Steps:
- Preheat the broiler. Cut the potatoes into long noodles using a spiralizer (or use 1 pound store-bought sweet potato noodles). Spread on a rimmed baking sheet, drizzle with 2 tablespoons vegetable oil and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Broil until browned in spots and slightly softened, 3 to 5 minutes.
- Heat the remaining 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the red onion, bell pepper and serrano; cook, stirring, until just softened, about 3 minutes. Add the corn, garlic, cumin, chili powder, coriander, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are tender, 3 to 5 more minutes.
- Add the broiled sweet potato noodles and 1/4 cup water to the skillet with the vegetables. Cook, gently tossing, until the noodles are coated and tender, 1 to 2 minutes. Remove from the heat and stir in the cilantro and lime juice; season with salt and pepper. Serve with lime wedges.

Steps:
- Cook the sweet potato noodles in a large pot of boiling water for 4 to 5 minutes. Immediately drain and rinse thoroughly under cold water. Be sure not to overcook the noodles, or they will lose their chewy texture. If you like, cut the noodles with scissors into 6- to 7-inch lengths for easier eating.
- Blanch the spinach in boiling water. Rinse immediately under cold water, squeeze the water from the leaves and form into a ball, and then cut the ball in half. Combine the spinach, half the garlic, 1/2 teaspoon of the sesame oil, and 1/4 teaspoon salt in a small bowl. Set aside to let the flavors soak in.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the beef, the remaining garlic, 1 teaspoon of the soy sauce, and 1 teaspoon of the sesame oil. Stir-fry until the beef is cooked, 3 to 4 minutes. Add the onion, mushrooms, and carrot and cook until the onion is translucent, about 3 minutes. Add the green onions and stir-fry for another minute. Remove from the heat.
- In a large bowl, thoroughly combine the noodles, beef mixture, spinach, remaining 1/4 cup soy sauce, 1 tablespoon sesame oil, and the sugar. Serve warm, sprinkled with sesame seeds.

HOW TO MAKE SWEET POTATO NOODLES
Steps:
- Use your spiralizer to sprialize the sweet potatoes. I used a hand-held sprializer, which was slightly difficult to use for a sweet potato. If you don't own a spiralizer, you may use a julienne peeler to create sweet potato noodles. Hold the potato in one hand and slowly pull the julienne peeler down the potato with your other hand. Repeat this process until the entire sweet potato is "peeled". NOTE: using a julienne peeler is a tedious process but it can be done.
- Cook the sweet potato noodles. Place 1 tbsp of extra virgin olive oil in a 10 inch skillet (I used cast iron but you may use stainless steel) and heat over medium high heat. Add the spiralized sweet potatoes and toss with tongs to coat with the olive oil. Continue to toss with the tongs every few seconds to prevent the potatoes from burning or becoming stuck on the bottom of the skillet. Do this for 5-10 minutes. The cooking time will depend on your preferred texture of the noodles. If you love a little crunch, cook for 5 minutes. If you prefer soft noodles, cook for 10. Sample a noodle to find out if it's reached your preferred texture.
- Once the noodles are done cooking, remove from heat and serve directly from the skillet or in serving bowls with whichever sauces or topping you prefer.

- In the same pan, add remaining basting oil and heat until the oil sizzles.
- Add the seasoning to the chicken on both sides, then sautee the chicken in the pan for 3-4 minutes per side until juices run clear and chicken is browned on both sides. Divide the chicken into the four plates, and slice if you desire.

