SWEET POTATO FRIES
These addictive seasoned "fries" from Mark Bittman are actually baked, but we promise you won't miss the grease. The spice mix - garlic powder, paprika, salt and black pepper - can be used on regular potatoes as well (you'll just need to increase the baking time a bit).

SWEET POTATO HOME FRIES
Courtesy of Chowhound, this recipe hit my inbox this morning and looks just delightful! The sweetness of sweet potatoes combines with a fresh bite from scallions and a kick of smoke from paprika. Because the potatoes are parboiled, the last-minute work on this recipe is minimal. The result is a crunchy exterior and a soft interior.

Steps:
- Place the russet potatoes and sweet potatoes in separate saucepans and cover with cold water. Bring to a boil and cook until slightly tender on the outside, so that they just give way when pierced with a knife but are still firm on the inside, about 10 to 15 minutes.
- Drain the potatoes and spread evenly on a baking sheet to cool. (At this point they can be combined and placed in a sealed container in the refrigerator overnight.)
- In a small bowl combine the paprika and salt and stir until well mixed; set aside.
- Heat 2 tablespoons of the oil in a large skillet over medium-high heat and add a third of the potato mixture, or enough to make a single layer in the pan. Let cook undisturbed until golden brown, about 5 to 8 minutes.
- Stir gently with a wooden spatula and let cook undisturbed for another 2 to 3 minutes.
- Add a third of the garlic, shallots, and paprika mixture and season generously with pepper. Let cook until nicely colored and crisp, about 1 to 2 minutes.
- Sprinkle with a third of the scallions and remove to a platter. Repeat with the remaining ingredients, adjust the seasoning as necessary, and serve.

- In large skillet over medium heat, heat 1 tablespoon oil and cook onions and bell peppers until onions are softened, about 5 minutes. Add potatoes, herbs, spices and remaining oil, cook on medium to medium low heat, uncovered, for about 25 – 30 minutes stirring occasionally. You want the potatoes to brown and crisp a little on the edges. Be sure to scrap the bottom of the skillet as well to get all the pieces that may stick to the bottom, they will add nice flavor and some crispy texture to your dish.
- Leftovers can be stored in the refrigerator for up to 4 – 5 days, in a covered container. For longer storage, freeze for up to 2 months.

- Scrub sweet potatoes with a vegetable brush under running warm water so the skin is thoroughly clean. Slice or cube sweet potatoes to desired size -- 1 inch cubes works well -- cutting away any blemishes on the potatoes.
- Heat oil in a large skillet over medium heat until hot. Add the potatoes, careful not to overcrowd the skillet, and cover with a lid. Depending on the size of the skillet you may need to cook the potatoes in two batches.
- Cook covered for about 2 minutes, then carefully remove the lid without tilting and set the lid aside, face down on a paper towel to absorb the moisture. Stir potatoes to check if they are beginning to brown.
- Return the lid to the skillet and continue cooking the potatoes, checking and stirring about every 2-3 minutes until the sweet potatoes are golden brown on almost every side and fork tender in the middle.
