- Preheat air fryer to 360°. Using a mandoline or vegetable peeler, cut potatoes into very thin slices. Transfer to a large bowl; add enough ice water to cover. Soak for 15 minutes; drain. Add more ice water and soak another 15 minutes., Drain potatoes; place on towels and pat dry. Spritz potatoes with cooking spray; sprinkle with salt. In batches, place potato slices in a single layer on tray in greased air-fryer basket. Cook until crisp and golden brown, 15-17 minutes, stirring and turning every 5-7 minutes. If desired, sprinkle with parsley.

- Peel and thinly slice sweet potatoes (use a slicer or mandolin for thin, even slices).
- Soak sweet potato slices in ice water for 15 - 30 minutes.
- Drain slices and pat as dry as possible with paper towels.
- Mix olive oil with salt and paprika. In a small bowl, toss a few sweet potato slices with a little of the oil mixture. Only coat as many slices as will fit in your air fryer basket.
- Place slices in a single layer in the air fryer basket and cook at 300 degrees for 18 to 19 minutes, shaking the basket every 6 minutes. Watch carefully during the last cooking cycle and adjust cooking time as needed for your air fryer.
- Remove chips to a serving bowl and repeat steps 4 and 5 for the remaining slices.

- Combine sweet potato fries and canola oil in a bowl and mix. Season with salt, pepper, garlic powder, and paprika. Mix until all fries are evenly coated.
- Divide sweet potatoes into 2 or 3 batches for cooking. Place an even layer of sweet potatoes in the fry basket, insert in the air fryer, and cook until golden, about 10 minutes. Repeat with remaining sweet potatoes.

- Wash and scrub the sweet potato, then dry it well. There's no need to peel it.
- Trim the ends off the sweet potato, then slice it into 1/16 inch or 1/8 inch slices depending on your preference. This works best with a mandolin but you can also try with a knife if you don't have a mandolin.
- Preheat the air fryer to 325 degrees Fahrenheit.
- Place the sweet potato slices in a bowl and add oil, paprika (optional), and salt. Toss everything until the slices are evenly coated.
- When the air fryer is hot, add enough slices to cover the bottom of the air fryer tray. The sweet potato chips should be in one layer with no major overlap (a tiny bit is okay). If you have a very large air fryer, you might be able to fit all of the slices - otherwise, cook them in two batches.
- Cook the sweet potato chips for 6-8 minutes for 1/16 inch chips and 12-14 minutes for 1/8 inch chips until crispy but not burned. There is no need to flip the chips since they are so thin but check them every few minutes and put them back in place if they have moved. The exact cooking time can vary by air fryer so check them regularly. Thicker cut chips will certainly take longer to cook.
- Once the chips are done, remove them from the air fryer and place them on a cooling rack. Then add the second batch of sweet potato slices to the air fryer and cook. Repeat until all the chips are cooked. Enjoy!

- Wash and peel the sweet potatoes.
- Using a mandolin slicer slice the sweet potatoes on a thin setting. Make sure that the slices have an even thickness on each slice. If the slices are too thin on one side that side will burn before the thicker side cooks.
- Soak all of the slices in a large bowl covered with cold water for 20 minutes. This removes some of the starch for a crisper chip.
- Thoroughly dry the slices with a towel or paper towels.
- Lightly brush the outside of each slice with a light coating of the vegetable oil.
- Sprinkle the salt and pepper or other optional spices onto each side of the slices.
- Place on the air fryer wire rack or basket and make sure that the slices are not touching each other.
- Cook for 7-8 minutes at 250 degrees Fahrenheit and then flip over each chip and cook for another 7-8 minutes. Check at the 5-minute mark for each side to make sure they do not overcook and burn. Remove and serve.