- Sweet Potato Noodle Stir-Fry. There’s a strong chance this will be your most colorful meal all week. Orange sweet potato noodles, bright green broccoli, and red peppers… it’s got half the rainbow in one dish.
- Chicken Sausage and Kale Skillet. This meal will fill you up without the food coma that comes with most big pasta dishes. It’s got noodles, white beans, chicken sausage (so much easier than meatballs!)
- Maple Bacon Egg Muffins. You definitely haven’t used sweet potato noodles like this before. Layering them up into a muffin tin is truly genius and makes for a great gluten-free muffin base.
- Chipotle Sweet Potato Noodle Salad. This sweet potato noodle salad has big flavor. Think sweet corn, fresh greens, crunchy pepitas, and fragrant cilantro.
- Coconut Curry Soup. Who says soups have to be boring? This one mixes the tasty flavor of a Thai tom kha soup with the feel of chicken noodle.
- Sesame Tofu Sweet Potato Noodles. Anything that can get us to forget our go-to take-out order is a major win. This noodle dish looks like pad Thai and has a similar nutty taste thanks to cashew butter, soy sauce, and ginger sauce.
- Chorizo Pepper Sweet Potato Noodles. Want to forget you’re not eating real pasta? Pack the skillet with red peppers, chorizo, spinach, onion, and thyme.
- Honey Mustard Sweet Potato Salad. This would make a great side dish for pretty much any protein. First things first: It includes bacon.
- Sweet Potato Pasta Bake. Think of this as a much simpler, much healthier lasagna (yes, it’s possible). When you need something big but low-maintenance, fill a casserole dish with sweet potato noodles, ricotta, red sauce, turkey sausage, and spinach.

- If serving with kale chips or sautéed kale (or crispy chickpeas), prepare now and set aside until serving.
- While cashews finish soaking, peel and spiralize potatoes using a veggie spiralizer on the thinnest blade. Or if you don't own a spiralizer, you can use a vegetable peeler or julienne peeler instead. Set aside.
- Add soaked and drained cashews to a high-speed blender. Then add remaining ingredients: garlic, nutritional yeast, salt, arrowroot starch, and almond or rice milk.

- Drain and rinse thoroughly. Place in a food processor or blender (I got better texture with the blender) and add the 3/4 cup water, salt, and garlic. Puree until very smooth.
- Heat the oil in a large skillet over high heat. Add the sweet potatoes; toss in the pan for 6-7 minutes with tongs until tender-crisp. Remove from heat and toss in the spinach – it should wilt pretty quickly.
- Add half of the herbs and half of the sauce to the pan and toss to combine. Add water if the mixture is too sticky. Season generously with salt and pepper, drizzle with olive oil, and top with the remaining fresh herbs.

- To make the sauce: In a food processor fitted with the chopping blade, combine the onion, ginger, and garlic and pulse a few times until finely chopped. Add the almond butter, tamari, lemon juice, honey, paprika, ground red pepper (if using), and salt and black pepper to taste. Process until combined. Stop to scrape down the sides.
- With the motor running, pour the water through the feed hole. Keep processing until thick and creamy. Set aside.
- To make the swoodles: In a medium bowl, toss the sweet potatoes with the oil, making sure the pieces are well coated. Place on the prepared baking sheet. The swoodles will overlap, but they will lose volume as they bake. Season lightly with salt and black pepper. Bake for 20 minutes, or until tender and golden. Check for doneness around the 10-minute mark, and check again periodically, to remove any swoodles that have cooked more quickly than the others.

- Add vegetable cooking oil in potato starch and then stir in hot boiling water. Wait for a while and then grasp al crumbs together to form a ball. Then continue kneading for 8-10 minutes. The dough can be extremely stretchable, smooth and without any small bumps. More kneading makes the dough better.
- Dust the operating board with starch and then flat the dough and roll out to a rectangle. Cut into 1 cm thick strips and then shape into longer ones.
- Bring a large pot of hot water to a boiling and then prepare a bowl of cold water at side. Add the starch noodles in. Cook until floating, then transfer to cold water.

- Now, toss the noodles with ghee, black pepper, and garlic powder until they are well coated. Spread them in a single layer and transfer them to the oven. Roast for 15-20 minutes (turning once), until noodles are tender and a little brown around the edges.
