SWEET POTATO-PINTO BEAN BREAKFAST TACO

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Combine garlic, 1/2 teaspoon olive oil, and a pinch each salt and pepper in a small piece of aluminum foil. Fold it up to loosely cover and set it on the corner of the baking sheet.
- Toss sweet potato together with 2 tablespoons oil on the baking sheet. Sprinkle 1/4 teaspoon sea salt, 1/4 teaspoon garlic powder, chili powder, onion powder, chile powder with lime, and paprika on top. Toss thoroughly and spread out.
- Roast in the preheated oven until sweet potatoes are tender, 20 to 25 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Place roasted sweet potatoes in a bowl. Unwrap the foil packet and toss roasted garlic mixture into the bowl of sweet potatoes.
- Place remaining sea salt, garlic powder, onion powder, pinto beans, lime juice, water, adobo sauce, and black pepper in a small saucepan over medium-low heat. Cook, stirring occasionally, until heated through, about 4 minutes. Mash bean mixture together. Cover and keep warm.
- Heat 2 teaspoons olive oil in a large skillet over medium-low heat. Crack eggs into the pan and separate them; immediately cover with a lid. Cook until whites are set and yolks are mostly firm, about 4 minutes. Remove from heat.
- Heat tortillas in the preheated oven until warm, about 5 minutes.
- Place each tortilla on a plate. Layer on a small handful of spinach, a spoonful of mashed pinto beans, a small amount of sweet potato cubes, and a few slices of avocado. Place a fried egg on top. Sprinkle with radishes, green onions, and cilantro.

SWEET POTATO AND BLACK BEAN TACOS
These roasted sweet potato tacos feature spicy black beans and avocado-pepita dip. So delicious! This taco recipe is vegetarian (easily vegan) and gluten-free (see recipe notes for details). Recipe yields 8 to 10 hearty tacos, enough for at least 4 servings.

- Roast the sweet potatoes: Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy clean-up. Toss the prepared sweet potatoes with the olive oil, cayenne pepper (if using) and salt. Arrange in a single layer and bake for 30 to 40 minutes, tossing halfway, until the sweet potatoes are tender and caramelizing at the edges.
- Prepare the black beans: Warm the olive oil in a large saucepan over medium heat. Add the onions and a sprinkle of salt. Cook, stirring occasionally, until the onions have softened and are turning translucent, about 5 to 8 minutes. Add the cumin and chili powder and cook for about 30 seconds while stirring. Pour in the beans and water. Stir, cover and reduce heat to maintain a gentle simmer.
- Cook for 5 minutes, then remove the lid and use a potato masher or a fork to mash up at least half of the beans. Remove from heat, stir in the vinegar, season with salt (I added over 1/4 teaspoon) and pepper, and cover until you're ready to serve.
- Make the avocado dip: First, toast the pepitas in a skillet over medium heat, stirring often, until they are fragrant and starting to make little popping noises, about 5 minutes. Transfer to a bowl and set aside.
- Scoop the avocado flesh into a food processor or blender. Add the cilantro, jalapeño, garlic, lime juice, water and salt. Blend until smooth, scraping down the sides of the processor/blender as necessary. Add almost all of the pepitas (reserve a few tablespoons for garnish) and process just until the pepitas are chopped into small pieces (some remaining texture is desirable). Taste, and add more salt if necessary. Transfer the dip to a small bowl for serving.
- To warm the tortillas, heat a large skillet over medium heat and warm the tortillas in batches, flipping to warm each side. Alternatively, you can warm them directly over a low flame on a gas range. Stack the warmed tortillas on a plate and cover with a tea towel to keep warm.
- To assemble the tacos, spread black beans down the middle of each tortilla, then top with some sweet potatoes and avocado-pepita dip. Garnish with feta, pepitas, and anything else that strikes your fancy. Repeat with remaining tortillas and serve.

- 1. In a large non-stick skillet over medium heat, add diced sweet potatoes and 1/4 cup water. Cook until tender, about 10 to 15 minutes. Add garlic and navy beans, cook 2 to 3 minutes until garlic is fragrant and beans are heated through. Add corn, paprika, cumin, chill powders and remaining water. Cook until water has evaporated, about 3 to 5 minutes.
- 2. To make the sauce, add yogurt, chipotle powder (more if you would like it spicier) and lime juice to a small bowl; stir until combined.

- Heat olive oil in heavy medium sauce-pan over medium-high heat. Add onion and sauté until golden brown, about 5 minutes. Add chili powder and stir 1 minute. Add broth and potato. Cover pan; reduce heat to medium and simmer until potato is almost tender, about 10 minutes. Add tomatoes with their juices and pinto beans. - Preheat oven to 425F (218C). Line a sheet pan with parchment paper. Use a small piece of foil to place the garlic on. Sprinkle 1/4 tsp of olive oil over the cloves and add a pinch of sea salt and pepper. Toss to coat then wrap loosely. Place the packet on the sheet pan. Toss the sweet potatoes with 1 Tbs of olive oil, then sprinkle the chili powder, paprika and sea salt on. Toss throughly. Roast for about 20-25 minutes or until the potatoes are tender. Mash the garlic and sweet potatoes together and add a tablespoon of water, as needed, so that the mixture is not pasty, but rather is smooth and spreads easy. Cover to keep warm, set aside.
- While the potatoes are roasting, place the beans in a small sauce pot. Add the lime, one tablespoon of water, adobo sauce and salt. Warm gently. Mash, cover and set aside to keep warm. If the beans seem too firm, add more water, 1 tsp at a time until they are a spreadable consistency.
- In a non-stick or cast iron skillet (my preference), add the oil or butter and heat on medium-low. When the pan has heated or butter just melted, crack the eggs into the pan, working around the perimeter of the pan, one at a time. Immediately put a lid on the pan and set the timer for 3 minutes. Make sure the heat is on medium-low to low. This will produce loose yolks with cooked whites, sunny side up. Cook 4 minutes for a firmer yolk. Remove from heat.
- While the eggs are cooking, work quickly to warm the tortillas directly on a gas flame on the stove a few seconds at a time on both sides flipping several times until warm. Wrap in aluminum foil to keep warm. (Alternatively warm the tortillas according to package directions). Place 1 or 2 tortillas on a plate, add a small handful of spinach, spread a spoon full of beans and sweet potatoes over the spinach, add a few slices of avocado then place an egg on top. Season generously with salt and pepper and sprinkle with chopped chives and cilantro over the top.
