SWEET POTATO-CRANBERRY CAKE
Chocolate and sweet potato batters are swirled together to make this moist, tender spice cake from Patricia Polley of Columbus, Ohio. Wrap and store the cooled cake overnight for easier slicing. (It's a great alternative to coffee cake for brunches.)

- Grease and lightly flour a 10-inch fluted tube pan; set aside. In a large bowl, combine flour, cinnamon, baking powder, baking soda, ginger, salt, cloves and nutmeg. Set aside.
- In a very large mixing bowl, beat sweet potatoes and oil with an electric mixer on medium speed until combined. Beat in eggs and vanilla until well combined. Beat in sugar. Add flour mixture, beating until combined. Fold in walnuts and cranberries.
- Transfer one-third (about 2-1/2 cups) of the batter to a large bowl; stir in melted chocolate. Spoon half of the remaining plain batter into the prepared tube pan. Spoon chocolate batter over batter in pan. Spoon remaining plain batter over chocolate batter. Gently draw a table knife or thin metal spatula through the batters to marble them slightly.
- Bake in a 350° oven for 55 to 65 minutes or until a wooden skewer inserted in center of cake comes out clean. Cool cake in pan on a wire rack for 15 minutes; invert cake onto a wire rack. Cool completely.
- If you like, sift powdered sugar over cake just before serving.

SWEET POTATO CRANBERRY BAKE
My father's mother made this every year for our Thanksgiving dinner. It is not Thanksgiving to me without this dish. I do not like the tartness of most cranberry dishes, and sweet potatoes can be bland by themselves. This dish combines both to make a great all-in-one dish. When I take this dish to another person's home, I bake the first time and add the yams, cover, and then wait to heat until I am at their house.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine cranberries, orange slices, sugar, pecans, orange juice, cinnamon, nutmeg, and mace in a 2-quart baking dish.
- Bake in preheated oven until cranberries soften, about 30 minutes. Stir yams into cranberry mixture and continue baking until heated through, about 15 minutes more.

- Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-30 minutes. Drain. When cool enough to handle, peel potatoes and cut into 1/4-in. slices. , Place half in a greased 2-1/2-qt. baking dish. Top with half of the cranberries, brown sugar and butter. Repeat layers. Pour orange juice over top. Cover and bake at 350° for 30 minutes. , In a small bowl, combine the walnuts, brown sugar and cinnamon; cut in butter. Sprinkle over sweet potato mixture. Bake, uncovered, until topping is golden brown, about 10 minutes longer.

CRANBERRY PECAN SWEET POTATO BAKE RECIPE
One of my favorite dishes to make is sweet potatoes. Everyone loves them, and they all love them even more now, because of this easy and delicious Cranberry Pecan Sweet Potato Bake.

- Preheat oven to 400 degrees F. Spray a 9 x 13 inch pan, with nonstick cooking spray.
- Peel all the potatoes, with a potato peeler, then slice them into thin rounds. These should be less than 1/4 inch wide.
- In a small bowl, combine the melted butter, brown sugar, honey, and olive oil. Mix until fully incorporated.
- Lay out your potato slices on the bottom of the pan. Make sure you only do one layer of the sweet potatoes.
- For the second layer of the sweet potatoes, add your Craisins and your chopped pecans. I used about 1/2 cup of Craisins and 1/3 cup of pecans for the first layer.
- Drizzle about 3 Tablespoons of the brown sugar liquid over the first layer, of the bake.
- Repeat this process until there are no more sweet potatoes left. If you have extra Craisins and pecans left over, place them on top.
- Pour the remaining brown sugar drizzle, on top.
- Spray the top layer, with a little extra non-stick cooking spray.
- Place in oven and allow it to cook for about 35 - 40 minutes.
- Remove from oven and enjoy warm.

SWEET POTATO AND CRANBERRY BAKE
Quick to make ! This recipe was given to me from an old friend that I knew when I was little. These old recipes are tried and true. Hey it has cranberries in it as well! Now what could be more perfect than that? I also have another version of this recipe posted a little different from this one with orange juice in it as well.

