CREME BRULEE RICE PUDDING

Creme brulee meets rice pudding for a dessert combining the best of both worlds.

1 ¼ cups cooked RiceSelect® Jasmati® Rice
2 cups cream
½ cup milk
1 (3 inch) piece vanilla bean
1 pinch salt
3 large eggs
3 large egg yolks
¾ cup sugar, divided
½ teaspoon ground cinnamon
Hot water

Steps:

  • Preheat oven to 325 degrees F. Grease 6 (4 oz.) ramekins.
  • In saucepan, combine milk and whipping cream. Cut vanilla bean lengthwise and scrape vanilla bean seeds into saucepan; add vanilla beans and salt. Bring to a low boil.
  • In bowl, whisk together eggs, egg yolks, cinnamon, rice, and 1/2 cup sugar.
  • Remove vanilla beans from cream mixture. Slowly pour hot cream mixture in a thin stream into the egg/rice mixture, whisking constantly.
  • Pour or ladle into prepared ramekins; place ramekins on a large baking sheet and place on oven rack; carefully pour enough hot water to reach halfway up the sides of the ramekins. Bake until edges are set and centers are still slightly jiggly when shaken, approximately 25 minutes.
  • Remove ramekins from water bath and place on rack to cool for at least 10 minutes.
  • Cover; chill at least 3 hours. When ready to serve, remove from refrigerator and sprinkle remaining sugar evenly over tops. Broil 5-6 inches from heat until sugar evenly melts and becomes a caramel color.
  • Remove from oven and serve immediately. (Sugar may also be browned using a professional culinary torch.)

This is a traditional recipe from India and it has to be one of the best things ever. In India this dish is known as Kheer.

1/2 cup basmati rice
5 cups whole milk
1 cup granulated sugar
1 teaspoon freshly ground cardamom
2 tablespoons unsalted shelled pistachios
3 tablespoons dark raisins
1/4 cup blanched slivered almond (optional)

Steps:

  • Place the rice in a medium-sized bowl. Fill the bowl with cold water and swirl the rice around to help remove the starch.
  • Carefully pour off the water, making sure not to pour out the rice that has settled to the bottom. Repeat this step 7-8 times, or until the water is clear.
  • Fill the bowl with enough cold water to cover the rice by 2 inches. Let the rice soak for 30 minutes.
  • Drain the rice and set aside.
  • Place the milk in a 6-8- quart pan over medium heat, uncovered, and bring to a boil. This will take about 10-12 minutes. Watch it carefully so it does not boil over, and stir frequently to prevent scorching.
  • Add the drained rice. Return it to a boil. This will take 1-2 minutes.
  • Reduce to a simmer and cook, uncovered, for 30-35 minutes. The rice will absorb the milk as it cooks and thickens. Stir frequently, occasionally mashing the rice with a whisk.
  • If the rice sticks, lower the heat.
  • After almost all the milk has been absorbed and the rice is very tender, add the sugar and ground cardamom. Stir well to combine all the ingredients.
  • Pour the rice into a heat-proof bowl. Let it cool for 10-15 minutes. Cover and chill completely.
  • When ready to serve, spoon the chilled dessert into individual serving dishes and garnish with the pistachios, raisins, and sliced almonds.

This is just divine. It's a real cross between rice pudding and a creme brulee. I give you the recipe, just as my Mum gave it to me. I think that originally (in the 60's) it was an Arabella Boxer one. It's so good, it's been cooked in my family for over 30 years. Kate in Katoomba

1/4 lb pudding rice
1 pint milk
2 -3 drops vanilla extract
1 ounce butter
4 ounces caster sugar
2 egg yolks
additional caster sugar, for topping

Steps:

  • Put rice in small pan and cover with boiling water and cook for 4 minutes.
  • Drain and rinse under the hot tap.
  • Put milk in pan with the vanilla and bring to the boil.
  • Put rice and milk into a covered casserole dish and bake in a moderate oven for 30 minutes.
  • Cream butter and sugar until smooth and creamy, add egg yolks and beat.
  • Take rice out of oven, and turn oven down a fraction.
  • Add egg mix mixture to the rice and beat together with a fork.
  • Butter a souffle dish, pour in rice mixture and set in a pan of hot water in the oven and cook for a further 40 minutes.
  • Remove and cool.
  • When quite cold, cover top generously with caster sugar and put under a very hot grill until sugar turns golden brown.
  • Chill and serve with thin cream.

1/2 cup risotto rice
1/4 cup superfine sugar
4 egg yolks
1 cup heavy cream
1 teaspoon vanilla extract
1/4 cup superfine sugar, to finish

Steps:

  • Preheat oven to 350.
  • Pour milk into a saucepan and bring to a boil. Add rice and reduce heat to medium, cook for 15 minutes stirring occassionally or until rice is soft and roughly 1/3 milk remains.
  • Take saucepan off heat and add sugar.
  • In a bowl, mix egg yolks, cream and vanilla. Using a fork mix till smooth then add to rice mixture.
  • Place 6 ovenproof ramekins into a roasting pan, divide the rice and custard between the ramekins, then pour warm water into the pan so that it comes halfway up the side of the ramekins.
  • Bake for 20-25 minutes, or untill just set. There should be a little softness at the center.
  • Leave dishes to cool in the water for 40-50 minutes, the remove.
  • Sprinkle tops with sugar and caramelize using a blow torch. Serve withing 20-30 minutes.
