GINGER ORANGE SWEET POTATOES
Ginger Orange Sweet Potatoes are a wonderful and colorful side dish. Sweet potatoes are baked and mashed with fresh ginger, orange juice, and butter.

Steps:
- Preheat oven to 400°F.
- Pierce sweet potatoes several times with a fork. Place sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 1 hour.
- While the potatoes are baking, grate the zest and squeeze the juice from the orange. Place 1 heaping teaspoon of the grated zest and 1/3 cup strained juice in a large bowl. Save any remaining zest and juice for a separate use or discard.
- Carefully remove and discard the skins from the baked sweet potatoes (don't burn yourself with the hot potatoes!).
- Place sweet potato flesh in the bowl with the orange zest and juice. Add butter, ginger, salt and pepper.
- Mash or beat to combine.
SWEET POTATO GRATIN
Steps:
- Preheat oven to 350 degrees F.
- Use one tablespoon of butter to grease a 9 by 13-inch baking or gratin dish. Mix together orange juice, brown sugar, and spices, then add pineapple. Layer slices of sweet potatoes in the dish, then dot with butter. Top with pineapple mixture. Season each layer with salt and pepper. Repeat this process until all sweet potatoes are used up, ending with pineapple mixture.
- Bake in oven for 40 to 45 minutes until sweet potatoes are tender when a pairing knife is inserted. Baste gratin with excess juices every 10 minutes. The top should be bubbly and brown. If the top gets too brown or starts to burn, cover with aluminum foil and continue cooking until sweet potatoes are done.
SWEET POTATO GRATIN WITH GINGER AND ORANGE ZEST

- Preheat oven to 400 degrees. Grease a 6- to 8-cup gratin dish with butter. In a small pan, gently heat remaining butter with cream, ginger and orange zest, stirring once or twice, until butter has melted and mixture is just steaming. Remove from heat.
- Spread potatoes and nuts evenly into baking dish and sprinkle with plenty of salt and pepper. Drizzle cream mixture over all and press down on potatoes with a fork to settle them into dish and at least partly submerge them. Bake until potatoes are tender and cream thickens, about 45 minutes. Serve hot or warm.

- In a large saucepan over medium heat, cook sweet potatoes in boiling water until tender but still hold their shape, about 5 minutes; drain. Arrange in a buttered 2-qt. baking dish so slices overlap slightly. , In a saucepan, combine juice, butter, sugar, syrup, zest and spices; bring to a boil over high heat, stirring occasionally. Reduce heat to medium; cook until thickened, about 5 minutes. Drizzle over potatoes., In a small bowl, combine oats, sugar and cinnamon. Cut in butter until crumbly. Stir in pecans. This d sh is simple but effective, due to the way the potatoes are arranged in the baking dish. You can prepare everything a day in advance and have it ready in the fridge to just pop in the oven, The sage can be replaced with thyme, or you could use both. Make sure you choose orange-fleshed sweet potatoes (as opposed to the paler variety).

- Preheat the oven to 200C./Gas Mark 6, Wash the sweet potatoes. (do not peel them) and cut them into discs 5mm thick. A mandolin is best for this job but you could use a sharp knife.
- In a bowl, mix together the sweet potatoes, sage, garlic, salt and pepper. Arrange the slices of sweet potato in a deep, medium-sized ovenproof dish by taking tight packs of them and standing them up next to each other. They should fit together quite tightly so you get parallel lines of sweet potato slices (skins showing) along the length or width of the dish. Throw any remaining bits of garlic or sage from the bowl over the potatoes. Cover the dish with foil, place in the oven and roast for 45 minutes. Remove the foil and pour the cream evenly over the potatoes, Roast, uncovered, for a further 25 minutes. The cream should have thickened by now. Stick a sharp knife in different places in the dish to make sure the potatoes are cooked. They should be totally soft.
- Serve immediately, garnished with sage, or leave to cool down. In any case, bringing the potatoes to the table in the baking dish, after scraping the outside clean. will make a strong impact.

- Preheat oven to 375F.
- Bake potatoes on a cookie sheet until soft (approx. 1.5 hrs).
- When cool enough to handle, peel and chunk potatoes into a large bowl.
- Add butter and other ingredients and toss to mix.
- Mash potatoes thoroughly or puree in a blender. A hand mixer works well also.
- Lower oven temperature to 350F.
- Turn mashed potatoes into a casserole dish and dot the top with a bit of additional butter.
- Bake 30-40 minutes until hot.
- NOTE: This can be made ahead of time. Bring the mashed potato mixture to room temperature before dotting with butter and baking until hot.

- Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. - Pierce skin of sweet potatoes in several spots with a fork.
- Cook sweet potatoes in microwave oven until just tender, 12 to 15 minutes. Refrigerate sweet potatoes until cooled completely, at least 20 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Prepare a shallow 1 1/2-quart baking dish with cooking spray.
- Peel sweet potatoes and cut into cubes; spread into prepared baking dish.
- Mix sugar, cornstarch, salt, and ginger together in a glass measuring cup; pour orange juice into the cup while stirring with a whisk.
- Heat orange juice mixture in microwave oven for 1 minute, stir, and continue to heat until thickened and smooth, 30 to 60 seconds more; add butter and stir until melted. Pour the liquid over the sweet potatoes.
- Bake in preheated oven until sweet potatoes are heated through, 15 to 20 minutes.

Part of my Thanksgiving dinner, this dish is a nice change from the more original sweet potatoe casserole. It is not as sweet as the ones that people usually compare to as a dessert.

- Preheat the oven to 350°F.
- Line a baking sheet with foil.
- Grease a 1- to 1-1/2-quart ovenproof serving dish or spray with nonstick spray.
- Wash and dry the sweet potatoes. Stick them with a knife several times each to allow steam to escape. Put them baking sheet and bake until soft. (1-1/2 to 2 hours, depending on size).
- Peel potatoes as soon as they are cool enough to handle.
- Beat with an electric mixer.
- Beat in 4 tablespoons of the butter. Add 4 tablespoons of the brown sugar and the salt, coriander, cinnamon, ginger, and lemon peel. Mix well.
- Beat in the orange juice.
- Place the potatoes in the prepared baking dish.
- Sprinkle top lightly with remaining 2 tablespoons of brown sugar and dot with remaining 2 tablespoons butter.
- Bake for 30 minutes until heated through.
- To make ahead- After you put it together, and before baking, cover it tightly with foil and freeze. When ready to use, defrost the casserole and bake in a 350°F oven for 30 minutes.

- Peel sweet potatoes and slice into rounds 1/4-inch thick. In a saucepan simmer milk, cream and garlic about 10 minutes, until the potatoes are barely tender. Remove from heat.
- Preheat oven to 375 degrees. Rub a baking dish with one tablespoon of butter, and dust with three tablespoons of bread crumbs.
- Season potatoes and cream with salt and Cayenne pepper. Spread mixture in baking dish, sprinkle with cheese and remaining bread crumbs, and dot with rest of butter. Bake 30 minutes, until lightly browned.
