1 1/2 cups finely ground gingersnap crumbs
3/4 cup toasted pecans, ground
6 tablespoons unsalted butter, melted
8 ounces cream cheese or 8 ounces mascarpone cheese, softened
1/2 cup sugar
1/2 cup dark brown sugar
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 cup pureed sweet potato (or yam; the orange kind, not the yellow kind)
5 eggs
1/2 cup heavy cream
8 ounces unsalted butter
1 cup dark brown sugar, packed
1 cup heavy cream
1/2 cup chopped toasted pecans

Steps:

  • In a large mixing bowl, mix the ground pecans and cookie crumbs; add the melted butter and mix well.
  • To form the crust, press the crumb mixture into the bottom of a 9-inch springform pan.
  • Refrigerate for at least 30 minutes.
  • In a mixer, beat the cream or Mascarpone cheese until smooth, then add the sugars and spices and beat until the mixture is light and fluffy, approximately 3-4 minutes.
  • Add the sweet potato purée and mix until just blended.
  • Add the eggs one at a time, scraping bowl after each egg.
  • Stir in heavy cream at low speed until completely blended.
  • Pour the filling into into the pan.
  • Put the pan into a 1 to 1/2 inch bain marie, or warm water bath (it's a good idea to wrap the bottom and sides of the springform pan to prevent water from leaking in.) Cook the cheesecake in the bain marie for 50 minutes at 350°F.
  • Cool the cheesecake at room temperature for 45 minutes.
  • Chill for at least 4 hours before serving.
  • While the cheesecake is cooling, make the praline sauce: melt the butter in a saucepan, then add the brown sugar, cream and pecans.
  • Bring to a boil over high heat, then reduce the heat and simmer for 5 minutes.
  • Keep warm.
  • To serve, place each serving a slice of pie onto a dessert plate, then spoon a pool of warm praline sauce over and around each serving.
  • Top with a dollop of fresh whipped cream, and garnish with a sprig of mint.

Nonstick cooking spray, for spraying the pan
1 cup graham cracker crumbs
3 tablespoons granulated sugar
3 tablespoons salted butter, melted
Three 8-ounce packages cream cheese, softened
1 cup firmly packed dark brown sugar
2 tablespoons all-purpose flour
3 large eggs, at room temperature
1 1/2 teaspoons vanilla extract
1/2 cup finely chopped pecans

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom of a 9-by-9-inch square pan with parchment paper and spray with cooking spray.
  • In a medium bowl, combine the crumbs, granulated sugar and melted butter and press into the bottom of the prepared pan. Bake until browned, 8 to 10 minutes. Set aside.
  • Increase the oven temperature to 450 degrees F and make the filling.
  • Using an electric mixer, beat the cream cheese until fluffy, then add the brown sugar and flour. Add the eggs 1 at a time, beating well after each addition. Add the vanilla. Fold in the chopped pecans.
  • Pour the batter into the crust and bake for 10 minutes. Reduce the oven temperature to 250 degrees F and bake until slightly browned on top, an additional 50 minutes. Allow to cool completely, about 20 minutes, then refrigerate for at least 2 hours. Cut into 9 bars before serving.

½ teaspoon cinnamon (1g)
12 tablespoons melted unsalted butter
1 cup sweet potato puree (235g)
4 ½ teaspoons unbleached all-purpose flour (11g)
2 tablespoons melted unsalted butter
2 teaspoons cinnamon (4g)
1 teaspoon nutmeg (3g)
¼ teaspoon mace
½ teaspoon kosher salt (3g)
24 oz. full fat cream cheese (room temperature)
¾ cup Imperial Sugar dark brown sugar (165g)
3 large eggs
2 teaspoons bourbon (11g)
½ cup chopped pecans (60g)
½ cup heavy cream
½ cup bourbon
1 cup Imperial Sugar dark brown sugar (205g)
1 teaspoon vanilla pure extract (5g)
1 tablespoon unsalted butter cold

Steps:

  • Cookie Crust: Preheat oven to 350°F. In a food processor, add graham crackers and cinnamon. Pulse 7 times until cookies are a medium crumb. Turn the food processor on to low and slowly drizzle in melted butter until well blended. Crumbs should stay together when squeezed in your hand.
  • Line a 9 x 13 pan with parchment paper, add cookie mixture, and evenly press mixture into the pan. Bake for 6-8 minutes, until golden brown.
  • Sweet Potato Base: While crust bakes make sweet potato base, in a medium bowl with a hand mixer on low speed, combine sweet potato puree, flour, melted butter, cinnamon, nutmeg, mace and ¼ teaspoon salt, until smooth.
  • Cheesecake base: In a large bowl with a hand mixer on medium speed, beat cream cheese until fluffy and smooth for about 30 seconds on low. Add the brown sugar, and remaining salt, until combined. Add eggs one at a time until blended. Then add the bourbon with the last egg. Stir ½ cup of the cream cheese into the sweet potato base. Pour the rest of the cream cheese evenly over the cookie crust. Take large spoonfuls of the sweet potato base and drop over cream cheese. Use a butter knife to swirl the sweet potato base, avoid going too deep, and scrape the cookie crust. Bake for 26-28 minutes until the center is set with a bit of wiggle. Cool for 1 hour or until completely cooled off. Cover and pop in the fridge for 4 hours or overnight is best.
  • Praline Sauce: Turn on the heat to medium-high in a medium-size pot, add the pecans and constantly stir for 2-3 minutes, until fragrant. Add the heavy cream, bourbon, and dark brown sugar. Bring to a boil, then cook at a rolling boil for 6 minutes, until sauce thickens and coats a spoon. Stir in vanilla and butter, until the sauce is smooth. Once sauce cools, pour over cheesecake evenly over before or after cutting bars. Serve immediately.

