Steps:
- Preheat the oven to 350°F. Lightly oil an 8-inch baking pan with spray oil; set aside.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon and nutmeg; set aside.
- In a second large bowl, whisk together sugar and egg until well combined.
- Stir in apple, sweet potato, vanilla and walnuts and then add apple mixture to flour mixture and stir to combine.
- Transfer batter to prepared pan and bake until cake pulls away from the edges and is deep golden brown, 40 to 50 minutes.
- Set aside to let cool and then cut into squares and serve.

- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.
- Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
- In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
- Bake in the preheated oven 30 minutes, or until lightly browned.

Steps:
- Add the potatoes to a large pot and cover with water.
- Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
- Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
- Drain the potatoes and place them into the prepared baking dish.
- Add the apples to the casserole dish.
- In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
- Pour mixture over the apples and potatoes and stir to combine.
- Add to the oven and bake for 25 minutes.
- Remove from the oven and top with pecans.
- Add back to the oven and cook for 5 minutes more to toast the pecans.

- In large bowl, shred sweet potatoes and apples (in this order to keep apples from oxidizing) by rubbing them across the large holes of a hand or box grater; lightly blot excess moisture with paper towel. Stir in all remaining ingredients except oil until blended.

- Instructions Preheat the oven 350°F. Prepare two 8-inch round baking pans by coating with cooking spray or butter. Use parchment paper rounds, if desired, or dust with flour. In a medium bowl, whisk together the sugar, flour, baking soda, cinnamon and salt. In a large mixing bowl, beat the eggs until light and frothy. Beat in the oil. Add the flour mixture in two additions, until just incorporated, scraping down the sides of the bowl. Stir in the sweet potato and apple. Pour the batter into the pans and place in the oven. Bake for 30 minutes, or until the cake is springy and a toothpick comes clean. When the cake is baked, remove from oven. Let it sit cool completely. Trim the top of the cake with a serrated knife for a flat surface. Invert onto your wire rack or serving plate. If preparing in advance, wrap the cake well and refrigerate until ready to frost. This can be done a day or two in advance. Make the frosting by whipping together the butter and cream cheese. Add the vanilla. Slowly add the powdered sugar and whisk well. Frost the cake and refrigerate. Remove the cake from the refrigerator about 10-15 minutes prior to serving.

- Preheat oven to 350 degrees. Coat 9x5-inch loaf pan with cooking spray.
- In bowl, combine flour, pumpkin pie spice, baking soda, baking powder and salt; reserve.
- In small separate bowl, combine apple and raisins; toss with 2 T. of the flour mixture; set aside.
- On medium speed, beat butter and brown sugar until combined. On medium-low speed, beat in eggs and potatoes until blended. (Mixture may look curdled.).
- On low speed, alternately beat in reserved flour mixture with apple cider until blended.
- Stir in reserved apple mixture. Transfer to loaf pan and bake for 1 hour and 20 minutes or until toothpick inserted into center comes out clean. Cool on rack in pan for at least 10 minutes, then carefully transfer from pan to rack and cool completely.
