SOUTHERN SWEET POTATO BREAD
Once you enjoy a slice of this moist and dense quick bread, you'll have a hard time believing something so luscious can be made without butter. Plus, you can whip up this sweet, spiced quick bread recipe and have it in the oven in just 15 minutes.

Steps:
- Heat oven to 350°F. Grease bottom only of 8x4-inch loaf pan with shortening or cooking spray. In large bowl, stir together flour, sugar, nutmeg and cinnamon.
- Add oil, milk and eggs; blend well. Stir in sweet potatoes, pecans and raisins until well mixed. Pour into pan.
- Bake 1 hour 15 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

- Preheat oven to 350°. In a large bowl, whisk the first 8 ingredients. In another bowl, whisk eggs, sweet potatoes, oil and milk until blended. Add to flour mixture; stir just until moistened. Fold in raisins and walnuts., Transfer to 4 greased 5-3/4x3x2-in. loaf pans. Bake 35-40 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks to cool.

- Preheat oven to 325 degrees F ( 165 degrees C ). Grease an 8x4 inch loaf pan.
- In a medium bowl, stir together the flour, baking powder, salt, nutmeg cinnamon, and sugar. Add the eggs, oil, and milk; mix until well blended. Finally, stir in the mashed sweet potatoes, pecans, and golden raisins. Pour the batter into the prepared pan.
- Bake for 70 minutes, or until a toothpick inserted comes out clean. Allow bread to cool in the pan at least 15 minutes before removing. For best flavor, store overnight before serving.

- 1. Sift flour, cinnamon, nutmeg, baking powder, baking soda, and salt into a medium bowl. Stir in pecans and set aside.
- 2. Using electric mixer at high speed beat sugars, margarine and oil until light. Add eggs, one at a time. Beating well after each addition.
- 3. Add sweet potatoes. Beat until well blended. Reduce mixer speed to low.
- 4. Beat in dry ingredients alternately with coffee until well blended.
- 5. Pour batter into three greased loaf pans. ( I use a bundt pan).
- 6. Bake in 350 degree oven for one hour or until loaves are golden brown and toothpick comes out clean.
- 7. Cool in pans for 10 minutes. Remove to rack to cool completely. Wrap each loaf in foil. Let stand overnight, in a cool dry place before serving.
SWEET POTATO BANANA BREAD
This quick bread is a twist on plain banana bread that's full of flavor. Nuts add a nice crunch. This recipe uses bananas and mashed sweet potatoes which make the bread extremely moist and tender. - 1. Preheat oven to 350 degrees F. Spray loaf pan with non-stick spray.
- 2. In a bowl, combine bananas, sweet potatoes, brown sugar, oil, vanilla, and eggs.

- Preheat oven to 350 degrees F.
- Wash sweet potato and cut into cubes, then steam in a steamer pot until tender. Cool to room temperature.
- Add cooled sweet potato, egg and olive oil to food processor* Blend until well mixed.
- Add in cassava flour, thyme, baking soda and salt. Mix with a spatula, then blend.
- Add in water, mix with a spatula and then blend until smooth.
- Pour batter into a lined 8" x 4" baking pan. Bake at 350 degrees for 60 minutes.
- Remove bread from oven and cool in pan to room temperature, or for at least 15 minutes. Then, transfer to a cooling rack to further cool and release some moisture.
