NANA'S SOUTHERN COLESLAW

Nana's Southern Coleslaw image

Just an old family recipe that I have been told is reminiscent of KFC coleslaw. You be the judge! To speed things up I sometimes just buy an already shredded bag of cabbage with carrots in it and then just chop it a little finer.

SWEET SOUTHERN COLE SLAW

Sweet Southern Cole Slaw image

I love trying out different side dishes when I go to BBQ joints, and this recipe is a combination of some of the best slaws I've had in Georgia, Alabama, and Texas. It's not your typical, creamy mayonnaise slaw you may be used to...so keep that in mind! You decide on how much cabbage/carrots to use, depending on how wet you like your coleslaw.

SIMPLE CREAMY SOUTHERN COLESLAW RECIPE

Simple Creamy Southern Coleslaw Recipe image

Just say no to bland store bought coleslaw and hello to this delicious homemade recipe. This classic simple creamy coleslaw recipe is not only the perfect side dish for your next BBQ and grilling cookout but is also amazing on a Memphis and South Carolina style pulled pork sandwich or on a West Virginia style hot dog.

Provided by Dave Joachim

Categories     Dinner     Lunch     Salad     Side Dish     Vegetable

Time 1h15m

Number Of Ingredients 10

1 pound green cabbage ((about half a medium cabbage))
1 large carrot, peeled
½ small white onion
2 tablespoons Morton Coarse Kosher Salt
1 tablespoon distilled vinegar
½ cup mayonnaise
¼ cup sour cream
1 tablespoon white sugar
¼ teaspoon ground black pepper
½ teaspoon celery seeds ((not celery salt))

Steps:

  • Prep. First, read my article on The Science of Slawsome Slaw. Then decide how you want to cut the cabbage, carrot, and onion: Chopped, grated, or hashed and have at it. I prefer this recipe shredded or chopped.
  • Salt. In a large strainer or colander, mix the cabbage, carrot, and onion with the salt and put it in the sink or over a bowl for an hour. The salt will draw out a lot of water that will otherwise dilute the dressing. Then rinse the mix with cold water to get rid of excess salt and pat dry. You can now hold it in the fridge for a day if you want.
  • Dress. Whisk together the dressing in a large bowl. Add the cabbage, carrot, and onion mix. Taste, adjust seasonings, cover and chill for at least 1 hour if possible before serving.

SWEET AND SOUR COLESLAW RECIPE

Sweet And Sour Coleslaw Recipe image

Looking to step up your slaw game? Here is a sweet-sour cole slaw recipe that is sure to impress your guests. Plus, the recipe is super easy to make.

Provided by Dave Joachim

Categories     Dinner     Lunch     Salad     Side Dish     Vegetable

Number Of Ingredients 12

2 tablespoons brown sugar
2 tablespoon white sugar
1 teaspoon mustard powder
1 teaspoon Morton Coarse Kosher Salt
½ teaspoon ground black pepper
½ teaspoon whole celery seeds ((not celery salt))
2 tablespoons vegetable oil ((corn oil or salad oil mix are good choices))
¼ cup distilled white vinegar ((not cider vinegar))
1 pound green cabbage ((about half a medium cabbage))
1 large carrot, peeled
1 small white onion
½ bell pepper, any color

Steps:

  • Prep. For the dressing, whisk all of the ingredients together in a bowl. Don't skip the mustard. It's the secret ingredient that gives it life. And make sure all the lumps are whisked out.
  • Read my article on The Science of Slawsome Slaw. Decide how you want to cut the cabbage, carrots, pepper, and onions: Chopped, grated, or hashed and have at it. I like this recipe best when chopped or grated. Now that you've decided, do it. Add the cabbage, carrots, pepper, and onions to the bowl with the dressing.
  • Chill. Cover and chill for at least 1 hour if possible to extract the flavors from the celery seeds and the vegetables. They will give up some water, so don't worry if the mix seems a bit dry and strong at first. Mix it up occasionally so the dressing doesn't pool at the bottom. Taste the slaw and add more of the seasonings to your preference.
  • Serve. When you serve it, mix thoroughly and scoop from the bottom so the veggies have dressing on them.