This is a recipe that I came across while browsing the December issue of Essence Magazine. Sounds like a lot of steps but very easy to make. It's an exciting twist to ordinary cheesecake, even if you are not a big sweet potato fan.

1 3/4 cups graham crackers or 1 3/4 cups gingersnap crumbs
3 tablespoons sugar
1 pinch salt
1/4 cup unsalted butter, melted
3/4 cup light brown sugar, packed
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
1/2 teaspoon salt (optional)
1 lb cream cheese, at room temperature
2 teaspoons pure vanilla extract
3 large eggs
1 cup sweet potato puree
1/2 cup pecan halves
1 tablespoon butter
2 tablespoons brown sugar, packed

Steps:

  • Crust:.
  • Butter 9-inch springform pan.
  • In medium-size bowl, mix crumbs, sugar and salt.
  • Drizzle with butter; stir until dry ingredients are evenly moist.
  • Pour into prepared pan; pat even layer of crumbs over bottom of pan and up sides.
  • Refrigerate 30 minutes.
  • Preheat oven at 350 degrees.
  • Filling:.
  • In large bowl, using electric mixer, beat cream cheese at medium speed until creamy. Scrape down sides with rubber spatula.
  • With mixer running add light brown sugar, cinnamon, nutmeg, ginger, salt, and vanilla. Add eggs one at a time, beating after each.
  • Blend in sweet potatoes.
  • Scrape filling into chilled crust; smooth top.
  • Bake at 350 degrees until set, about 40 minutes. Let cool on wire rack.
  • Topping:.
  • Coarsely chop pecans.
  • In small skillet, melt butter.
  • Add pecans; sprinkle with sugar.
  • Cook, stirring until sugar melts and nuts are toasted and caramel-coated; let cook briefly.
  • Spoon mixture around edge of cheesecake.
  • Refrigerate until time to serve.

1/4 cup sugar
1/4 cup butter, melted
FILLING:
1 pound medium sweet potatoes
3 packages (8 ounces each) cream cheese, softened
3/4 cup plus 2 tablespoons sugar
1/4 cup heavy whipping cream
1/3 cup sour cream
3 large eggs, lightly beaten
TOPPING:
3/4 cup packed brown sugar
1/4 cup butter, cubed
1/4 cup heavy whipping cream
1 cup chopped pecans

Steps:

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. In a small bowl, combine the cracker crumbs, sugar and butter; press onto the bottom of prepared pan. Place pan on a baking sheet. Bake at 350° for 10 minutes., Meanwhile, scrub and pierce sweet potatoes; place on a microwave-safe plate. Microwave, uncovered, on high until tender, 10-13 minutes, turning once., Place springform pan on a wire rack. Reduce oven temperature to 325°. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer., For topping, in a small heavy saucepan, combine brown sugar and butter. Cook and stir over low heat until sugar is dissolved. Bring to a boil over high heat; stir in whipping cream. 5 lbs medium sweet potatoes (about 6 to 7)
1/4 cup sour cream
5 tablespoons honey
1/2 teaspoon table salt
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon clove
2 eggs
1 teaspoon vanilla
1 cup heavy cream
1 1/2 cups brown sugar
2 tablespoons honey
6 tablespoons butter
1/2 teaspoon cinnamon
1 cup pecans (or more to taste)

Steps:

  • Preheat the oven to 350°F Wash the sweet potatoes and prick them all over with a fork. Wrap each potato individually with aluminum foil. Bake for 1 1/2 hours or until the potatoes are very soft. Carefully unwrap the hot potatoes and place them on a cooling rack. Slice lengthwise through each potato and spread them open. If baking the mousse the same day, leave the oven on while you are preparing everything else.
  • While the potatoes are baking, butter the bottom and sides of a 2-quart casserole dish. Sprinkle the bottom of the dish evenly with the pecans.
  • Also while the potatoes are baking, make the praline sauce by combining the brown sugar, honey, butter, and cinnamon in a saucepan over medium heat. Allow the mixture to come to a simmer then cook for 2 minutes. Pour the warm sauce over the pecans in the bottom of the dish. Make sure the mixture has cooled and solidified (waiting at least 10 minutes) before adding any of the sweet potatoes on top.
  • When the sweet potatoes have cooled enough to handle, remove the skins and put the pulp in a mixing bowl. If needed, use gloves or paper towels to keep from burning your hands. Using a mixer equipped with a whisk attachment, whip the potatoes until smooth (about 2 to 4 minutes at medium speed). Add the sour cream, honey, spices and salt and beat until combined. Next, add the eggs and vanilla and beat until incorporated. Finally, add the heavy cream and whisk to combine. Spoon the sweet potato mousse into the dish with the cooled praline sauce.
  • Bake the mousse until the center has reached an internal temperature of about 155F (about 1 hour and 10 minutes). Serve hot. When serving, make sure to dig all of the way to the bottom to get some of that gooey praline sauce with each spoonful.
  • Alternate Preparation: On the day before serving, do Steps 1 through 4. However, make sure the potatoes have cooled completely before adding them to the mixer. After completing Step 4, cover and refrigerate overnight.
  • On the day of serving, remove the dish from the refrigerator and allow it to come to room temperature (45 minutes to an hour). About 20 minutes before baking, start preheating the oven to 350°F Bake the potatoes until they have reached an internal temperature of 155F (about 1 hour and 20 minutes).
