SWEET POTATO FALAFELS WITH COLESLAW



Sweet potato falafels with coleslaw image

Pittas bursting with homemade falafels and salad make a low-fat lunch or light supper for less than a pound per serving

1 large or 2 small sweet potatoes , about 700g/1lb 9oz in total
1 tsp ground cumin
2 garlic cloves , chopped
2 tsp ground coriander
handful coriander leaves , chopped
juice ½ lemon
100g plain or gram flour
1 tbsp olive oil
4 wholemeal pitta breads
4 tbsp reduced-fat hummus
2 tbsp red wine vinegar
1 tbsp golden caster sugar
1 small onion , finely sliced
1 medium carrot , grated
¼ each white and red cabbage , shredded

Steps:

  • Heat oven to 200C/180C fan/gas 6. Microwave sweet potato whole for 8-10 mins until tender. Leave to cool a little, then peel. Put the potato, cumin, garlic, ground and fresh coriander, lemon juice and flour into a large bowl. Season, then mash until smooth. Using a tablespoon, shape mix and into 20 balls. Put on an oiled baking sheet, bake for around 15 mins until the bases are golden brown, then flip over and bake for 15 mins more until brown all over.
  • Meanwhile, stir the vinegar and sugar together in a large bowl until the sugar has dissolved, toss through the onion, carrot and cabbage, then leave to marinate for 15 mins. To serve, toast the pittas, then split. Fill with salad, a dollop of hummus and the falafels.

Extremely easy version of the traditional dish. Delicious when served as a side dish or snack- I always get people asking me for this recipe!

2 sweet potatoes
1 (15 ounce) can garbanzo beans, drained
1 egg
2 cups all-purpose flour, or more if needed
1 teaspoon garlic powder
1 teaspoon ground cumin
½ teaspoon ground coriander

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Grease a baking sheet.
  • Puncture sweet potatoes several times with a fork. Cook in microwave on High for 5 minutes. Flip and cook until potatoes are easily pierced with a fork, about 3 to 5 more minutes; cool. Peel skin off and cut sweet potatoes into large chunks.
  • Mash garbanzo beans with a fork or potato masher in a bowl.
  • Stir sweet potatoes and egg into mashed garbanzo beans to form a smooth consistency.
  • Stir 2 cups flour, garlic powder, cumin, and coriander into sweet potato mixture to form a cookie dough consistency. Adjust with more flour if necessary.
  • Roll the dough into 1-inch balls and place on prepared baking sheet. Slightly flatten balls into patties.
  • Bake in the preheated oven until golden brown, about 30 minutes, flipping after 15 minutes.

  • Place the oats in a food processor and blitz until it resembles flour. Add the drained chickpeas, roughly chopped onion and garlic. Blitz until chickpeas are mostly broken down. I like to leave some chunky bits.
  • Transfer them mixture to a bowl and add the remaining ingredients. Once the sweet potato is cooked, cut in half lengthways and scoop out the flesh. Add to the bowl and mix everything together.
  • Pop the mixture in the fridge for half hour to firm up if it seems too soft. If the mixture seems too wet, add a little flour. If it's dry add a little water.

  • Rinse your soaked chickpeas and grind them finely (they should resemble medium bulgur wheat after grinding) in a food processor.
