This green bean concoction is similar to others but not the same! This recipe offers optional 'speed cooking' to quickly get this fresh-tasting side dish to the table.

- Place green beans in a microwave-safe bowl and add enough water to make a layer in the bottom; heat in microwave until green beans are tender yet firm to the bite, 1 to 3 minutes. Drain.
- Heat peanut oil in a large wok or skillet over medium heat; cook and stir onion until tender, 5 to 10 minutes. Transfer onion to a bowl and discard any remaining oil.
- Place the bacon in the wok or skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and cut into bite-size pieces. Reserve 4 to 5 tablespoons bacon drippings in the wok.
- Mix onion, brown sugar, vinegar, and liquid smoke in the reserved bacon drippings; cook and stir until sauce is bubbling and brown sugar is dissolved, about 5 minutes. Add green beans to sauce and stir to coat; cook until green beans are heated through, 2 to 3 minutes.
- Transfer green bean mixture to a microwave-safe casserole dish; season with black pepper. Serve immediately or warm in the microwave, if needed.

- Fry the bacon in a large skillet over medium heat until crisp. Remove the bacon from the pan and let it drain on paper towels or a brown paper bag.
- Pat the the green beans completely dry and add them to the bacon drippings in the skillet. (If you have more than 2 tablespoons drippings in the skillet, you may wish to spoon some out and reserve them for another use.) Cook the green beans over medium heat, stirring occasionally, until the beans reach the desired tenderness, 6 to 13 minutes depending on the thickness of your green beans and your desired tenderness.
- Meanwhile, in a small bowl whisk together the vinegar, cornstarch, brown sugar, dry mustard, salt, and pepper.
- Pour the mixture over the green beans, crumble the bacon over the top, and cook until the sauce thickens and coats the beans, about 2 minutes. Serve immediately.

- Cut 6 of the bacon slices into ½-inch pieces. Cook, stirring often, in a large skillet over medium-high until crispy, about 8 minutes. - Cook the green beans until tender. I steam mine in the microwave, but use your favorite method. Drain well once cooked.
- While the beans cook, put the bacon in a medium-large pan over medium heat. Let the bacon cook for 4 minutes until almost crispy. Add the onions and saute until they begin to soften.
- Add the cider vinegar, water and Sukrin Gold (or brown sugar if not low carb) to the bacon and onions and stir. Reduce slightly. Measure the whole grain mustard into the pan.
- Lastly, add the green beans and stir to coat and heat through. Season to taste with salt and pepper. I like lots of pepper because it brings out a nice savory flavor. Serve hot.

I don't recall where this recipe came from, but I've had it for many years. Great taste. I usually manage to have it half gone before it's time to serve. The beans can be left whole (for effect) or cut - it's your choice. Note that the marinating time is very important, and is included in the cooking time.
