2 lbs meatloaf mixture (Veal, hamburger, pork)
1 lb sage sausage
1 small onion, diced
1 cup celery rib
1 tablespoon garlic
1/4 cup yellow pepper
1/4 cup red pepper
1 tablespoon paprika
1 pinch salt
1 teaspoon pepper
1/4 teaspoon sazon goya
2 tablespoons sofrito sauce
1 egg
1 tablespoon brown sugar
1/4 cup white wine
1 cup breadcrumbs
1 tablespoon basil
1 tablespoon parsley
1/3 cup sweet and spicy barbecue sauce

Steps:

  • Preheat oven to 350 degrees.
  • Take Meatloaf Mix ( Veal, Hamburger, Pork) and Sage Sausage put in bowl pour White wine, Paprika, Salt, Pepper, Sazon, Sofrito, 1 Egg, Bread crumbs, Basil, Parsley, Brown sugar then cut and put Onion, Celery, Garlic, yellow and red Peppers mix together well.
  • Get a larger glass pan put vegetable oil on bottom.
  • Take meat and form it so it fits whole pan then take side of hand and make small indent in the middle of meatloaf making the sides even. Then take BBQ sauce pour on top take spoon and spread it to cover the top of meatloaf and sides.
  • Put in oven and cook for 35 to 40 minutes.

2-3 lbs. ground beef
1 ½ cups bread crumbs
2 large eggs
1 cup diced onion
1 cup shredded carrot
1 cloves of garlic, crushed
3 Tbsp. hot chili sauce
2 Tbsp. honey
1/4 tsp. pepper
1/2 cup KC Masterpiece® Sweet Honey and Molasses Barbecue Sauce®
2 Tbsp. hot chili sauce
2 Tbsp. honey

Steps:

  • Preheat the oven to 375ºF.
  • • In a large mixing bowl, use your hands to knead together the ground beef, bread crumbs, eggs, onion, carrots, garlic, hot chili sauce, honey, salt and pepper. Form the meat into a loaf and place in a large baking dish.
  • In a small mixing bowl, combine the KC Masterpiece® sauce, hot chili sauce and honey. Brush the sauce on top of the meatloaf.

I first had this at a church supper. It was delicious and asked for the recipe. I was amazed to see that there were not many ingredients in it. I now make this one and alternate it with my regular one Recipe #102545. The Sweet & Spicy Meatloaf has only a few ingredients and is delicious, and my regular one has more in it, but is delicious too. This has a nice sauce on top. I always thought that if there were more ingredients in a meatloaf, it would taste better, but not necessarily so. This is very,very tasty!

1 lb hamburger
1 cup fresh homemade breadcrumbs
1/2 cup milk
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup catsup
1/2 cup brown sugar
1/2 teaspoon dry mustard

Steps:

  • Mix the hamburg, bread crumbs, milk, onion, salt, and pepper together.
  • Make into a loaf and place in a 9x13 pan.
  • Set the oven for 350 degrees.
  • SAUCE: Mix the catsup, brown sugar, and dry mustard together.
  • Put half of the sauce on the meatloaf and bake for 20 minutes.
  • Get rid of any grease.
  • Put the rest of the sauce on and bake for another 25 minutes (total of 45 minutes).
  • Let sit for about 10 minutes.

2 slices whole-grain sandwich bread, torn into pieces
1/2 small onion, quartered
1 medium carrot, quartered
1/2 pound 93 percent lean ground turkey
1/2 pound 90 percent lean ground beef
1 large egg
1/2 teaspoon plus 1/8 teaspoon curry powder
Kosher salt and freshly ground pepper
1 tablespoon ketchup
1 tablespoon peach chutney or apricot jam
2 medium red-skinned potatoes, sliced 1/4 inch thick
1 head broccoli (florets cut into pieces, stem peeled and thinly sliced)
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F. Pulse the bread in a food processor until finely ground; transfer to a large bowl. Add the onion and carrot to the food processor and pulse until finely chopped. Transfer to the bowl with the bread and add the turkey, beef, egg and 1/2 teaspoon each curry powder, salt and pepper. Mix by hand until just combined. Shape into 4 small oblong meatloaves on a foil-lined rimmed baking sheet. Mix the ketchup and chutney in a small bowl and brush over the meatloaves. Bake until just cooked through, about 20 minutes.
  • Meanwhile, bring a pot of salted water to a boil. Add the potatoes and cook 4 minutes, then add the broccoli florets and stem; cook until the vegetables are just tender, about 6 more minutes. Drain; return to the pot. Toss with the olive oil and the remaining 1/8 teaspoon curry powder. Season with salt and pepper. Serve with the meatloaves.

2 tablespoons unsalted butter
1 cup finely chopped onion
½ cup finely chopped green onions
1 carrot, finely chopped
1 rib celery, finely chopped
1 tablespoon minced garlic
⅔ cup ketchup, divided
2 teaspoons Worcestershire sauce
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 ½ pounds ground beef
¾ pound spicy ground pork sausage
1 cup bread crumbs
⅓ cup minced fresh parsley
2 large eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.

Panko bread crumbs really make the difference here. When the Panko is soaked with the buttermilk, it forms a squishy texture that is different from regular bread crumbs. The meatloaf will have a light consistency while, at the same time, a rich flavor from the buttermilk. Panko is Japanese breadcrumbs and available in most grocery stores. Note: Leftovers make great meatloaf sandwiches.

1/2 cup ketchup
1/2 cup barbecue sauce
1/4 cup brown sugar
1/3 cup panko breadcrumbs, Japanese bread crumbs
1 cup whole-fat buttermilk
1 tablespoon olive oil
1 garlic clove, minced
1 cup small-diced onion
1/4 cup fresh parsley, chopped
1/3 cup fresh basil, chopped
2 tablespoons tomato paste
1 1/2 lbs ground beef, ground round works best
1/2 lb ground pork
1 cup grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Heat oven to 425 degrees (F).
  • Combine the glaze ingredients in a small saucepan and place over low heat.
  • Heat olive oil in a small skillet over medium heat. Add onions and garlic and cook until soft and translucent, don't brown. Add parsley, basil and tomato paste and cook for about a minute. Set aside to cool.
  • In a small bowl, combine Panko and buttermilk, let this set for 5 - 10 minutes.
  • Meanwhile, in a large bowl, place beef, pork, cheese, salt and pepper, the onion/garlic mixture and the Panko/buttermilk mixture. Mix with your hands until combined.
  • In a 13x9x2 rimmed baking pan, form the mixture into a loaf center of the pan, don't touch the sides of the pan. Brush sides and top with some glaze, then bake for 75 minutes, brush on more glaze after 45 minutes. Keep the leftover glaze warm and stir occasionally.
  • After baking, remove the meatloaf from oven and allow to cool for 5 minutes; then slice and serve hot with leftover glaze as a sauce.
