GREEK CHICKEN SOUVLAKI
Chicken Souvlaki is a tasty Greek dish, made with marinated chicken chunks, topped with a tomato olive relish and served with a creamy yogurt dip on the side.

Steps:
- Combine the marinade ingredients in a medium bowl and add chicken chunks to it, toss to coat.
- Marinate for at least 30 minutes or up to 6 hours.
- Mix all the ingredients in a medium bowl. Season with salt and pepper to taste, cover and refrigerate until ready to use or up to 1-2 days.
- When ready to serve, garnish with chopped dill and a drizzle of olive oil.
- Combine all the ingredients in a medium bowl, season with salt and pepper to taste.
- Cover and refrigerate until ready to use, or for up to 1-2 days.
- Turn on and heat the grill or place a grill pan over medium heat.
- If using bamboo skewers, place them in the water to soak for about 10 minutes.
- Remove the chicken from the marinade and thread the pieces onto about 6 skewers.
- If grilling, place the chicken skewers on the grill and cook for 5-6 minutes on each side, or until the chicken is cooked through.
- If using the grill-pan, place it over medium heat, brush it with olive oil and cook the chicken skewers for 5-6 minutes per side, or until the chicken is cooked through.
- Serve the chicken skewers with the yogurt sauce, the tomato-cucumber olive relish, with pita bread and hummus on the side.

- In a 9x13 inch casserole, combine soy sauce, brown sugar, oil, ginger, and garlic powder. Mix until brown sugar completely dissolves into the mixture. Place the chicken wings in the dish and turn them over until they are all well coated. Cover the dish and refrigerate for at least 4 hours. Turn the chicken again, after 2 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake chicken at 350 degrees F (175 degrees C), covered, for 45 minutes. Turn the chicken wings, and spoon sauce from the bottom of the pan over the tops of the wings. Cook an additional 50 minutes, uncovered.

- 1. Into a large plastic bag add all the marinade ingredients and mix well. Taste it to see if anything needs to be adjusted. Then add in the prepared chicken wings and place in the refrigerator overnight.
- 2. Before grilling allow the chicken wings to come to room temperature and season with salt.
- 3. Grill the chicken over a medium flame until cooked to your preference.
- 4. Garnish with your personal choices and serve warm. I really like it with a little honey drizzled over my garnishes. I hope you will enjoy.
