This recipe will fool you into thinking you're eating a cream-based soup. It's spicy, different, and really pretty. It's extremely versatile. Tastes best when it's made at least a day in advance.

2 cubes chicken bouillon, crumbled
2 cups hot water
1 tablespoon unsalted butter
1 small yellow onion, minced
3 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
2 chayote squashes, peeled and cut into 1/2-inch pieces
2 tablespoons chopped fresh cilantro
salt and ground black pepper to taste
1 tablespoon chopped fresh cilantro

Steps:

  • Dissolve the bouillon in the hot water.
  • Melt the butter in a large saucepan over medium heat. Cook and stir the onion, garlic, and red pepper in the butter until the onion is soft. Add the squash, 2 tablespoons cilantro, salt, and pepper and stir continually for 5 minutes. Stir in the bouillon mixture and 1 tablespoon cilantro; cover. Simmer about 20 minutes.
  • Pour the mixture into a blender and puree until smooth. Pour into bowls and garnish with a sprig of cilantro to serve.

My mother loves chayotes, but I never have. I had to come up with a recipe that was a good compromise, but accounted for our food allergies. This soup is a big hit with family and friends, and it is really VERY simple. We use Massel "chicken" bouillon for the stock, as it contains no animal products, making this dish vegetarian. Chayotes are also known as merletons.

Number Of Ingredients 7

1 tablespoon butter
1 yellow onion, diced
1/4 teaspoon ground pepper
5 cups chicken stock or 5 cups vegetarian chicken stock
2 bay leaves
1 large sweet potato
2 chayotes, peeled, seeded and diced

Steps:

  • Melt the butter in a medium stock pot or dutch oven.
  • At medium heat, add onion and pepper and cook, stirring occasionally, until soft, about 5 minutes.
  • Add the stock, bay leaves, and sweet potato and simmer until the sweet potato slices are soft, about 20 minutes.
  • When the sweet potato slices are soft, remove the bay leaves.
  • Add the chayotes and bring to a boil.
  • Reduce heat to medium and simmer until chayote is soft, about 15 minutes.
  • Remove from heat and let cool slightly, then puree the soup with a food processor, blender or wand blender.

  • In a skillet, add all ingredients and cook over moderate heat occasionally turning to facilitate cooking. When the chayote starts to release its juice, lower the heat and continue cooking for about 5-7 minutes until the veggies begin to soften. Cover the pan and continue cooking occasionally turning for about 10 minutes or until everything is cooked and the chayote is still crunchy.
  • Remove the pan from the heat and transfer content to a serving plate. Serve with your favorite meat, poultry or seafood dish.
