This is not your typical sweet potato casserole that you have during the holidays, it's more savory than sweet. The potatoes are whipped and creamy with just enough spices to keep it from being bland. I really love the hint of garlic, it's a nice surprise. The topping really makes this dish special. CHICKEN, SWEET POTATO, AND BACON CASSEROLE

Chicken, Sweet Potato, and Bacon Casserole image

This chicken, sweet potato, and bacon casserole is comfort food personified. Herbed chicken breasts, sweet potatoes, bacon, sautéed red onion, and Gruyère cheese are mixed together and baked. Weeknights, weekends, dinner for company. It does it all.

Provided by Betty Rosbottom

Categories     Mains

Time 1h20m

Number Of Ingredients 17

Four (8-ounce) boneless, skinless chicken breast halves
1 tablespoon dried thyme
1 1/2 teaspoon dried sage
Kosher salt
1 teaspoon freshly ground black pepper
12 ounces sweet potatoes ((about 1))
1 medium red onion or sweet onion
5 tablespoons extra-virgin olive oil
1/2 cup homemade chicken stock or canned chicken broth
1/4 cup dry white wine
5 slices good-quality smoked bacon
1 tablespoon unsalted butter (plus more for the baking dish)
1 tablespoon all-purpose flour
1 cup whole milk
1/3 cup grated Gruyère cheese
Fresh sage sprigs (for garnish (optional))
Fresh thyme sprigs (for garnish (optional))

Steps:

  • Preheat the oven to 350°F (180°C) and adjust the oven rack to the middle position. Generously butter a 9-by-13-inch baking dish or shallow 3-quart casserole dish.
  • Pat the chicken dry with paper towels. Either chop the chicken breasts into 1-inch chunks or place each chicken breast on a work surface and, using a sharp knife held parallel with the surface, cut the breast in half horizontally to create 8 chicken pieces. In a small bowl, mix together the thyme, sage, 1 teaspoon salt, and pepper. Set aside 1 teaspoon herb mixture. Season the chicken on all sides with the remaining herb mixture.
  • Peel the sweet potatoes and cut into 1/4-inch-thick rounds. Stack several rounds on top of each other and cut into 1/4-inch-wide strips. Peel the onion, halve through the root end, and slice into 1/4-inch-wide strips.
  • In a large skillet over medium heat, warm 3 tablespoons oil until hot. Add the chicken and sauté until lightly browned but not cooked through, 2 to 3 minutes per side. Remove the chicken to the prepared baking dish. Add the chicken broth and wine to the skillet and whisk to scrape up any browned bits on the bottom. Cook, stirring until the liquid has reduced to 1/4 cup, 3 to 4 minutes. Pour over the chicken breasts.
  • In the same skillet set over medium heat, fry the bacon until crisp, 5 to 10 minutes. Drain on paper towels and, when cool, chop coarsely. Pour off all but 1 tablespoon drippings and reserve for another use. To the drippings in the skillet add the remaining 2 tablespoons olive oil. Place the skillet over medium heat, and when hot, add the sweet potatoes and onion and sauté, stirring, until softened, 7 to 8 minutes. Season the vegetables with salt and spoon them over the chicken. Sprinkle with the bacon.
  • In a medium saucepan over medium heat, melt the butter. Add the flour and cook, stirring constantly, for 1 1/2 to 2 minutes. Gradually whisk in the milk and the reserved 1 teaspoon of seasoning. Bring the mixture to a gentle boil, whisking constantly, and cook until it thickens enough to coat the back of a spoon, about 3 minutes from the time the sauce begins to boil. The sauce will be quite thick. Taste the sauce and season with salt if needed. Dab the sauce over the ingredients in the casserole and sprinkle with the Gruyère. Cover the casserole loosely with a sheet of foil.
  • Bake the casserole until the chicken is cooked through and tender, 20 to 30 minutes. Remove from the oven and let cool for 5 minutes before bringing it to the table. If desired, garnish the center of the dish with some sage and thyme sprigs before serving.

