I've been making variations of this shepherd's pie recipe for over 10 years, and it's still a requested favorite!

1 tablespoon olive oil
2 pounds ground turkey
1 cup chopped onion
1 cup chopped green bell pepper
4 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon ground ancho chile powder
½ teaspoon ground cinnamon
1 (15 ounce) can diced tomatoes
1 cup canned pumpkin
4 cups mashed, seasoned sweet potatoes
1 teaspoon smoked paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Cook ground turkey until browned, about 5 minutes. Reduce heat to medium. Stir in onion, bell pepper, garlic, salt, pepper, oregano, cumin, ancho chile powder, and cinnamon. Cook, stirring occasionally, until onion and peppers have softened, about 5 minutes. Stir in tomatoes and pumpkin. Top with mashed sweet potatoes and sprinkle with smoked paprika.
  • Bake in the preheated oven until flavors are well combined and sweet potatoes are browned, about 30 minutes.

World's Best Sweet Potato Pie image

Being from the South, we love our sweet potato pie. While many use many different ingredients to make their sweet potato pie this one stands out for its simplicity and goodness. This recipe was passed down to me from my best friend's mother who would cook the absolutely best sweet potato pies. After asking many times she finally wrote it down for me. Prepare yourself for the world's best sweet potato pie. Enjoy with whipped cream.

3 large sweet potatoes
1 cup butter (such as Land O'Lakes®), melted
5 eggs, beaten
1 (12 fluid ounce) can evaporated milk (such as PET®)
1 cup white sugar, or to taste
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
½ teaspoon ground nutmeg
½ teaspoon baking powder
½ teaspoon lemon juice
3 pie shells, thawed

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 40 to 50 minutes. Drain water, peel sweet potatoes, and mash in a bowl.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix butter and eggs together in a bowl until smooth; stir into mashed sweet potatoes. Mix milk, sugar, flour, vanilla extract, nutmeg, baking powder, and lemon juice into sweet potato mixture; pour into the 3 pie shells.
  • Bake in the preheated oven for 10 minutes. Lower oven temperature to 350 degrees F (175 degrees C) and continue to bake until a toothpick inserted in the center of a pie comes out clean, about 40 minutes more. Cool pies for 15 to 30 minutes before refrigerating to cool completely, 1 to 2 hours.

One of my favorites. You could substitute pumpkin, but I really love the sweetness and flavor depth of the sweet potatoes in this pie.

Number Of Ingredients 13

1 butter, pastry for two crusts
1 large egg yolk, beaten with
1 teaspoon water
2 cups sweet potato puree (or pumpkin puree)
2/3 cup packed light brown sugar
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon salt
1 cup heavy cream
2/3 cup whole milk
2 large eggs
1/4 cup Bourbon
unsweetened whipped cream (to garnish)

Steps:

  • Roll out half the pastry and fit into a standard pie tin.
  • Leave the edges flat and cut them off a bit over the edge.
  • Chill down hard.
  • Meanwhile, take the rest of the pastry and roll out, then cut out about 30 leaves from it.
  • Place them on a sheet pan and chill.
  • Mix all of the ingredients for the filling together (sweet potato through bourbon).
  • Pour into the well-chilled crust.
  • Use the egg wash to attach the pastry leaves to the edge of the pie crust, then brush them with the remaining egg wash.
  • Bake at 375 degrees for 1 hour.
  • Chill for at least 4 hours before serving.
  • Serve with unsweetened whipped cream.
  • NOTE: Just bake 3 medium sized sweet potatoes in the oven until nice and soft.
  • Scoop out the flesh and mash very well in your mixer.
  • This should give you a little over 2 cups.
  • You can substitute pumpkin for the sweet potatoes if you like.
