SPICED TURNIPS (SHALGAM MASALA)



Spiced Turnips (Shalgam Masala) image

I love turnips. This Northern Indian dish is great way to spice up traditional mashed turnips. This dish is great garnished with fresh cilantro or parsley and served with basmati rice, or with naan bread. The amount of chiles you use really controls the heat factor in this dish.

2 tablespoons vegetable oil
1 large onion, chopped
1 teaspoon ginger-garlic paste
2 small green chile peppers, seeded and chopped
2 tomatoes, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
½ teaspoon ground turmeric
salt to taste
2 cups peeled and cubed turnips
⅔ cup hot water
1 teaspoon brown sugar

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion; cook and stir until soft, about 10 minutes. Stir in ginger-garlic paste and chile peppers; cook until fragrant, about 1 minute.
  • Stir tomatoes, coriander, cumin, turmeric, and salt into the saucepan; mix well. Add turnips and hot water; stir well. Cover and bring to a boil. Reduce heat and simmer until turnips are tender, 20 to 30 minutes. Add brown sugar and coarsely mash the turnips.

These easy, caramelized roasted carrots and turnips are sweet, nutty, and delicious. Ready in less than 30 minutes with any herbs or spices you like.

4 medium turnips, peeled and chopped
4 carrots, peeled and chopped
2 tbsp olive oil
2 tsp Italian seasoning (or dried herbs)
Salt and pepper

Steps:

  • Preheat the oven to 400 degrees. Toss the turnips and carrots with olive oil, Italian seasoning, salt, and pepper. Spread out on a baking sheet, leaving some space between the vegetables so they roast. If they are too close together they will steam.
  • Roast the vegetables for 25-30 minutes until tender and beginning to brown. Shake the pans a couple of times during baking.

Turnips with Spicy Meyer Lemon Dressing image

Try the sweet, salty togarashi-spiked dressing tossed with cold noodles or spooned over fish.

2 cups bonito flakes
½ cup sugar
½ cup usukuchi (light) soy sauce
¼ cup mirin (sweet Japanese rice wine)
1 Tbsp. ichimi togarashi
Zest and juice of 4 Meyer lemons or regular lemons (about ½ cup juice)
2 bunches hakurei turnips with tops
2 Tbsp. vegetable oil
Kosher salt
Toasted sesame seeds (for serving)

Steps:

  • Preheat oven to 425°F. Grind bonito flakes in a spice mill or blender until finely ground (you should have about 2 Tbsp.). Bring ground bonito, sugar, soy sauce, mirin, and togarashi to a boil in a medium saucepan. Reduce heat to medium and simmer, stirring often, until reduced by a third, 12-15 minutes. Pour dressing into a small bowl; cover and chill until cold, at least 30 minutes and up to 3 days. Stir in lemon zest and juice.
  • Meanwhile, separate tops from turnips. Trim stems from leaves; discard. Coarsely chop leaves. Cut turnips into 1" wedges. Toss turnips and leaves with oil on a rimmed baking sheet; season lightly with salt (the dressing is salty). Roast, tossing halfway through, until leaves are wilted and turnips have taken on a touch of color, 12-15 minutes.
  • Transfer turnips and leaves to a platter; spoon some of the dressing over (you'll have extra). Sprinkle with sesame seeds.

2 pounds turnips, peeled and cubed
½ cup butter
1 cup sour cream
½ cup half-and-half cream
1 cup brown sugar
1 pinch ground nutmeg
salt and pepper to taste

Steps:

  • Place turnips into saucepan and fill with enough water to cover them. Bring to a boil, and cook until tender, about 20 minutes. Drain. Add butter to the hot turnips and mash with a potato masher or whisk. Once the butter has melted in, stir in the sour cream, half-and-half, brown sugar, nutmeg, salt and pepper. Mash to your desired consistency. I always undermash for a chunkier outcome. Cover and keep in a warm oven until ready to serve.

Sweet and Spicy Turnip Greens image

Turnip greens are slow-braised with chopped turnip roots and onion and are flavored with brown sugar, balsamic vinegar, cayenne pepper, and other delicious spices.

4 large bunches of turnip greens
2 medium turnip roots (chopped)
½ large yellow onion (chopped)
4 cloves garlic (minced)
2 tablespoons olive oil (extra virgin)
1 ½ cups vegetable broth or stock (you can also use chicken broth or stock)
2 tablespoons of good balsamic vinegar
1 tablespoon + 2 teaspoons liquid smoke
2 tablespoons brown sugar (you may use light or dark brown sugar, I used dark for this recipe)
½ teaspoon salt
½-1 teaspoon cracked black pepper
2 teaspoons garlic powder
2 teaspoons smoked paprika
¼ teaspoon cayenne pepper
¼ teaspoon chipotle pepper (optional)

Steps:

  • Chop the tough ends of the stems off of each bunch of turnip greens. Chop each bunch of greens by bundling them together with one hand and chopping into about 1-inch sections. Transfer chopped greens to the basin of a clean, large, deep sink.
  • Cover greens with water and with both hands, rub and toss greens in water to remove dirt and grit. Drain water and repeat process 3-5 times until greens are clean and no dirt is evident in water.
  • Heat oil in a large stock pot or dutch oven over medium high heat. Add onion and chopped turnip roots and cook for 3-5 minutes. Add garlic and saute until fragrant.
  • Add greens in two batches, stirring with a wooden spoon after each addition to wilt greens. After all greens have been added, pour in stock and stir to incorporate. Bring greens to a boil.
  • Once greens come to a boil, reduce heat to medium and add spices, brown sugar, liquid smoke and vinegar. Stir to incorporate all ingredients. Cover pot and simmer for 45 minutes, stirring occasionally.
  • Remove the lid after 45 minutes and continue to cook greens for about 15 minutes longer. Add more salt and pepper to taste if desired. Once greens have reached your preferred level of tenderness, transfer them to a serving bowl with some of the cooking liquid. Enjoy!
