VEGGIE SHEPHERD'S PIE WITH SWEET POTATO MASH
The secret to this shepherd's pie filling is to choose big carrots so they don't lose their texture when cooked

- Heat 1 tbsp olive oil in a frying pan, then fry 1 halved and sliced large onion until golden.
- Add 2 large carrots, cut into sugar-cube size pieces and most of the 2 tbsp chopped thyme, reserving a sprinkling for later.
- Pour in 200ml red wine, 150ml water and a 400g chopped tomatoes, then crumble in 2 vegetable stock cubes and simmer for 10 mins.
- Tip in a 410g can green lentils, including the juice, then cover and simmer for another 10 mins until the carrots still have a bit of bite and the lentils are pulpy.
- Meanwhile, boil 950g sweet potatoes, cut into chunks, for 15 mins until tender, drain well, then mash with 25g butter and season to taste.
- Pile the lentil mixture into a pie dish, spoon the mash on top, then sprinkle over 85g grated vegetarian mature cheddar and the remaining thyme. The pie can now be covered and chilled for 2 days, or frozen for up to a month.
- Heat oven to 190C/170C fan/gas 5. Cook for 20 mins if cooking straightaway, or for 40 mins from chilled, until golden and hot all the way through. Serve with broccoli.

- Gather the ingredients. Heat the oven to 375 F/190 C/Gas 5.
- Boil the sweet potatoes until soft, drain. Place the milk and butter in the pan used to boil the potatoes, return to the heat and warm gently until the butter has melted. Add the sweet potatoes and mash.
- Season to taste and keep to one side.
- Heat the oil in a large deep pan. Add the onion and carrot and fry for 5 minutes. Add the garlic and cook for another minute.
- Add the beans, mushrooms, and one-quarter of the vegetable stock to the onion and carrot mixture and cook for 5 minutes. Add the remaining stock, tomatoes, parsley, coriander and season with a little salt and pepper.
- Place the sauce into an 8-inch/20-centimeters x 3-inch/7-centimeters deep ceramic or glass ovenproof dish and cover with the sweet mashed potato . Sprinkle the grated cheese on top of the potato and bake in the heated oven for 30 to 35 minutes until the surface is crisp. browned and bubbly. Serve immediately.

- Peel and chop the onion, garlic and carrot, and chop the celery stalks.
- Fry the onion until golden, then add the minced turkey and use a wooden spoon to break it into small pieces.
- Cook the turkey stirring until the meat is no longer pink and the liquid released is absorbed.
- Add the chopped garlic, carrot and celery.
- Pour the stock over, cover with a lid, and leave to cook on a medium heat until the liquid is absorbed.
- Meantime,get on with the mashed potatoes. In a large pan, add the potatoes and boil in salted water until tender.
- Drain the water, peel and mash. Add the milk, quarter of a cup of grated cheese and butter and mash well until creamy.
- Preheat the oven to 200 degrees C (390 Fahrenheit).
- Once the stock is absorbed, add the tomato purée and chopped tomatoes to the pan, season with salt, ground black pepper, and herbs, and mix well.
- Leave to simmer until the sauce is reduced.
- Transfer the filling either to a large pie dish, or 2 smaller ones.
- Top the ground turkey with the mashed potatoes and scatter the remaining grated cheese over.
- Bake in the oven for about 15-20 minutes or until golden and bubbling hot.

SWEET POTATO SHEPHERD'S PIE

- Preheat oven to 375℉. Bake the sweet potatoes until fork tender, 45 to 60 minutes (see our directions for perfect baked sweet potatoes). Alternatively, you can steam peeled and diced sweet potatoes until tender.
- In a medium skillet over medium-high heat, saute the ground beef, chopped carrots, green pepper, onion, mushrooms, and garlic. Continue cooking until the carrots are soft, about 12-15 minutes. Begin making the sweet potato topping while the filling cooks.
- To make the topping: Place the peeled and baked/steamed sweet potato with all of the topping ingredients in a food processor (or blender) and process until smooth. NOTE: If using white potatoes, we recommend mashing them by hand rather than blending to prevent them from getting pasty.
- Back to the filling: Once the carrots are soft, stir in tomato paste, chili powder, rosemary, salt, black pepper, and water.
- Final step: Top the meat filling with the sweet potato mash. If you're not using an oven-safe 10-inch cast-iron skillet, transfer the meat filling to a casserole dish or 9×9 inch baking dish and top the meat filling with the sweet potato mash. Sprinkle the top with a little sea salt and chili powder.
- Bake for 10 minutes. Remove from oven and serve.

- Preheat your oven to 400 degrees Fahrenheit. Prepare a large 9-inch by 13-inch (or equivalent)
- Peel the potatoes and cut them in quarters. Place them in the salted cooking water, cover the pot, and cook on high heat (turn to medium-high when the pot begins reaches a hard boil).
- Heat a large skillet over medium-high heat and add the olive oil.
- Brown the ground beef, adding the onion, garlic, chopped carrots, thyme, paprika, parsley, and salt and pepper just before the beef is cooked through.
- Cook over medium heat just until the vegetables begin to soften and the onions become translucent.
- Add the wine and cook until reduced.
- Sprinkle the flour over the meat mixture and stir well to toast the flour.
- Pour in the stock and stir well, adding the green beans (or peas), cooking until the sauce thickens. Remove the skillet from the heat and pour the meat mixture into the bottom of the prepared baking pan.
- Drain the cooked potatoes and mash them in the pot along with the butter, milk, and salt and pepper until the mashed potatoes are smooth.
- Dollop the mashed potatoes over the top of the meat mixture, smoothing them out completely and creating some grooves with a fork on top of the mashed potatoes (this helps with browning).
- Place the baking dish on a baking sheet (it might bubble over the top of the dish in the oven), and bake the Cottage Pie for about 20-25 minutes at 400 degrees Fahrenheit or until the potatoes begin to turn golden brown on top and the filling starts to bubble up around the sides of the baking dish.
- Let sit at room temperature for 5 minutes before serving.
