OLD HANOI SWEET POTATO AND GINGER PUDDING - CHè KHOAI LAN
This Vietnamese dessert is sweet, warming and a bit gooey ! Its very nice and simple, flavorful too. Got this recipe when I went on a cooking course in Hanoi and this was the dessert of the four dishes I made.

Steps:
- Bring the water to the boil, and put in the sweet potato.
- When the water returns to the boil, add the ginger, and continue cooking until the potato is tender and cooked through.
- Add sugar and a little arrow starch, and allow it to dissolve completely. Then remove from the heat. Serve hot.

A new twist on the old standard of sweet potato pie but no crust. This has just a hint of orange flavor and is not overly sweet. You will love it! Great side dish for your Thanksgiving feast! If desired, top casserole with marshmallows and brown in oven.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 2 1/2 quart baking dish.
- Bring a large pot of water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain and mash.
- In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla; stir until smooth. Pour into buttered dish.
- Bake in preheated oven 40 minutes.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.
- Combine sweet potatoes and eggs in a medium bowl. Beat in the brown sugar, milk, butter, lemon juice, ginger, cloves, cinnamon, salt. Pour into prepared dish.

- Peel cut and grate sweet potatoes and place in a large mixing bowl. Add dark sugar, flour and raisins. Combine Grace Coconut Milk Powder with water, mix well and add to the sweet potato mixture. Add melted margarine,nutmeg,salt, cinnamon powder, vanilla, rum, lime juice and browning and mix well. Scrape mixture into a greased 10inch baking tin. Bake in a pre-heated oven 350 F or 180 degrees C for 1 1/2 - 1 3/4 hours.Note:5 pounds sweet potato will yield 12 cups when grated.

Ginger Orange Sweet Potatoes are a wonderful and colorful side dish. Sweet potatoes are baked and mashed with fresh ginger, orange juice, and butter.

- Preheat oven to 400°F.
- Pierce sweet potatoes several times with a fork. Place sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 1 hour.
- While the potatoes are baking, grate the zest and squeeze the juice from the orange. Place 1 heaping teaspoon of the grated zest and 1/3 cup strained juice in a large bowl. Save any remaining zest and juice for a separate use or discard.
- Carefully remove and discard the skins from the baked sweet potatoes (don't burn yourself with the hot potatoes!).
- Place sweet potato flesh in the bowl with the orange zest and juice. Add butter, ginger, salt and pepper.
- Mash or beat to combine.
SWEET POTATO PUDDING
Steps:
- Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
- With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.
- Sprinkle the praline mixture over the pudding and bake for an additional 20 to 25 minutes, until the pudding is set and slightly puffed. The top will sink as the pudding cools. Serve warm or at room temperature.
- In a small bowl, combine the ingredients and reserve to use as topping for the sweet potato pudding.
SWEET POTATO BREAD PUDDING
To allow the milk mixture to soak into the bread, make the base for this pudding the night before you plan to bake it.

- In a large bowl, whisk together sour cream, milk, sugar, eggs, baking powder, vanilla extract, ginger, salt, cranberries and minced orange.
- Add bread cubes and stir gently to coat; cover and chill overnight.

SWEET POTATO & GINGER PUDDING

- Place the sweet potatoes in a large saucepan with water to cover. Bring to boil. Reduce the heat, cover & cook until tender, 30-40 minutes. Drain and let cool. Preheat oven to 350. Butter a 2 quart baking dish. Peel the cooled sweet potatoes and place in a food processor fitted with the metal blade. Process to a smooth puree. Transfer the puree to a large bowl and stir in the lemon zest, salt, and crystallized ginger. Then stir in the cream and add nutmeg to taste. In a separate bowl, beat the egg whites until soft folds form. Add about 1/4 of the beaten whites to the potato mixture and stir in well to lighten it. Gently fold in the remaining whites, being careful not to deflate the mixture. Spoon into the prepared baking dish. Bake until risen and slightly golden on top, 40-50 minutes. Serve immediately.