SAVORY SWEET POTATO CASSEROLE RECIPE BY TASTY

Savory Sweet Potato Casserole Recipe by Tasty image

Here's what you need: Kroger Sweet Potatoes, bacon, small yellow onion, fresh thyme, fresh rosemary, kroger heavy whipping cream, large egg, kosher salt, freshly ground black pepper, shredded gruyère cheese, unsalted butter, crumbled herb stuffing, fresh thyme

Provided by Kroger

Yield 9 servings

Number Of Ingredients 13

3 lb Kroger Sweet Potatoes
6 slices bacon
1 small yellow onion, chopped
½ teaspoon fresh thyme, chopped
½ teaspoon fresh rosemary, chopped
⅓ cup kroger heavy whipping cream
1 large egg
¾ teaspoon kosher salt
freshly ground black pepper, to taste
1 cup shredded gruyère cheese
2 tablespoons unsalted butter
1 ½ cups crumbled herb stuffing
1 teaspoon fresh thyme, for garnish

Steps:

  • Preheat the oven to 425°F (220°C).
  • Place the sweet potatoes on a baking sheet and poke each one a few times with a fork. Bake for 40-50 minutes, or until very soft. Remove from the oven and let cool until easy to handle. Reduce the oven temperature to 350°F (180°F).
  • Meanwhile, cook the bacon in a medium skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
  • Pour out all but 2 tablespoons of bacon grease from the skillet. Add the onion to the skillet and cook over medium heat for about 5 minutes, or until soft and translucent. Add the thyme and rosemary, and cook, stirring, until fragrant, about 1 minute. Remove the pan from the heat and let the onions cool slightly.
  • Scoop the flesh of the sweet potatoes into a large bowl, discarding the skins. Add the cream, egg, salt, and pepper, and stir to combine. Add the onions and Gruyère cheese, and stir to incorporate.
  • Transfer the sweet potato mixture to a 9-inch square glass baking dish.
  • Make the topping: In the same skillet, melt the butter over medium heat. Add the stuffing and stir until warmed through and slightly toasted, about 2 minutes.
  • Sprinkle the crumbled stuffing evenly over the sweet potatoes. Crumble the bacon and evenly sprinkle on top.
  • Cover the baking dish with foil and bake for 30 minutes, until heated through. If desired, remove the foil and broil on high until the topping is lightly browned, 1-2 minutes. Keep an eye on the casserole so it does not burn.
  • Remove the casserole from the oven and garnish with fresh thyme. Let cool for about 10 minutes before serving.
  • Enjoy!

Categories     Sides

Time 1h35m

Number Of Ingredients 15

4 large sweet potatoes, peeled and cubed into 1-inch pieces
¾ cup brown sugar, packed* (See Notes)
¼ cup pure maple syrup (real maple syrup not pancake syrup)
1 teaspoon cinnamon or pumpkin pie spice
3 tablespoon heavy cream or half-and-half
¼ cup salted butter, melted** (See Notes)
2 large eggs
4 slices thick cut bacon, cut into ⅛-inch pieces
1 cup pecan halves
½ cup brown sugar, packed* (See Notes)
2 tablespoon pure maple syrup( real maple syrup not pancake syrup)
½ teaspoon cinnamon
½ teaspoon smoked paprika or paprika
¼ teaspoon salt
1 teaspoon lemon zest, optional but strongly recommended

Steps:

  • Because of the various stages of this recipe (boiling, baking, baking), make sure you know what you're doing and where you're going next so read the recipe in full, before beginning!
  • To a large stockpot, add the sweet potato chunks, cover with water, and bring to a boil. Boil over high heat until sweet potatoes are fork tender, about 20 minutes. Drain well and transfer to a large bowl.
  • If you're making this straight through (and not making ahead), preheat your oven now to 350F.
  • To the large bowl with the sweet potatoes brown sugar, maple syrup, cinnamon or pumpkin pie spice, cream, butter, eggs, and beat with a handheld electric mixer on medium-high speed until combined and fluffy.
  • Spray a 2-quart casserole dish or similar-sized baking dish with cooking spray, and transfer the sweet potato mixture into the dish. If you're making ahead, stop now, cover tightly with plastic wrap or foil, and refrigerate.*** (See Notes)
  • Line a baking sheet with parchment paper, add the bacon, pecans, toss to combine; set aside. Tip - Parchment paper is not optional here unless you love doing stubborn dishes with a baked-on sugary glaze.
  • To a small bowl, ad the brown sugar, maple syrup, cinnamon, smoked paprika, salt, lemon zest, and mix to combine.
  • Slowly and evenly drizzle the liquid mixture over the bacon and pecans and stir lightly to coat evenly.
  • Bake for about 15 to 20 minutes, or until well toasted.
  • Sprinkle the candied bacon and pecans over the top of the sweet potatoes.
  • Bake on the middle rack fora bout 35 to 40 minutes, or until set. Tip - If the top appears to be browning too quickly, cover it with foil after baking for about 15 to 20 minutes. Remove the foil for the last 5 minutes of baking.
  • Allow to cool momentarily before serving. Recipe is best warm and fresh but extra will keep airtight in the fridge for up to 5 days or in the freezer for up to 4 months.
