MICROWAVE READY BAKE BRAN MUFFINS
These muffins make a great addition to any breakfast. They are easy to prepare ahead and batter will stay fresh in the refrigerator for up to six weeks.

Steps:
- In a large bowl, mix bran cereal with boiling water to soften cereal.
- Add remaining ingredients and stir well.
- To store in refrigerator, place in air-tight container.
- To bake in microwave, place baking cups in a microwavable muffin pan.
- Fill baking cups half-full with batter.
- Bake on high in microwave for approximately 45 seconds per muffin. Do not over cook. (Time will need to be adjusted per your microwave.).
- Serve muffins warm.
SWEET & SPEEDY BREAKFAST OAT BRAN MUFFIN (MICROWAVE)
Stir and pop into the microwave for an easy, healthy breakfast! I mix it up, microwave, and eat it straight out of a ceramic mug. The batter sticks a little, but to wash cleanly, pour in hot water and soap and let sit until you do the dishes! I was inspired by *Pixie* 's South Beach Muffin (http://www.recipezaar.com/South-Beach-Muffin-263983) but I didn't have the baking powder, yogurt, or flaxseed, so I improvised. Change up the recipe by adding in raisins, nuts, and other flavorings (almond extract, etc)

- Combine egg and stevia, and mix thoroughly.
- Add cinnamon, baking soda, vanilla extract, and oat bran and mix completely.
- Let sit for a couple of minutes, so the oat bran can absorb some of the liquid.
- Microwave on medium for a little over a minute (until batter forms solidly; so this is a loose guideline depending on your microwave and personal preference).

This is a delicious and lighter version of a type of oat bran muffin. You could vary the fruit - blueberries, strawberries, canned peaches, etc. They are incredibly delicious served with fresh strawberries. Yum!

- Preheat oven to 400 degrees F (200 degrees C). Line a 12 cup muffin pan with paper muffin liners, and spray liners with cooking spray.
- In a large bowl, mix the oat bran, flour, brown sugar, baking soda, baking powder, cinnamon, and salt. In a separate bowl, blend the applesauce, egg substitute, canola oil, and vanilla extract. Thoroughly mix the applesauce mixture into the flour mixture. Fold in the blueberries and pecans. Spoon the batter into the prepared muffin cups. Sprinkle batter with granola, and press granola lightly to make it stick.
- Bake 18 minutes in the preheated oven, or until a toothpick inserted into a muffin comes out clean. Cool on a wire rack.

- Preheat the oven to 425 degrees F (220 degrees C). Mist 18 muffin cups with cooking spray.
- Combine oatmeal and milk in a large bowl and set aside.
- Stir flour, brown sugar, oat bran, ground flax seed, baking powder, and salt together in a separate bowl.
- Combine bananas, applesauce, and egg substitute in another bowl. Stir into oatmeal mixture. Stir in flour mixture, followed by raisins, walnuts, and chocolate chips. Divide batter evenly between the prepared muffin cups.

- Add the beaten liquid ingredients to the sifted combined dry ones in a few swift strokes, just until the flour is moistened. The mixing is held to absolute minimum, a light stirring from 10-20 seconds, batter will be lumpy. The batter should not be mixed to the point of pouring, ribbon-like from the spoon, but should break into course globs. If the batter has been beaten too long, the gluten in the flour will develop and toughen the dough.
- To bake, preheat oven to 400°F Grease bottoms only of medium-size muffin cups, fill 2/3 full. Bake at once in a preheated 400F oven until golden brown, about 15-20 minutes. If muffins remain in tins a few moments after leaving the oven they will be easier to remove.
