2 medium sweet potatoes (about 21 ounces/595 grams)
150 grams (3/4 cup) dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon kosher salt
3/4 cup (177 milliliters) heavy cream
2 large eggs
1 (9-inch) premade pie crust, fully baked and cooled

Steps:

  • Preheat the oven to 400 degrees F with an oven rack in the center position.
  • Place the sweet potatoes on a quarter sheet pan or baking dish and roast until fork-tender, about 1 hour. Transfer to a plate and cool to room temperature, about 30 minutes. Meanwhile, reduce the oven temperature to 350 degrees F.
  • Peel the sweet potatoes and discard skin. Weigh the sweet potato flesh. You should have between 340 and 380 grams (12 to 13 1/2 ounces).
  • Transfer sweet potatoes to bowl of stand mixer and beat with the paddle on medium-high speed until smooth, about 1 minute. Kill the mixer, add the sugar, cinnamon, nutmeg, and salt, and beat on medium-high until smooth, about 30 seconds. Turn off the mixer and scrape down the paddle and bowl. Add the cream and eggs, then beat on low speed until well-combined, about 1 minute.
  • Place a fine-mesh sieve over a medium bowl, then pour the sweet potato mixture through the sieve. Use a rubber spatula to press the filling through the sieve and strain out any sweet potato fibers; it will take some effort but is well worth it for a silky pie. Transfer to the pie crust and smooth the top.
  • Bake until the pie just jiggles slightly in the center and has reached an internal temperature of 165 to 175 degrees F, 40 to 45 minutes. Cool on a wire rack for at least 1 hour. Serve at room temp or chill completely before slicing. Refrigerate any leftovers.

3 large sweet potatoes
1 cup butter (such as Land O'Lakes®), melted
5 eggs, beaten
1 (12 fluid ounce) can evaporated milk (such as PET®)

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 40 to 50 minutes. Drain water, peel sweet potatoes, and mash in a bowl.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix butter and eggs together in a bowl until smooth; stir into mashed sweet potatoes. Mix milk, sugar, flour, vanilla extract, nutmeg, baking powder, and lemon juice into sweet potato mixture; pour into the 3 pie shells.

1 (1 pound) sweet potato
½ cup butter, softened
1 cup white sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg

Steps:

  • Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
  • Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.

1 pound 3 ounces sweet potatoes, peeled and cubed
1 1/4 cups plain yogurt
3/4 cup packed, dark brown sugar
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
5 egg yolks
Salt
1 (9-inch) deep dish, frozen pie shell
1 cup chopped pecans, toasted
1 tablespoon maple syrup
Special equipment: steamer basket

Steps:

  • Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.
  • Preheat the oven to 350 degrees F.
  • Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle pecans on top and drizzle with maple syrup.
  • Bake for 50 to 55 minutes or until the custard reaches 165 to 180 degrees. Remove from oven and cool. Keep refrigerated after cooling.

3 sweet medium potatoes (about 1 1/2 pounds), roasted fork tender
4 tablespoons unsalted butter
2 large eggs
1/2 cup heavy cream
1/2 cup light brown sugar
1/4 cup light corn syrup
1 tablespoon pure vanilla extract
1/2 teaspoon finely grated orange zest
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground ginger
Pinch ground cloves
1 cup whipping cream
1 tablespoon whiskey, rye or bourbon
Candied Pecans, homemade or store bought (see recipe below)
1 large egg white
3 tablespoons sugar
1/2 teaspoon ground cinnamon

Steps:

  • 1. For dough: Pulse to combine flour, sugar, and salt in a food processor fitted with a metal blade. Add shortening and pulse 10 times. Add butter and pulse until mixture resembles coarse meal. Beat egg yolk and vinegar together, add and pulse 3 to 4 times. Remove and gather dough together-if needed sprinkle up to one tablespoon of ice water over dough to bring together. Shape dough into disk and wrap in plastic. Refrigerate 1 hour or up to 2 days.
  • 2. For filling: Peel sweet potatoes and mash lightly with a fork. Transfer to food processor with butter and process until smooth. Add remaining ingredients, pulse to combine, and set aside.
  • 3. Roll dough into a 12-inch circle on a floured work surface. Fit into a 9-inch pie pan and trim leaving a 1/2 inch overhang. Fold edges and crimp. Prick dough all over and refrigerate for 20 minutes or up to 1 day.
  • 4. Preheat oven to 425F. Line crust with parchment paper, add pie weights, and place on a baking sheet. Bake until set and brown at edges, about 25 minutes. Remove paper and weights. Reduce oven temperature to 375F. and continue to bake until crust begins to brown on bottom, about 10 to 12 minutes more. Pour filling into warm crust and bake until set, about 20 minutes. Remove from oven and cool on rack

  • Prepare the dough for the crust: stir the flour, sugar, salt, baking powder and spices together in a large bowl. 500g sweet potatoes
320g sheet of shortcrust pastry
125g butter
250g caster sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Cook the whole, unpeeled sweet potatoes for 30 mins until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Unravel the shortcrust pastry and use it to line a 23cm fluted tart tin. Line with baking parchment and fill with baking beans, then bake for 20 mins. Remove the parchment and beans and bake for another 5 mins.
  • Tip the peeled sweet potatoes into a large bowl with the butter and mash with a potato masher until completely smooth. Tip in the sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Tip the sweet potato filling into the pastry case, smoothing the top with a spatula. Bake for 50-55 mins until the pastry and the surface of the pie is golden and the middle is set. Leave to cool completely in the tin, then remove to a cake stand or serving plate and cut into slices to serve.
