This dish is not only delicious, but easy to make. I make this for Saturday family brunches and get togethers. It's a big hit.

2 tablespoons olive oil
6 small red potatoes, sliced
1 cup torn fresh spinach
2 tablespoons sliced green onions
1 teaspoon crushed garlic
salt and pepper to taste
6 eggs
⅓ cup milk
½ cup shredded Cheddar cheese

Steps:

  • Heat olive oil in a medium skillet over medium heat. Place potatoes in the skillet, cover, and cook about 10 minutes, until tender but firm. Mix in spinach, green onions, and garlic. Season with salt and pepper. Continue cooking 1 to 2 minutes, until spinach is wilted.
  • In a medium bowl, beat together eggs and milk. Pour into the skillet over the vegetables. Sprinkle with Cheddar cheese. Reduce heat to low, cover, and cook 5 to 7 minutes, or until eggs are firm.

This springtime frittata offers a blast of flavour and colour and is perfect for a special brunch or a quick weekday supper. Tangy Asiago cheese offsets the earthy and delicous flavours of spinach and sweet potatoes. Serve with crunchy fresh Sweet Onion Salsa.

6 eggs, lightly beaten
1 1/4 cups asiago cheese, shredded, divided
3/4 cup medium cheddar, shredded
1/4 cup milk, 2%
1 tablespoon butter
3 cups sweet potatoes, peeled, diced
4 cups spinach, coarsely chopped
1 cup tomatoes, seeded, chopped
1/3 cup sweet onion, chopped
1/4 cup flat leaf parsley, finely chopped
1 teaspoon fresh lemon juice
salt and pepper

Steps:

  • Position oven rack 6-inches from broiler. Preheat broiler.
  • In a medium bowl, whisk together eggs, 3/4 cup of the Asiago cheese, cheddar cheese, and milk.
  • In a 12-inch non-stick oven-proof skillet over medium heat, melt butter; add sweet potatoes. Cover and cook for 5-6 minutes, stirring occasionally, or until sweet potatoes are almost tender.
  • Add spinach and cook, uncovered for 1-2 minutes or until slightly wilted.
  • Reduce heat to medium-low; pour egg mixture over vegetables; cover and cook for 5-6 minutes or until bubbles are coming through mixture and bottom is golden brown (eggs won't be fully set).
  • Remove cover; sprinkle with remaining 1/2 cup Asiago cheese.
  • Broil for 1 1/2 minutes or until egg is set and cheese is bubbling and slightly browned.
  • Let stand for 5 minutes; run spatula around outside edge of skillet to release frittata. Slice and serve immediately with salsa.
  • FRESH SWEET ONION SALSA:.
  • In a small bowl, combine tomatoes, onion, parsley, lemon juice, salt and pepper.

3 sweet potatoes
2 tbsp olive oil
100g baby spinach
6 large eggs
100g feta , crumbled

Steps:

  • Pierce the potatoes a few times on each side. Microwave on high for 5-8 mins until soft, then set aside to cool a little.
  • Heat the oil in a 20cm ovenproof frying pan and wilt the spinach for a minute or two (you might have to do this in batches). Cut each potato in half lengthways and use a spoon to scoop out the flesh, keeping it in big chunks. Whisk the eggs.
  • Add the sweet potato to the pan and stir to combine with the spinach - don't break it up too much. Pour in the egg and swirl around so it fills any gaps in the pan. Scatter over the feta and cook for 4-5 mins over a low heat until the bottom and sides are set.
  • Place under the grill for 1-2 mins to cook the top - poke a knife into the centre to ensure it's cooked through. Cool before slicing into wedges. Will keep chilled for up to a day.

Steps:

  • Preheat oven to 350 F.
  • In a cast iron skillet, cook sausage over medium-high heat, stirring occasionally, until browned and crumbly, about 5 minutes. Transfer to a plate.
  • Heat 1 Tbsp olive oil over medium-high heat, and cook onion and bell peppers until soft. Add chopped sweet potatoes; season with salt, black pepper, oregano. Cover and cook, stirring occasionally, until tender, about 8 minutes.
  • Add cooked sausage, eggs, and stir everything. Cook until bottom is set, about 2 minutes.

