SWEET & SOUR ONION RELISH
This recipe has a unique flavor; the blending of pepper, vinegar, and sweet Vidalia onion compliment each other. Fantastic recipe for burgers, steaks, or as a side order.

Steps:
- In a 1 1/2 skillet, heat oil over medium heat.
- Add onions and sugar.
- Cover and cook, stirring occasionally, until onions are soft and most of their liquid has evaporated; 10-20 minutes.
- Uncover and cook, stirring until onions turn a deep golden color; 10-20 minutes more (add 1-2 TBL water if onions start to scorch).
- Add garlic, rosemary, and vinegar; cook and stir until fragrant, about 3 minutes.
- Season with salt and pepper and more vinegar if desired.
- Will keep in refrigerator for 3 days.

This is a great salsa. I use this to top hot dogs, grilled brats and sausages. Great also on chicken or fish. This takes a hot dog and makes it GOURMET!

SWEET PICKLE RELISH
This chunky relish is great for eating fresh or going into the pantry in the middle of winter cracking open a jar and putting on your hotdogs! Also great to add to macaroni salad!

Steps:
- Combine cucumbers, onions, red bell pepper, and green bell pepper in a large bowl; add salt and pour in enough cold water to cover. Allow to soak for 2 hours. Thoroughly drain in a colander.
- Pour vinegar into a large, heavy stainless steel pot; add celery seed and mustard seed. Stir sugar into mixture and bring to a boil, stirring until sugar is dissolved, 2 to 3 minutes. Add the drained vegetable mixture and return to a boil, about 10 minutes. Remove pot from heat.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack relish into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

SWEET SOUR BEETROOT RELISH
This relish in all the rage at private and business functions in London, served on British Herb Scones (see my recipe posted separately) and a dollop of sour cream. It is also delicious on potato latkes or blini, topped with sour cream, or alternatively with burgers, sausages, cold meats, roast beef or lamb, and cheese. If you can, choose baby beets, which are sweeter than the larger beets, and select those that are heavy for their size. Adapted from a recipe by Sophie Grigson.

- Heat a saucepan over moderate heat and add the butter, oil, onion, grated beets and whole chilies.
- Stir until butter has melted, then reduce heat to low, cover pan, and cook vegetables gently for 45 to 50 minutes until very tender.
- Add the sugar, vinegar, salt, and freshly ground black pepper, and stir to combine.
- Increase heat to moderate and cook mixture, uncovered, for another 10-15 minutes, stirring frequently.
- Continue cooking until the mixture is thick, with the consistency of jam, and there is virtually no liquid left in the pan.
- Remove and discard chilies, taste, and adjust seasonings if desired.
- Can be kept, covered, in the refrigerator for several days, and gently warmed before serving.

- Boil vinegar, sugar, salt and water in a saucepan for 1 minutes.
- Mix onion, carrot and cucumber pieces in a serving bowl.
- Pour just vinegar mixture over vegetables to cover.
- Taste to see if extra vinegar, sugar or salt is needed to balance flavor.
- For those who prefer spicy relish, in small amounts add chili paste.
- Garnish with chopped corriander.
- Serve with satays, fish cakes or crispy deep-fried snacks.
