Beefy Sweet Potato Chili image

There's no better way to warm up than with a bowl of this chili. We created this recipe with friends when we lived in Seattle, where cold and rainy days are plentiful. Sweet potatoes are the secret ingredient, but even if you leave them out, you'll still have a tasty basic chili. -Jonell Tempero, Omaha, Nebraska

2 medium sweet potatoes, peeled and cubed
2 pounds ground beef
2 celery ribs, chopped
1 large onion, chopped
1 medium green pepper, chopped
4 garlic cloves, minced
1 jalapeno pepper, seeded and minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons chili powder
2 tablespoons tomato paste
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 can (16 ounces) kidney beans, rinsed and drained
2 tablespoons butter

Steps:

  • Place potatoes in a greased 15x10x1-in. baking pan. Bake, uncovered, at 400° until tender, stirring once, 20-25 minutes., Meanwhile, in a Dutch oven, cook the beef, celery, onion, green pepper, garlic and jalapeno over medium heat until meat is no longer pink and vegetables are tender, breaking meat into crumbles; drain., Stir in the broth, tomatoes, chili powder, tomato paste and seasonings. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Add the sweet potatoes, beans and butter; heat through.

You can serve this chili alone or over cooked brown rice. Try it with some light sour cream, onions, or reduced-fat cheddar cheese sprinkled on top. This recipe can be frozen for later use.

2 tablespoons canola oil
1 onion, chopped
2 peeled carrots
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 -4 cloves peeled garlic (or more, or none, as desired)
4 cups peeled sweet potatoes
1 1/2 cups unsalted dry roasted peanuts
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
2 (4 ounce) cans chopped green chilies
2 -4 tablespoons chili powder, to taste
1 tablespoon ground cumin, or more if desired
1 tablespoon sugar
cooked brown rice (optional)

Steps:

  • Place the oil in a large, heavy pot over medium heat.
  • Add the onions, carrots and bell peppers, and saute lightly for about 8 minutes.
  • Add the garlic and saute until it turns golden.
  • Add the sweet potatoes, peanuts, tomatoes, tomato paste, chiles, chili powder, cumin and sugar.
  • Reduce the heat immediately and simmer gently, stirring occasionally, for 15 to 25 minutes, or until the sweet potatoes are just tender (use a fork to test it).
  • Halfway through the cooking process, adjust seasonings, adding additional chili powder and cumin, as desired.
  • Add salt and pepper to taste.
  • Serve over rice or serve as is.

This vegetarian one-pot meal will warm you up on even the coldest of winter days. Earthy sweet potatoes and carrots form the base and provide cancer-fighting fiber and carotenoids. Tomatoes, peppers and onion add even more flavor and nutrition. Ready in just 45 minutes, serve over a whole grain for a balanced, cancer preventive dinner.

2 Tbsp. canola oil
1 medium onion, chopped
2 medium carrots, peeled and thinly sliced
1 medium green bell pepper, seeded and chopped
1 medium red bell pepper, seeded and chopped
3 garlic cloves, minced
2 pounds sweet potatoes, peeled and cut into bite-sized chunks (about 4 cups)
1 1/2 cups unsalted roasted peanuts
1 can (28 ounces) crushed tomatoes in juice
1 can (6 ounces) tomato paste
2 cans (4 ounces each) diced mild green chiles with liquid
4-6 chili powder, to taste
1 Tbsp. ground cumin, to taste
1 Tbsp. sugar
Salt and freshly ground pepper, to taste

Steps:

  • In a large, heavy pot, heat the canola oil over medium heat. Add the onion, carrots, and bell peppers and sauté, stirring occasionally, for about 8 minutes, until vegetables are golden. Add the garlic and sauté stirring constantly for 30 seconds, until fragrant. Stir in the sweet potatoes, peanuts, tomatoes and juice, tomato paste, chiles and their liquid, chili powder, cumin and sugar.
  • Bring to a boil, then reduce the heat to low immediately and simmer gently, stirring occasionally, for 15 to 25 minutes until the sweet potatoes are just tender.
  • Halfway through the cooking process, adjust the seasonings, adding more chili powder and cumin, if desired. Season to taste with salt and pepper and serve.

1 15- to 16-ounce can pinto beans, drained
3 tablespoons chopped fresh cilantro
1 1/2 teaspoons grated orange peel

Steps:

  • Heat olive oil in heavy medium sauce-pan over medium-high heat. Add onion and sauté until golden brown, about 5 minutes. Add chili powder and stir 1 minute. Add broth and potato. Cover pan; reduce heat to medium and simmer until potato is almost tender, about 10 minutes. Add tomatoes with their juices and pinto beans. Simmer uncovered until chili thickens and potato is very tender, about 10 minutes. Mix in cilantro and orange peel. Season to taste with salt and pepper and serve.
