6 cups mashed sweet potatoes (about 3-1/2 pounds)
6 tablespoons plus 4-1/2 teaspoons butter, melted, divided
1/2 cup packed brown sugar
1/4 cup amaretto liqueur or 1/4 teaspoon almond extract
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 cup chopped pecans
1/4 cup orange marmalade
6 macaroons, crumbled

Steps:

  • In a large bowl, combine the sweet potatoes, 6 tablespoons butter, brown sugar, amaretto or extract, salt and ginger; beat until smooth. Stir in the pecans and marmalade., Transfer to a greased 11x7-in. baking dish. Toss macaroons with remaining butter; sprinkle over casserole. Bake, uncovered, at 325° for 30-35 minutes or until heated through.

3 cups blanched slivered almonds
1 ½ cups white sugar
3 egg whites
1 teaspoon almond extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line baking sheets with parchment paper.
  • In a food processor, grind the almonds into a fine meal. Add the sugar and continue to process for another 15 seconds. Finally, add egg whites and almond extract, continue to process until a smooth dough forms around the blade.
  • Using a teaspoon, place well rounded spoonfuls of dough onto prepared baking sheets. Cookies should be at least 1 1/2 inches apart. Bake in preheated oven for 20 to 30 minutes. Cookies should be golden. Allow cookies to cool completely on the paper before removing. Store in a dry place.

3 can(s) sweet potatoes or yams, 29 oz each
1/2 c light brown sugar (packed)
1/4 c orange juice
1/2 c amaretto liqueur
1/2 c sugar
1/2 c margarine, divided
2 c large or miniature marshmallows

Steps:

  • 1. Preheat over to 350 degrees.
  • 2. Drain canned yams or sweet potatoes. Place in large mixing bowl. Add 2 tablespoons margarine. Place in microwave for 1 minute.
  • 3. Mash potatoes and margarine with potato masher.
  • 4. Melt remaining margarine. With an electric mixer, whip potatoes, margarine, sugars, juice, and amaretto.
  • 5. Pour into a greased 2.5-quart casserole.
  • 6. Bake for 30 minutes.
  • 7. Remove from oven and top with marshmallows.
  • 8. Return to oven and bake for 10 - 15 more minutes until marshmallows slightly brown and "puff."

2/3 cup buttermilk
1/2 cup butter, softened
2 eggs
2 tablespoons Amaretto
1 1/4 teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon baking soda
2/3 cup chopped pecans

Steps:

  • In a large saucepan, cover sweet potatoes with water. Boil until tender; drain.
  • Remove the skins from the sweet potatoes and arrange them in a greased 2 quart baking dish.
  • Process the sugar, buttermilk, butter, eggs, amaretto, vanilla, cinnamon, and baking soda in a blender until smooth. Stir in pecans.
  • Spoon pecan mixture over sweet potatoes. Bake at 350 degrees for 30 minutes.

2 large egg whites (lightly beaten)
1/4 teaspoon almond extract
1/8 teaspoon extra-strong bitter almond oil
Confectioners' sugar
Sliced almonds

Steps:

  • Preheat oven to 325° F. Line baking pan with parchment paper.
  • In a stand mixer or food processor, blend the almond paste, sugar, and salt until crumbly.
  • In a separate bowl, beat egg whites until very frothy. (Don't beat long enough to form peaks.)
  • Gradually add almond extract, bitter almond oil, and beaten egg whites to the almond paste mixture.
  • Using a small scoop, form cookies and place on prepared baking sheet.
  • Sprinkle cookies lightly with confectioners' sugar and sliced almonds.
  • Using three fingers, press indentations into the center of each cookie. (This keeps them from puffing up too much during baking.)
  • Bake for 20 - 25 minutes, until the very edges are just turning golden. Remove from oven and allow to cool.
