A make-ahead vegetarian side dish that's high in fibre and provides a good source of vitamin C

800g sweet potato , peeled and cut into chunks
800g parsnip , peeled and cut into chunks
200ml tub reduced-fat crème fraîche
2 tbsp shredded sage
4 tsp wholegrain mustard
butter , for greasing
1 slice granary bread , finely chopped
50g coarsely grated vegetarian-style parmesan
3 tbsp pine nut

Steps:

  • Boil the sweet potatoes and parsnips for 20 mins in salted water until tender. Drain really well, then roughly mash with half the crème fraîche and half the sage, the mustard and salt and pepper. Pile into a buttered ovenproof dish and smooth over.
  • Heat oven to 190C/170C fan/gas 5. Mix the breadcrumbs with the Parmesan, pine nuts and remaining sage. Spoon the remaining crème fraîche over the mash, scatter over the bread and cheese mixture, then bake for 35-40 mins from fridge-cold, 25-30 mins if not, until golden.

2 large sweet potatoes, peeled and cut into 1/2-inch pieces (about 3 cups)
4 medium parsnips, peeled and cut into 1/4-inch slices (about 2 cups)
1/4 cup Swanson® Chicken Broth (Regular, Natural Goodness¿ or Certified Organic), heated
2 tablespoon butter
2 tablespoon packed brown sugar
1/4 teaspoon freshly ground black pepper
1 tablespoon chopped fresh chives
Additional fresh chives for garnish

Steps:

  • Place the potatoes and parsnips in a 4-quart saucepan. Add water to cover. Heat over medium-high heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the vegetables are tender. Drain the vegetables well in a colander.
  • Place the vegetables, broth and butter into a food processor. Cover and process until the mixture is smooth. Add the brown sugar, black pepper and chopped chives. Cover and process until the mixture is just combined. Garnish with the additional chives.

1/4 teaspoon ground red pepper (cayenne)
1/4 teaspoon freshly ground pepper
2 eggs, slightly beaten
6 tablespoons canola oil

Steps:

  • In medium bowl, mix all ingredients except oil, sour cream and additional green onions until blended.
  • In 12-inch skillet, heat 2 tablespoons of the oil over medium-high heat. Scoop sweet potato mixture by 1/4 cupfuls into skillet; flatten slightly. Cook 4 minutes or until golden brown, turning once. Drain on paper towels. Repeat with remaining batter. Add remaining oil as needed to prevent sticking. Top with sour cream. Garnish with additional green onions.

6 MacIntosh or Granny Smith apples, peeled, cored and cut into 1-inch chunks
1 teaspoon lemon zest
1 tablespoon lemon juice
1 tablespoon apple cider
1/2 teaspoon Chinese 5-spice powder
1 tablespoon sugar
1 pound sweet potatoes, peeled
1/2 pound parsnips, peeled
Kosher salt
1/4 cup all-purpose flour
2 large eggs
1/4 cup vegetable oil, plus more as necessary
Sour cream
1/4 cup scallions, thinly sliced on the bias

Steps:

  • For the applesauce: Combine the apples, lemon zest, lemon juice, apple cider, 5-spice powder and sugar in a large saucepan over medium heat; stir to combine. Cook until the apples begin to break down but are still chunky, 10 to 15 minutes. Remove from the heat and let cool.
  • For the latkes: Grate the sweet potatoes and parsnips on a box grater and transfer to a large bowl. Season with salt and toss to combine. Add the flour and stir to distribute evenly. Add the eggs and stir well. Heat 2 tablespoons of the oil in a large saute pan over medium heat. Working in batches, form the potato mixture into 3-inch latkes that are about 1/2-inch thick. Add the latkes to the hot oil in a single layer and fry until golden brown on both sides and cooked through, about 4 minutes per side. Remove to a paper towel-lined plate and season with salt. Repeat the frying, adding more fat as necessary.
  • Serve the latkes with the applesauce, sour cream and scallions.

4 medium parsnips (about 2 pounds), peeled
1 large sweet onion, cut into wedges

1/2 teaspoon salt

1/4 teaspoon pepper

Steps:

  • Cut sweet potatoes in half lengthwise. Cut each half lengthwise into four pieces, then into 3-in. slices. Cut parsnips into quarters, then into 3-in. pieces. Place the potatoes, parsnips and onion in a 3-qt. microwave-safe baking dish. Cover and microwave on high for 1 to 1-1/2 minutes; stir. 2 tablespoons unsalted butter, cut into pieces
3/4 cup low-sodium chicken or vegetable broth
1/4 cup dry white wine, such as Sauvignon Blanc
1 cup grated Gruyere cheese (4 ounces)

Steps:

  • Preheat oven to 350 degrees. In an 8-inch square baking dish, arrange a single layer of turnips and sweet potatoes, overlapping slightly. Season with salt and pepper and sprinkle with one-third of the flour. Repeat to make 3 more layers, sprinkling with salt, pepper, and flour between layers. Dot top layer with butter, then slowly pour broth and wine into dish, keeping layers intact. Cover with foil and bake until vegetables are tender when pierced with a knife, 45 minutes.
  • Increase oven temperature to 425 degrees. Remove foil and sprinkle cheese over dish. Bake until cheese is golden and bubbling, 12 to 15 minutes. Let gratin sit 10 minutes before serving.

  • Preheat oven to 425° F. Prep a baking sheet by spreading about 1 teaspoon of oil to prevent the latkes from sticking.
  • Bring 4 cups of water to a boil. Add spiralized sweet potato and parsnip noodles to a large colander and pour boiling water over top. Drain noodles well and allow them to cool a bit — about 10 minutes or so. Scooping out a handful at a time, put the sweet potato and parsnip noodles into a clean kitchen towel and squeeze to remove as much liquid as possible.
  • Place squeezed noodles into a large bowl with eggs, scallions, garlic powder, salt and pepper. Mix well. Using a fork or your hands, scoop out some of the noodles and place onto the prepared baking sheet in the shape of a little nest. Each latke should use about 1/4 cup of the mixture and you should get about 12-14 latkes, depending on size. Press each latke down a bit with your hands. Place baking sheet in the oven and cook for 10 minutes. Remove sheet from oven, flip latkes over and cook for another 10 minutes until latkes are golden brown in color (the edges might get extra brown). Remove from oven and serve with apple sauce and plain greek yogurt (or sour cream).
  • Alternatively, you can cook the spiralized latkes in a skillet. Heat a little oil (about 1 teaspoon) in a medium sized skillet over medium heat. Once oil is hot, use a fork or your hands to scoop out some of the noodles and place in the skillet in the shape of a little nest. 2-3 latkes should fit in your skillet at one time. Cook on one side for about 3-4 minutes until golden brown. Press latkes down with your spatula to flatten a bit, flip and cook for another 3 minutes. Remove latkes from the pan and enjoy.