Cooking spray
5 Canadian bacon slices (about 3 oz.), chopped
2 tablespoons canola oil, divided
1 cup thinly sliced shallots
6 large eggs
1 ounce Gruyère cheese, shredded (about 1/4 cup)
1 tablespoon chopped fresh sage
1/2 teaspoon black pepper
1/4 teaspoon kosher salt
1 ounce goat cheese, crumbled (about 1/4 cup)
2 tablespoons chopped fresh chives

Steps:

  • Preheat broiler to high with oven rack in top position. Place sweet potato in a microwavable bowl; add water to a depth of 1/2 inch. Cover with a plate and microwave until slightly tender, 5 to 6 minutes. Drain sweet potato, and transfer to a plate. Pat sweet potato dry, and lightly coat with cooking spray.
  • Heat a 9-inch cast-iron skillet over medium-high. Add Canadian bacon and 1 tablespoon oil; cook, stirring often, until bacon is lightly browned, 4 to 5 minutes. Drain bacon on paper towels, reserving drippings in skillet. Add shallots and sweet potato to skillet; cook, stirring often, until lightly browned, about 5 minutes.
  • Whisk together eggs, Gruyère, sage, pepper, and salt in a bowl. Add remaining 1 tablespoon oil to sweet potato mixture in skillet; pour egg mixture into skillet. Cook over medium, gently pulling eggs in from sides of skillet with a spatula, until eggs are partially set, about 2 minutes. Sprinkle with goat cheese and reserved bacon.

1 tablespoon avocado oil or ghee
3 garlic cloves, minced
1/2 large yellow onion, diced
1 pound grass-fed breakfast sausage
1 medium sweet potato, diced into 1/2″ cubes
12 eggs
1/4 cup coconut milk
1 teaspoon salt
1/2 teaspoon black pepper
2 oz spinach, roughly 2 handfuls
Parsley, to garnish

Steps:

  • Preheat oven to 350 degrees Fahrenheit. In a cast iron skillet (I used a 10 inch), cook breakfast sausage over medium-high heat, breaking up chunks with a spatula, until no longer pink. Once cooked, transfer to a plate.
  • Add oil to the same skillet and sauté garlic and onion for 2-3 minutes. Add sweet potatoes and cook on medium heat for 5 minutes, stirring frequently, until slightly golden brown. Add spinach and stir until wilted.
  • While sweet potatoes are cooking, whisk together coconut milk and eggs in a medium-large sized bowl.
  • Add breakfast sausage back to the cast iron skillet and stir in to sweet potato mixture. Pour whisked egg mixture evenly over sausage and sweet potatoes in cast iron. Press down sausage and sweet potato mixture into the eggs so that the mixture is completely covered.
  • Bake for 25 to 30 minutes until egg is golden brown and cooked thoroughly. The center of the frittata will no longer jiggle when fully cooked. Remove the skillet from the oven and place it on a rack to cool. Slice the frittata with a knife, garnish with parsley, and serve.

3 tablespoons canola oil, divided
2 teaspoons salt
1/2 teaspoon ground black pepper
1 russet potato, thinly sliced
1/2 medium yellow onion, diced
2 teaspoons chopped garlic
1 (10-ounce) box frozen chopped spinach, thawed and water squeezed out
4 eggs
1 cup milk
1/2 cup shredded mozzarella cheese
Nonstick cooking spray

Steps:

  • Preheat oven to 450 degrees F. Put a baking sheet into the oven to preheat.
  • In a large bowl combine 1 tablespoon of the canola oil with 1 teaspoon of salt and 1/4 teaspoon pepper. Add the sliced potatoes to the bowl and toss to coat. Remove the baking sheet from the oven, and add the potato slices, making sure they are all in a single layer. Transfer to the oven and bake for 8 minutes.
  • In a skillet, heat the remaining 2 tablespoons of the oil over medium heat. Add the onion and saute for 2 minutes. Stir in the garlic and spinach and saute for another 2 minutes.
  • In a large bowl whisk together the eggs, milk and remaining salt and pepper. Mix in the cheese and the onion and spinach mixture and set aside.
  • Spray an oven-proof skillet with nonstick cooking spray. Turn the oven down to 350 degrees F. Remove the potatoes from the oven and add them to the skillet. Pour in the egg mixture and transfer the skillet to the oven. Bake until the eggs have set, about 30 to 35 minutes.
  • Remove from oven and let cool for 5 minutes. Serve warm or at room temperature, directly from the skillet.
