SWEET AND SPICY ROASTED ALMONDS



Sweet and Spicy Roasted Almonds image

A delicious snack, cocktail nibble or salad topper, all in one easy recipe! But beware: these Sweet and Spicy Roasted Almonds are difficult to stop eating!

Number Of Ingredients 7

2 cups whole almonds
1 tablespoon extra virgin olive oil
1 ½ tablespoon honey
¼ teaspoon kosher salt
2 tablespoons sugar
½-1 ¼ teaspoons cayenne pepper (Cayenne pepper can vary in intensity. Start with less and add more to taste.)
1 teaspoon kosher salt

Steps:

  • Preheat oven to 350˚F with a rack in the center of the oven. Line 2 sheet pans with parchment paper. Set one of the prepared sheet pans near the oven.
  • Measure almonds onto the center of the other sheet pan. Drizzle the oil and honey over the almonds. Sprinkle with ¼ teaspoon salt. .
  • Place the almonds in the preheated oven for 3 minutes, then remove and stir well to make sure all the almonds are coated with the honey mixture. Spread the almonds back out to an even layer
  • Return the pan to oven and roast for 10-13 minutes or until nuts are a nice golden brown, Stir and spread to an even layer one more time half way through baking time.
  • While the nuts are baking, combine sugar, cayenne pepper and kosher salt. Stir well and set aside.
  • Remove the nuts from oven and transfer to the clean parchment paper, leaving any pooled honey/oil on the pan. Sprinkle the nuts immediately with the sugar/cayenne mixture and toss with two spoons till nuts are thoroughly coated. Spread nuts to a single layer and cool completely. Transfer to an airtight jar or container, leaving any excess sugar on the pan.

¼ cup white sugar
1 ½ teaspoons kosher salt
1 teaspoon cayenne pepper
2 ½ cups whole almonds
1 tablespoon water
1 tablespoon honey
1 teaspoon olive oil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 10 minutes. Watch the nuts carefully as they bake: they burn quickly.
  • Stir together the sugar, salt, and cayenne pepper in a mixing bowl; set aside.
  • Stir together the water, honey, and olive oil in a large skillet over medium heat. Once the mixture begins to bubble, stir in the toasted almonds until evenly moistened. Pour the almonds into the sugar and spice mixture, and toss until evenly coated. Spread onto baking sheets in a single layer, and cool to room temperature.

Not your typical roasted almonds, these have a little kick of chili powder and the depth of more cinnamon than most recipes.

1 egg white
1 teaspoon vanilla extract
3 cups whole almonds
½ cup white sugar
½ cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon chili powder
¼ teaspoon salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15-inch jelly roll pan.
  • Combine egg white and vanilla in large bowl; beat until frothy. Add almonds and toss to coat. Pour almonds into a mesh strainer to drain excess liquid, 5 to 10 minutes. Return strained almonds to the bowl.
  • Stir white sugar, brown sugar, cinnamon, chili powder, and salt together in a bowl. Sprinkle sugar mixture over almonds and toss to coat evenly. Spread coated nuts evenly onto prepared jelly roll pan.
  • Bake, stirring every 20 minutes, until the seasoning clings to the almonds, about 1 hour. Allow to cool completely before storing in an air-tight container.

Steps:

  • Preheat your oven to 180 Degrees C (350 F).Line a baking tray with some baking/parchment paper.
  • Mix the almonds, oil, cayenne pepper and salt together in a bowl.
  • Place the coated almonds on the baking tray, and roast for 15 minutes in the oven.Turn the almonds halfway through to ensure even cooking.
  • Serve immediately if enjoying warm, or allow to cool completely before storing.

8 strips bacon
8 tablespoons (1 stick) butter
1 cup packed brown sugar
4 teaspoons five-spice powder
1 teaspoon cayenne
1 teaspoon kosher salt
8 cups raw almonds

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with aluminum foil.
  • In a large skillet, cook the bacon over medium heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. When cool enough to handle, chop the bacon into small pieces. Set aside.
  • Meanwhile, pour off most of the bacon fat from the hot skillet and add the butter. Add the sugar, five-spice powder, cayenne and salt and stir until the sugar dissolves and everything is combined. Add the almonds and stir to coat.
  • Spread the nuts on the prepared baking sheet and bake until golden brown, about 30 minutes. Stir in the bacon and serve warm or at room temperature.
