This recipe has a unique flavor; the blending of pepper, vinegar, and sweet Vidalia onion compliment each other. Fantastic recipe for burgers, steaks, or as a side order.

2 teaspoons olive oil
2 large onions, sliced (Vidalia or Walla Walla work best)
1 1/2 tablespoons sugar
1 clove garlic, minced
1 teaspoon fresh rosemary, chopped
1/4 cup distilled white vinegar
salt and pepper

Steps:

  • In a 1 1/2 skillet, heat oil over medium heat.
  • Add onions and sugar.
  • Cover and cook, stirring occasionally, until onions are soft and most of their liquid has evaporated; 10-20 minutes.
  • Uncover and cook, stirring until onions turn a deep golden color; 10-20 minutes more (add 1-2 TBL water if onions start to scorch).
  • Add garlic, rosemary, and vinegar; cook and stir until fragrant, about 3 minutes.
  • Season with salt and pepper and more vinegar if desired.
  • Will keep in refrigerator for 3 days.

Number Of Ingredients 17

Ingredients for the Chow Chow:
10 pounds of green tomatoes (, chopped)
3 cups red bell peppers (, seeded and chopped)
3 cups yellow bell peppers (, seeded and chopped)
3 cups orange bell peppers (, seeded and chopped)
3 cups onions (, chopped 1 1/2more needed)
3 fresh jalapenos (, stemmed and diced (I did only 1 1/2 and the recipe could definitely use all 3 would not be hot))
1 quart Pickling Liquid ((recipe follows))
3 cups distilled white vinegar
1 cup water
1 ½ cup sugar
1/4 c salt
1 ½ teaspoons whole allspice
1 (3-inch) cinnamon stick
1 ½ teaspoons celery seed
1 ½ teaspoons mustard seeds
1 ½ teaspoons whole black peppercorns

Steps:

  • Pulse the chopped tomatoes in a food processor (I did not do this until just before canning them, after they were cooked, and then only did a little pulse); place in a non-reactive heavy pan
  • Add the peppers, onions, and jalapeno to the processor and pulse until desired consistency; add the mixture to the tomatoes
  • Stir in the pickling liquid
  • Over high heat, bring the mixture to a boil
  • Reduce the heat to medium and simmer for 15-20 minutes
  • Remove from the heat and (this is when I pulsed it a little bit to get the size I liked) spoon into 4 250ml preserving jars, filling the mixture to within 1/2-inch of the top
  • With a clean damp towel, wipe the rim and fit with a hot lid; screw on the metal ring until snug (not too tight)
  • Process in a hot water bath for 15 minutes; using tongs, remove jars, place on towel; cool
  • Test the seals; tighten the rings and store in a cool dark place
  • Age for 2 weeks before using (whoops, didn't do this, either!)
  • Place all of the ingredients in a nonreactive saucepan, over high heat; bring the mixture to a boil, reduce heat to medium and simmer for 30 minutes
  • Remove from the heat and cool completely; strain the liquid and store in an airtight container

This is the relish recipe I remember from my childhood. Light green in color, and unbelievably good on hot dogs, you won't be disappointed. It's an easy recipe for beginners, even if you have never canned a thing in your life.

7 large English cucumbers
4 large sweet onions, peeled
¼ cup pickling salt
3 cups white sugar
½ cup all-purpose flour
1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon celery seed
3 cups distilled white vinegar
1 cup water
4 (1 pint) canning jars with lids and rings

Steps:

  • Grate the cucumbers and onions into a large bowl using the large holes of a box grater. Sprinkle the pickling salt over the top. Cover tightly, and allow to rest at room temperature overnight.
  • Squeeze as much liquid as possible out of the cucumber mixture; set aside. Whisk together the sugar, flour, turmeric, ginger, and celery seed. Heat the vinegar and water in a large, heavy pot over medium-high heat. Whisk in the sugar mixture until smooth. Stir in the cucumber mixture. Bring to a boil and cook, stirring frequently, until thickened, about 15 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process pint jars for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1/2 cup rice vinegar
1 cup sugar
1 teaspoon salt
3 tablespoons water
1 small onion, finely diced
1 small carrot, finely chopped
1 green cucumber, finely chopped
1 teaspoon chili paste (optional)
1/8 cup fresh coriander leaves, chopped

Steps:

  • Boil vinegar, sugar, salt and water in a saucepan for 1 minutes.
  • Mix onion, carrot and cucumber pieces in a serving bowl.
  • Pour just vinegar mixture over vegetables to cover.
  • Taste to see if extra vinegar, sugar or salt is needed to balance flavor.
  • For those who prefer spicy relish, in small amounts add chili paste.
  • Garnish with chopped corriander.
  • Serve with satays, fish cakes or crispy deep-fried snacks.

1 pound medium-hot red chile peppers, such as Fresnos or red jalapenos
2 small red or orange bell peppers - stemmed, seeded, ribs removed
½ large onion, peeled and quartered
1 ¼ cups white sugar
¾ cup apple cider vinegar
1 ½ teaspoons pickling salt

Steps:

  • Wearing rubber or latex gloves, trim tops off chiles. Working in batches, pulse chiles, bell peppers, and onion in a food processor until chopped into fine bits, about 1 minute per batch. Transfer to a nonreactive 3-quart pot.
  • Stir sugar, vinegar, and salt into chile mixture and bring to a boil over high heat. Reduce heat to medium and simmer, stirring more frequently toward end of cooking to prevent scorching, until thickened, 20 to 30 minutes.
  • Pour or ladle relish into clean, wide-mouth, half-pint jars, leaving 1/2 inch headspace. Wipe rims clean with a damp paper towel. Let cool to room temperature, about 1 hour.
  • Apply clean lids. Enjoy immediately, store in fridge 2 to 3 weeks, or freeze up to 6 months.

8 cucumbers, chopped
2 onions, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
½ cup pickling salt
cold water to cover
2 cups cider vinegar
1 tablespoon celery seed
1 tablespoon mustard seed
3 ½ cups white sugar

Steps:

  • Combine cucumbers, onions, red bell pepper, and green bell pepper in a large bowl; add salt and pour in enough cold water to cover. Allow to soak for 2 hours. Thoroughly drain in a colander.
  • Pour vinegar into a large, heavy stainless steel pot; add celery seed and mustard seed. Stir sugar into mixture and bring to a boil, stirring until sugar is dissolved, 2 to 3 minutes. Add the drained vegetable mixture and return to a boil, about 10 minutes. Remove pot from heat.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack relish into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.
