Orange-Scented Sweet Potato Gratin With Apple and Pear image

The vegetarians and vegans at your table will love this, but so will the meat eaters. Orange is a flavor that complements sweet potatoes, and the walnut oil contributes a subtle background nuttiness. Make sure to stir the mixture every 15 minutes as it bakes, so that the sweet potatoes on the top layer don't dry out. The apple and pear slices may fall apart, but that's fine, they won't disintegrate and they'll contribute wonderful flavor to the dish.

2 pounds sweet potatoes, peeled and sliced about 1/4 inch thick
2 tart apples, such as Pink Lady, peeled, cored, and sliced
1 large ripe but firm pear, peeled, cored and sliced
Salt to taste
2 tablespoons mild honey, such as clover (substitute agave nectar for vegans)
2 tablespoons walnut oil, plus more for greasing the pan
2 teaspoons finely chopped or grated orange zest
2 1/2 cups freshly squeezed orange juice

Steps:

  • Heat the oven to 400 degrees. Oil a 3-quart gratin or baking dish with walnut oil. Toss together the sweet potatoes, apples and pear in a large bowl. Season with salt to taste.
  • In a small saucepan or in a microwave at 50 percent power, heat the honey (or agave nectar) and the walnut oil together just until warm. Add to the sweet potato mixture, add the orange zest and toss together well until the fruit and vegetables are well coated. Scrape into the baking dish, making sure to scrape out all of the honey and oil using a rubber spatula. Pour on the orange juice. Set the baking dish on a sheet pan and place in the oven.
  • Bake 1 hour, setting the timer so that you remember to stir the mixture at 15-minute intervals. Cover the pan with foil and continue to bake for another 1/2 hour, or until the sweet potatoes are thoroughly tender and the liquid in the pan is syrupy. Allow to cool for about 10 minutes (or longer) before serving.

3 lb. medium sweet potatoes
3 tbsp. Stick Butter
2 tsp. grated peeled ginger
c. maple or pancake syrup
1 tsp. grated lemon zest
1/2 tsp. salt
3 firm-ripe Anjou pears, peeled, halved

Steps:

  • Boil potatoes in a large pot with water to cover 20 to 25 minutes until firm-tender. Drain in a colander; let stand until cool enough to handle.
  • Meanwhile, melt butter in pot. Add ginger; cook until fragrant. Remove from heat; stir in syrup, lemon zest and salt.
  • Heat oven to 350°F. Grease a shallow 2 to 2 1/2-qt baking dish.
  • Peel potatoes; slice 1 1/2 in. thick. Layer, alternating with pears, in baking dish (microwave-safe if reheating in microwave). Brush with half the butter mixture.
  • Bake 15 minutes; brush with remaining butter mixture. Bake 15 minutes more, or until pale golden around edges. Spoon juices on bottom of dish over top.

4 sweet potatoes ((approx 2 ½ pounds) peeled and cut into 1-inch dice)
4 small apples ((or 3 large), peeled, cored and diced into 1-inch pieces)
½ cup unsalted butter (melted)
½ cup dark brown sugar
¼ cup maple syrup
2 teaspoons pumpkin pie spice
¼ cup pecans (chopped)
salt (to taste)

Steps:

  • Add the potatoes to a large pot and cover with water.
  • Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
  • Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
  • Drain the potatoes and place them into the prepared baking dish.
  • Add the apples to the casserole dish.
  • In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
  • Pour mixture over the apples and potatoes and stir to combine.
  • Add to the oven and bake for 25 minutes.
  • Remove from the oven and top with pecans.
  • Add back to the oven and cook for 5 minutes more to toast the pecans.

2 pears, peeled and sliced
½ cup dry white wine
¼ cup water
3 sweet potatoes, peeled and cubed
1 cup evaporated milk
¼ teaspoon vanilla extract
¼ cup brown sugar
2 tablespoons butter
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
  • Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.

4 pears - peeled, cored and chopped
1 cup evaporated milk
2 teaspoons vanilla extract
½ cup packed brown sugar
4 tablespoons butter
½ teaspoon ground cinnamon
1 pinch freshly grated nutmeg
2 tablespoons orange juice
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prick the sweet potatoes with a fork and bake in the preheated oven 1 hour, or until tender.
  • Peel the baked sweet potatoes. Place in a medium bowl and whip until smooth.
  • In a medium saucepan over medium heat, gently cook the pears 10 minutes, or until tender. Process the pears in a food processor until smooth.
  • In a medium saucepan over medium heat, mix the evaporated milk, vanilla, brown sugar and butter. Heat until scalded. Blend into the sweet potatoes.
  • Mix the pear puree, cinnamon, nutmeg, orange juice and pecans into the sweet potato mixture. Transfer to a large baking dish.
  • Bake in the preheated oven 15 minutes, or until lightly browned.

1/4 cup orange juice

2 tablespoons golden raisins
3 medium firm pears, peeled and cut into 1/4-inch slices

Steps:

  • Pierce sweet potatoes and place on a microwave-safe plate. Microwave, uncovered, on high for 13-15 minutes or until tender. Cool.
