HAM HASH WITH SWEET POTATOES & THYME



Ham Hash With Sweet Potatoes & Thyme image

If you have a pound of ham plus potatoes and a few seasonings, you can whip up this brunch classic!

2 tablespoons vegetable or olive oil
1 large onion, cut into 1/2-inch dice
1 pound ham cut into 1/2-inch dice
1 pound potatoes, cut into 1/2-inch dice
½ pound sweet potatoes, cut into 1/2-inch dice
2 tablespoons vegetable or olive oil
2 tablespoons ketchup
1 tablespoon Dijon mustard
½ teaspoon dried thyme leaves
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper

Steps:

  • Heat 2 Tbs. oil over low heat in a 12-inch non-stick skillet (so potatoes don't stick). While skillet heats, prepare onion and ham as directed above. A few minutes before cooking, increase heat to medium-high. When oil starts to send up wisps of smoke, add onion and ham; cook, stirring often, until golden brown, 7 to 8 minutes. Meanwhile, dice potatoes and toss with remaining oil. Transfer ham mixture to a bowl and reserve.
  • Add potatoes to empty skillet; cook, stirring only occasionally so they form a golden-brown crust, about 10 minutes. As potatoes cook, mix ketchup, mustard, dried thyme, fresh parsley and 2 Tbs. of water. (Recipe can be prepared to this point up to 2 hours ahead. Spread hot potatoes on a large lipped cookie sheet; cover when cool. Return skillet to medium-high; add potatoes and re-crisp.)
  • Return reserved ham mixture to skillet; stir in ketchup mixture, then season with salt and pepper. Cook, stirring frequently, until hash has nicely browned, about 5 minutes longer.

3/4 pound cooked lean ham, cut into 1/4-inch dice
1 pound sweet potatoes, cooked, peeled and cut into 1/2-inch dice
1 small onion, peeled and cut in small dice
1/2 medium green bell pepper, stemmed, seeded, deribbed and cut in small dice
1/2 cup heavy cream
2 large eggs
1 tablespoon chopped fresh sage or 1 teaspoon dried sage
Freshly ground black pepper to taste
3 tablespoons unsalted butter

Steps:

  • In a large bowl combine ham, potatoes, onion and green pepper. In a small bowl, whisk together cream, eggs, sage and pepper and add to the ham mixture.
  • Preheat broiler. In a medium-sized skillet, melt 1 1/2 tablespoons of the butter over high heat. When almost brown, add the hash, reduce the heat to medium and cook for 4 minutes, gently shaking the pan occasionally to loosen the hash at the bottom.
  • To brown the top, invert hash into an overproof dish and place under broiler for 3 to 5 minutes.

2 cups cubed peeled sweet potatoes
2 tablespoons butter
1 tablespoon olive oil
1 medium onion, chopped
1 small sweet red pepper, chopped
3 green onions, chopped
1 red chili pepper, seeded and finely chopped
3 garlic cloves, minced
2 cups cubed fully cooked ham
1/2 teaspoon pepper
1/4 teaspoon salt
4 eggs
1/4 cup shredded white cheddar cheese

Steps:

  • In a large skillet, saute sweet potatoes in butter and oil until crisp-tender. Add the onion, red pepper, green onions and chili pepper. Saute 4-5 minutes longer or until tender. Add garlic; cook 1 minute longer. Stir in the ham, pepper and salt., With the back of a spoon, make four wells in the potato mixture; add an egg to each well. Sprinkle with cheese. Cover and cook for 4-5 minutes or until egg whites are completely set.

1 lb cooked ham, cut into 1/2-inch cubes
1 1/2 cups diced cooked sweet potatoes (slightly firm in texture)
2 medium onions (minced and sauteed in 2 tablespoons butter for 2 minutes)
1/2 large green bell pepper, finely chopped
1/2 teaspoon ground sage
salt
fresh ground black pepper
3/4 cup heavy cream
4 tablespoons butter
4 large eggs
minced fresh parsley leaves

Steps:

  • In a big bowl, combine the ham, sweet potatoes, onions, bell pepper, sage, salt, pepper, and cream; stir to blend.
  • With your hands, form into a large cake.
  • In a large skillet, melt half the butter over med-high heat; add the ham cake, and press down evenly with a spatula to form a compact oval cake.
  • Decrease heat to medium and cook the hash about 5 minutes or until the underside is browned and crusty.
  • Loosen the hash with the spatula and invert onto a plate.
  • Add the remaining butter to the skillet and increase the heat slightly; slide the other side of the hash into the skillet, decrease heat to medium, and cook about 5 minutes or until the other side is browned and crusty.
  • Transfer hash to a heated platter and keep warm.
  • Break the eggs gently into 1 or 2 saucepans of boiling water, poach for 2 minutes, and transfer with a slotted spoon to a clean cloth to drain.
  • Top hash with the poached eggs and sprinkle with minced parsley.

5 cups chicken stock
3 ½ cups peeled and diced sweet potatoes
¾ cup diced cooked ham
⅓ cup diced celery
⅓ cup finely chopped onion
½ cup chopped green bell pepper
¼ cup chopped carrot
¼ cup corn
1 tablespoon chopped garlic
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1 teaspoon ground black pepper, or to taste
½ teaspoon salt
5 tablespoons butter
6 tablespoons all-purpose flour
2 cups milk
¾ cup shredded Cheddar cheese

Steps:

  • Combine chicken stock, sweet potatoes, ham, celery, and onion in a stockpot; bring to a boil. Reduce heat to medium and cook until sweet potatoes are tender, 10 to 15 minutes. Stir green bell pepper, carrot, corn, garlic, basil, parsley flakes, black pepper, and salt into soup and simmer until vegetables are softened, 5 to 10 minutes.
  • Melt butter in a saucepan over medium-low heat; whisk flour into butter using a fork. Cook and stir mixture until thickened, about 1 minute. Slowly stir milk into butter-flour mixture until completely smooth; continue cooking and stirring over medium-low heat until thickened, 4 to 5 more minutes. Stir Cheddar cheese into milk mixture until melted and smooth.
  • Stir milk-Cheddar cheese mixture into soup; cook until thickened and heated through, about 5 minutes.
