GRILLED SWORDFISH WITH NORTH AFRICAN SPICE RUB



Grilled Swordfish with North African Spice Rub image

Yogurt Sauce
1/2 cup plain nonfat yogurt
2 tablespoons chopped fresh cilantro
1 large garlic clove, minced
Spice Rub
1/2 cup chopped onion
2 garlic cloves, chopped
2 teaspoons caraway seeds
2 teaspoons ground coriander
1/2 teaspoon cayenne pepper
6-ounce swordfish steaks (about 3/4 to 1 inch thick)
1 tablespoon olive oil
Lime wedges

Steps:

  • For Yogurt Sauce:
  • Whisk yogurt, chopped cilantro and minced garlic in small bowl to blend. Season with salt and pepper.
  • For Spice Rub:
  • Combine chopped onion, chopped garlic cloves, caraway seeds, ground coriander and cayenne pepper in bowl of processor. Process until onion and garlic are very finely chopped and past forms.
  • Spread spice rub on each side of swordfish steaks, dividing equally. (Yogurt sauce and spice rub-coated fish can be prepared 4 hours ahead. Cover separately and refrigerate.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Brush grill or broiler pan and 1 tablespoon olive oil. Grill or broil swordfish steaks until fish is just cooked through, about 4 minutes per side. Transfer fish to plates. Top with dollop of yogurt sauce; garnish with lime wedges and serve.

This aromatic spice rub cooks to a crust, sealing in the moisture of the succulent swordfish steaks. Other firm white fish steaks, such as halibut, also work well in this recipe. Make a large batch of the spice rub and keep in an airtight container for up to 1 month. Use as a rub for chicken breasts or lamb chops.

2 swordfish steaks, about 1/2in thick
3 teaspoons cumin seeds
1 ripe avocado, halved, stoned, peeled and diced
3 scallions, washed, trimmed and finely chopped
1 lime, juice and finely grated zest
2 tomatoes, washed, deseeded and chopped
1 teaspoon paprika
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Steps:

  • Preheat the broiler to medium or prepare the barbecue. To make the spice rub, roughly crush all the spices together in a pestle and mortar or in a bowl using the end of a rolling pin. Add a little salt if desired. Tip the spice mixture onto a flat plate and turn the swordfish steaks in it to coat each side thoroughly.
  • Cook under the broiler or on the barbecue for 8-10 minutes on each side, or until the fish flakes and is just cooked and the outside is golden and crisp.
  • Combine all the salsa ingredients in a bowl, cover and chill until needed. Serve the fish with a spoonful of salsa, a green salad, and lime wedges for squeezing over.

6 (6 ounce) swordfish steaks, 1/2 inch thick,skin removed
2 lemons, juice of
2 shallots, thinly sliced
2 cloves garlic, crushed
2 tablespoons coarse grain mustard
1/4 cup extra virgin olive oil
3 -4 sprigs fresh thyme, minced
fresh ground black pepper

Steps:

  • Place the swordfish in a shallow bowl.
  • Whisk the lemon juice, shallots, garlic, mustard, oil and thyme in a small bowl; season with the pepper.
  • Pour over the swordfish.
  • Marinate, covered, at room temperature for 30 minutes, or in the fridge for several hours.
  • Set up your gas or charcoal grill and brush the grill rack with oil.
  • Arrange the swordfish on the rack; grill for 3-4 minutes on each side, or until seared on the outside and cooked through.

1 tablespoon low sodium soy sauce
2 teaspoons instant minced garlic
4 (6 ounce) swordfish steaks (about 3/4 inch thick)
cooking spray
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat broiler.
  • Combine first 7 ingredients in a small saucepan.
  • Dip each steak into lime mixture to coat.
  • Place fish on a broiling pan coated with cooking spray.
  • Sprinkle with salt and pepper.
  • Broil 10 minutes or until fish flakes easily when tested with a fork.
  • While fish cooks, place lime juice mixture over medium heat; cook until reduced by half (about 8 minutes).
  • Serve sauce with fish.
