SWEET POTATO-TURKEY MEATLOAF
I initially created this recipe after one my grandmother used to make with beef and regular mashed potatoes. Instead, I substituted mashed sweet potatoes and used ground turkey. It tastes even better the next day when slices are grilled in a pan with butter, then place on bread slices to make a sandwich. The biggest secret to the taste is the sweetness from the sweet potato!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart baking dish.
- Bring a pot of lightly salted water to a boil. Add the sweet potato, and cook until soft, about 10 minutes. Drain the sweet potatoes, and mash or whip until smooth.
- Mix the ground turkey together with the egg, sweet onion, garlic, barbecue sauce, ketchup, Dijon mustard, and whole wheat bread crumbs in a large mixing bowl. Season to taste with salt and pepper. Add the sweet potatoes, and stir until evenly combined. If the mixture seems too wet, add more bread crumbs. Use your hands to form the turkey mixture into a loaf shape and place in the prepared baking dish.
- Bake in the preheated oven 1 hour. Slice the loaf to serve.

DETHBERT'S SWEET POTATO MEATLOAF
I like meatloaf and have been working on this recipe for some time; I think I've got it pretty close. This is not a simple, easy, and inexpensive meatloaf like many are, but it sure is tasty. Be careful, my times are based on glass bread pans; don't overcook the meat if you are using tin.

- Mix ground beef, sweet potato, onion, and oats in a large mixing bowl.
- Beat eggs, salt, thyme, and pepper together in a small bowl. Add 3/4 cup ketchup, vegetable juice, Worcestershire sauce, 1 tablespoon prepared mustard, and mustard powder to the egg mixture; stir. Pour the egg mixture into the large mixing bowl; use your hands to mix together. Cover bowl with plastic wrap and refrigerate 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C). Grease 2 8 1/2x4x3-inch glass bread pans.
- Divide meatloaf mixture into prepared bread pans.
- Bake meat loaves on center rack in preheated oven for 1 hour.
- Stir 3/4 cup ketchup, brown sugar, and 1 teaspoon prepared mustard together in a bowl; spread over the meatloaf.
- Divide ketchup mixture and spread over the loaves; continue baking for 15 minutes.

- In a large bowl, combine the tomato sauce, egg, 1/2 cup of cracker crumbs, green pepper, onion and salt. Crumble beef over mixture and mix well. Shape into a loaf in a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30 minutes; drain. Combine sweet potatoes and molasses; roll potatoes in remaining crumbs. Add potatoes to the pan; place bacon strips over meat loaf. - Preheat the oven to 425 degrees F. Pierce the sweet potatoes all overwith a fork and microwave until tender, about 15 minutes.
- Meanwhile, coat a rimmed baking sheet with cooking spray. Combine the turkey, onion, panko and egg in a bowl. Add half each of the ketchup, hoisin sauce and ginger and season with salt and pepper. Mix with your hands until just combined. Form into a 9-by-11-inch rectangle on the prepared baking sheet. Mix the remaining ketchup, hoisin sauce and ginger in a small bowl with 2 tablespoons water; brush over the meat. Bake until golden and cooked through, 12 to 15 minutes. - In a deep pot, add the sweet potatoes and enough water to cover. Bring to a boil, salt the water and cook the potatoes until tender, about 15 minutes. Drain.
- While the potatoes are working, in a bowl, season the turkey with salt and pepper. Add the breadcrumbs, scallions, parsley and thyme. In a small bowl, beat the egg with the milk; mix into the turkey mixture. Shape the meat into 4 oval patties about 1 inch thick. In a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat. Add the patties and cook, turning once, until browned, about 15 minutes.
- In a medium saucepan, melt the butter over medium heat. Add the onion and cook until softened, about 6 minutes. Add the orange peel and season with salt and pepper. Sprinkle the flour on the red onion and cook for 1 minute, then whisk in 3/4 cup chicken broth and the orange juice; cook until thickened, 30 seconds. Whisk in 2 tablespoons brown sugar, the ketchup, mustard, Worcestershire sauce and hot sauce. Lower the heat and simmer for 5 minutes.
- Mash the potatoes with 1 to 1 1/4 cups chicken broth. Stir in the remaining 2 tablespoons brown sugar; season with salt and pepper. Serve with the turkey patties and the gravy on top.

- Peel and cut sweet potatoes into 1 inch cubes. Cover with water and bring to a boil. Continue to cook until potatoes are tender. Saute onion, celery, and apple in 2 tsp of EVOO until soft and tender. In a large bowl combine turkey, bread crumbs, poultry seasoning, egg, sauteed onion, celery, and apple. Add salt and pepper to your liking. Use hands to mix thoroughly.
- Cut 2 inches off of the end of the bacon strips. Place the small piece on the bottom of each muffin cup. Use the rest of the bacon to wrap around the muffin cups. Use an ice cream scoop to place meatloaf mixture into bacon lined cups. Bake for 20 minutes. Remove from muffin tin to paper towels.
- Drain cooked potatoes and place into a food processor. Add buttermilk, honey, nutmeg and salt and pepper. Blend till smooth. Frost the tops of each meatloaf with the mashed sweet potatoes. Enjoy!
