set apart from others at a gathering is Dukes mayonaise. It truely makes a different taste. Makes a very good sandwich or party platter with crackers. I served at my daughters...

- 1. Boil the chicken until very tender. Pull off the bone and place in large mixing bowl. With a hand chopper chop chicken fine.
- 2. Chop the celery up fine, I use a food chopper to chop it fine. Add to chicken
- 3. Add whole 12oz jsr of Mt. Olive Sweet Salad Cubes
- 4. Add in sugar and whole pint size jar of mayonaise or little at a time making sure it is just the right amount for your chicken to mix in and be covered. Stir all this together and ready
