Here's what you need: water, flax meal, sweet potatoes, can of chickpeas, fresh basil, garlic, salt, pepper, onion powder, flour, bread crumbs

3 tablespoons water
1 tablespoon flax meal
2 sweet potatoes, cubed
1 oz can of chickpeas, drained and rinsed
¼ cup fresh basil, chopped
2 cloves garlic
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion powder
½ cup flour
1 cup bread crumbs

Steps:

  • In a small bowl, combine water and flax meal, and let it sit for 10 minutes.
  • In a large saucepan bring 6 cups (1 ½ L) of water to a boil, then add sweet potatoes. Cook until they are tender, about 10 minutes, then drain.
  • In a food processor, combine the sweet potatoes, chickpeas, basil, flax egg, garlic, salt, pepper, onion powder, and flour, and pulse until combined. Add the bread crumbs and mix.
  • Preheat oven to 400ºF (200ºC). Line a baking sheet with parchment paper.
  • Take about 1 tablespoon worth of mixture and form it into a nugget with your hands.
  • Bake for 20 minutes, flipping halfway, until golden brown.
  • Or, pan fry with a small drizzle of oil over medium-high heat until both sides are golden brown, about 10 minutes.
  • Allow to cool 5 minutes.
  • Enjoy!

1/4 cup all-purpose flour
1 teaspoon salt, divided
1/2 teaspoon coarsely ground pepper

1 tablespoon cornstarch
1 pound chicken tenderloins, cut into 1-1/2-inch pieces

Steps:

  • Preheat air fryer to 400°. Place chips, flour, 1/2 teaspoon salt, pepper and baking powder in a food processor; pulse until ground. Transfer to a shallow dish., Mix cornstarch and remaining 1/2 teaspoon salt; toss with chicken. Toss chicken with potato chip mixture, pressing to coat., In batches, arrange chicken in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 3-4 minutes. Turn; spritz with cooking spray. Cook until golden brown and chicken is no longer pink, 3-4 minutes longer.

These bite-sized Sweet Potato Chicken Bites are flavorful, delicious and made right in the air fryer for a perfectly crispy (and healthy!) alternative to chicken nuggets!

1 lb ground chicken (or turkey)
2 cups finely grated sweet potato
2 Tbsp almond flour
1 Tbsp fresh parsley, finely chopped
2 tsp fresh thyme, finely chopped (or 1/2 tsp dried)
2 tsp garlic powder
2 tsp onion powder
1/2 tsp chili powder
1/2 tsp paprika
1 tsp kosher salt
1/4 tsp black pepper

Steps:

  • In a large bowl, mix together chicken, grated sweet potato, parsley, thyme and seasonings. Using a small cookie scoop, form them into balls and flatten them out a bit so that they resemble nuggets. You should get about 24 chicken bites.
  • , spray the basket of your air fryer with non-stick spray and arrange the chicken bites in a single layer. Depending on the size of your air fryer, you may need to do this in 2 or 3 batches. Set the fryer to 400 degrees and cook for about 13 minutes, flipping them halfway through.
