SWEET POTATOES WITH MAPLE AND CHIPOTLES
This is a Bobby Flay recipe ginned up specifically for Thanksgiving in response to a request from The Times back in 2003. Mr. Flay came through in spades: The sweetness of the potatoes is amplified by maple syrup, then taken in a completely different direction by the addition of fiery chipotle sauce. Sour cream knits the dish together perfectly.

- Put oven rack in middle position and heat oven to 375 degrees. Place potatoes on large baking sheet and bake until soft, 35 to 40 minutes for medium potatoes, up to 1 hour for large.
- Meanwhile, combine syrup, sour cream or crème fraîche, chipotle purée, cinnamon and salt in a small bowl. Whisk until smooth.
- When potatoes are tender, remove from oven and slice in two lengthwise. Scoop hot flesh into a potato ricer or food mill, and purée into bowl with other ingredients. Stir with rubber spatula to combine. Potatoes should be light and fluffy. Taste for seasoning, transfer to warm serving bowl and serve immediately.

MASHED CHIPOTLE SWEET POTATOES
This dish is a favorite in our home during the holiday season. The smoky heat of the chipotle chile and the sweet potato's natural sweetness balance each other beautifully. Adjust the amount of chipotle peppers to suit your taste, and don't overbeat the potatoes so they keep some chunky texture.

- Preheat oven to 450 degrees F (230 degrees C). Lightly grease a 2 quart baking dish, and set aside. Line a baking sheet with aluminum foil. Pierce each sweet potato several times with a fork, and place on the prepared baking sheet.
- Roast the sweet potatoes in preheated oven until easily pierced with a fork, 1 to 1 1/2 hours. Remove from the oven, and cool about 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C).
- When sweet potatoes are cool enough to handle, cut in half, and scoop flesh into a mixing bowl. Discard potato skins. Beat the sweet potatoes with the chipotle peppers, butter, and salt; spread evenly in the prepared baking dish. This can baked now or refrigerated until the next day.
- Bake in the preheated oven until heated through, 20 to 25 minutes.

This is my favorite creamy mashed sweet potatoes recipe with spicy chipotle, perfect for the holiday table or for anyone who loves sweet potatoes.

- Peel and rinse the sweet potatoes, then chop them into small cubes.
- Set them into a pot and cover them with water. Add a teaspoon of salt. Boil the sweet potatoes until they are fork tender, about 10 minutes. Drain.
- Add the sweet potatoes to a large bowl and add the butter, chipotles in adobo, crema or sour cream, garlic powder, and salt and pepper to taste.
- Mash the mixture with a potato masher or large fork to mash the potatoes, or use a hand mixer for smoother mashed potatoes.
- Serve!

- Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Steps:
- Place the prepared potatoes in a large saucepan with cold water and bring to a boil; once boiling add a touch of salt and cook until tender, about 10 minutes.
- Drain the potatoes and return to saucepan, add 2 tablespoons butter, chicken stock, brown sugar, chipotle pepper and adobo sauce.
- Mash the potatoes until combined, I like to leave them slightly lumpy.
- Season with salt and black pepper and serve.

- First, cook the sweet potatoes one of two ways: 1) Roast on a baking sheet, whole with the skin on, in a 400°F oven for 50 minutes to 1 hour or until soft. Or, 2) Peel and quarter the sweet potatoes. Place the potatoes in a large saucepan, cover with water, and bring to a boil. Cook for 10-15 minutes, or until the potatoes are fork tender, and cooked through.
- Meanwhile, in a small saucepan, warm the half and half, butter, and chipotle peppers plus adobo sauce over medium low to low heat, and cook for 5 minutes or until warmed through.
