2 pounds or 3 medium sweet potatoes or yams (- peeled and cut into 1/4" cubes )
1 Tablespoon butter
6 small shallots (- sliced 1/4")
4 cups vegetable broth
2 teaspoons fresh thyme (- lightly packed)
1/4 cup orange juice (- 2 fluid ounces)
1 teaspoon orange zest (- packed)
1½ teaspoons sugar (- used coconut sugar)
1½ teaspoons fresh grated nutmeg
3/4 teaspoon salt (- or to taste)
1/4 teaspoon black pepper (- or to taste)
garnish fresh nutmeg and thyme

Steps:

  • In a large pot or Dutch oven, heat butter over medium until melted. Add shallots and a generous sprinkle of salt. Cook for 5 minutes, stirring occasionally until browned.
  • Add sweet potato and cook 10 minutes, stiring occasionally, then add thyme, broth, orange juice and zest.
  • Bring to a boil, then reduce heat to a simmer and cover for 25 minutes or until the sweet potatoes are fork tender. Allow to cool slightly.
  • Using an immersion in the pot or high speed blender in batches, process until smooth. Add sugar, nutmeg, salt and pepper. Season to taste; serve immediately or return to the pot and simmer until ready to enjoy.
  • Garnish ideas: pecans, pumpkin seeds and nutmeg.

Sweet potatoes at their easiest! The potatoes slices need to be in single layer against the pan, not on top of one another. Great for a dinner party! Herbes de Provence with thyme or rosemary sprigs can be used instead of just thyme leaves. Serve warm or at room temperature with sprigs for garnish.

4 sweet potatoes, peeled and cut into 1 1/2-inch thick rounds
⅓ cup fresh thyme leaves
3 tablespoons olive oil
4 large garlic cloves, minced
½ teaspoon kosher salt
½ teaspoon red pepper flakes

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine sweet potatoes, thyme, olive oil, garlic, salt, and red pepper flakes in a bowl until evenly coated. Arrange coated sweet potato slices in a single layer on a rimmed baking sheet or 9x13-inch baking dish.
  • Place baking sheet on the top rack of preheated oven; roast until sweet potatoes are tender and slightly browned, about 40 minutes.

Most sweet potato soup recipes call for so many other ingredients that the sweet potato flavor is muted. By cutting back to just shallot, thyme, and butter and using water instead of broth, we put the focus back on the main ingredient. We also puree some of the potato skins into the soup for extra earthiness. However, the real key to intensifying the sweet potato flavor was using only a minimal amount of flavor-diluting water. To do so, we let the sweet potatoes sit in hot water off heat for 20 minutes to make use of an enzyme that reduces their starch content. Less starch meant we could create a soup with less water, keeping the sweet potato flavor in the forefront.

4 tbsp Butter unsalted
1 shallot sliced thin
4 sprigs fresh thyme
4-1/4 cups water
2 lbs sweet potatoes peeled, halved lengthwise, and sliced 1/4-inch thick; 1/4 of peels reserved
1 tbsp brown sugar packed
1/2 tsp cider vinegar
salt and pepper
fresh chives minced

Steps:

  • Melt butter in large saucepan over medium-low heat. Add shallot and thyme and cook until shallot is softened but not browned, about 5 minutes. Add water, increase heat to high, and bring to simmer. Remove pot from heat, add sweet potatoes and reserved peels, and let stand uncovered for 20 minutes.
  • Add sugar, vinegar, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Bring to simmer over high heat. Reduce heat to medium-low, cover, and cook until potatoes are very soft, about 10 minutes.
  • Discard thyme sprigs. Working in batches, process soup in blender until smooth, 45 to 60 seconds. Return soup to clean pot. Bring to simmer over medium heat, adjusting consistency if desired. Season with salt and pepper to taste.
  • Serve, topping each portion with sprinkle of chives.

1 cup chopped shallot
1 cup chopped peeled potato
1 bay leaf
1 medium clove garlic, minced
1 sprig fresh thyme
Kosher salt and freshly ground black pepper
3 1/2 cups vegetable broth
3 cups diced peeled sweet potato
1/4 to 1/2 cup heavy cream, as desired
Croutons, for serving

Steps:

  • Heat the butter in a medium saucepan over medium heat. Add the shallot and cook, stirring, until tender, 3 to 5 minutes. Add the potato, bay leaf, garlic, thyme, 1/2 teaspoon salt and some pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
  • Add the sweet potatoes and simmer until the sweet potatoes and potatoes are tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat, discard the bay leaf and thyme and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
  • Stir in the heavy cream and reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
  • Serve hot sprinkled with croutons.

  • Set a large saucepan or small stock pot over medium heat. Add olive oil and warm. Once warm, add the sweet potato, carrot, onion, garlic and thyme. Season with salt and pepper. Saute until onions are softened and translucent, stirring often. About 5 minutes.
  • Add apple cider vinegar to the veggies and cook for 1-2 minutes until liquid is absorbed. Stir in the stock. Increase heat and bring to a boil, then lower heat and simmer until veggies are very tender, about 15 minutes. Continue to stir often.
  • For the crispy shallots, I like to slice the shallots very thin on a mandoline. Then, toss them in a bowl with the AP flour until well coated. Pour enough vegetable oil into a small saucepan so it’s about 1/4″ deep. Set over medium heat. Once oil is hot, add some of the shallots. Lift them out of the flour and shake off the excess before adding them to the pan. Oil should sizzle when you add the shallots. Work in small batches so everything has room to cook. Use a slotted spatula to flip them as they fry so they brown evenly. Lift out of the oil with the same slotted spatula and set them on a plate lined with paper towels. Sprinkle with salt while hot, then repeat with remaining shallots.
  • Once veggies are soft, remove pot from heat. If you used fresh sprigs of thyme, remove them. Use an immersion blender to puree soup until smooth. You can also use a blender or food processor. Use caution when blending hot liquids. Mixture will be very thick.