- 1. Preheat oven 350 degrees Place sweet potatoes in buttered 11x7x2 baking pan. Could use fresh cut up that you have par boiled.
- 2. Spread with cranberries and pecans. Can use fresh cranberries as well. Spread marmalade on top. Cover until heated through ~ 25 minutes Serves 4-6 servings
- 3. Can also put a brown sugar and oatmeal with melted butter topping on.
SWEET POTATO CAKE
Here, I've created my version of sweet potato pie, but it's not as heavy and not as sweet. The cranberry foam gives a nice added pop of acidity.

- Put the simple syrup and water in a saucepan and bring to a boil. Add the cranberries and bring back to a boil. Turn off the heat and leave the cranberries to plump for 30 minutes. Drain well.
- Heat the oven to 425°F or 400°F on convection.
- Prick the sweet potatoes in several places with the tip of a paring knife. Place on a piece of heavy-duty aluminum foil and bake until the potatoes are very tender and the juices that have seeped out have caramelized, about 1 hour. When the potatoes are cool enough to handle, peel and put through a food mill to make a puree. Put the puree in a saucepan and cook, stirring often, until the puree is very dry. Measure out 1 1/2 cups.
- Reduce the oven temperature to 375°F (350°F if you're using convection). Spray fourteen to fifteen 2 x 2-inch ring molds with cooking spray and coat the insides with sugar. Set them on a baking sheet lined with a Silpat or parchment.
- Whisk the flour, baking powder, baking soda, and a pinch of salt together.
- Put the heavy cream, egg yolks, and melted butter in a mixing bowl. Whisk until very smooth but not frothy. Whisk in the warm sweet potato puree. Whisk in the dry ingredients, beating just until smooth.
- Put the egg whites in the bowl of a standing mixer fitted with the whisk. Turn it on to low, and beat the whites gently for 2 minutes, to start establishing a structure. The whites will look frothy but still a bit wet. Turn the speed up to medium and add 3 tablespoons of the granulated sugar. Continue to beat at medium speed until the whites have body and are just shy of having soft peaks. Add 3 more tablespoons of the sugar and continue beating until the whites have formed firm peaks. Add the remaining 2 tablespoons sugar and beat until the whites are glossy and smooth and almost stiff.
- Fold one-quarter of the whites into the batter to lighten it. Fold in the remaining whites, gently but thoroughly.
- Fill a pastry bag with the batter and pipe into the molds, filling them one-quarter of the way up. Make a layer of the cranberry filling, then pipe in more batter to fill the rings two-thirds full. Sprinkle the tops with turbinado sugar. Bake until a knife comes out clean, about 20 minutes, rotating the pan halfway through baking.
- Let cool on a rack for a minute or so, then remove the rings. Let cool completely.
- Set up an ice bath in a large bowl.
- Put the cranberries and simple syrup in a saucepan. Bring to a boil over medium-high heat, then reduce the heat and simmer until the cranberries pop and have broken down a bit.
- Scrape into a blender and make a smooth puree. Strain through a fine strainer into a medium bowl (discard the solids) and set into the ice bath, stirring often to chill completely.
- Sprinkle the Versa-Whip and xanthan gum over the surface of the cranberry puree and whisk in slowly and thoroughly. Whisk until very light and airy, the consistency of shaving cream. Refrigerate, covered with plastic wrap, until you're ready to serve or for up to 5 hours.
- Pit and chop the dates. Put them in a small saucepan with the water and bring to a boil over medium-high heat. Turn off the heat and let the dates sit for 10 minutes.
- Put the dates and liquid in a blender and make a smooth puree. Strain through a fine strainer (discard the solids).
- Smear a layer of the date puree across half a dessert plate. Set a sweet potato cake on the puree.
- Whip the cranberry foam with a whisk to restore its consistency (it falls sometimes) and put a scoop of it next to the cake. Garnish with a tuile. Repeat for each serving.
- Here's an alternative to the cranberry foam. Make the cranberry puree and mix it with an equal amount of heavy cream. Pour it into a soda siphon and charge it with a cream whipper charger (N2O). Give it a good shake and try a squirt; if it's not carbonated enough for your liking, use a second charger. Make a variationof the Crispy Almond Phyllo (page 211) to stand in for the tuile; replace the almond flour with whole flax seeds.
