CORN CAKES WITH POACHED EGGS
These easy corn cakes are super tender thanks to the creamed corn in the batter. Top them with poached eggs and fresh salsa, and you get one of my favorite breakfasts. -Jamie Jones, Madison, Georgia

- In a small bowl, combine all salsa ingredients; let stand at room temperature while preparing corn cakes., In a large bowl, mix corn, muffin mix and water. Lightly grease a griddle; heat over medium heat. Pour batter by 1/3 cupfuls onto griddle. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown., Meanwhile, place 2-3 in. of water in a large saucepan or skillet with high sides; add vinegar. Bring to a boil; adjust heat to maintain a gentle simmer. Break cold eggs, one at a time, into a small bowl; holding bowl close to surface of water, slip egg into water., Cook, uncovered, until whites are completely set and yolks begin to thicken but are not hard, 3-5 minutes. Using a slotted spoon, lift eggs out of water. Serve with corn cakes and salsa.

SWEET CORN POACHED IN SUMMER TOMATO SAUCE
Steps:
- I shucked the corn and removed all the "silk," rinsed the ears, and dropped four of them in the pot. I covered the saucepan so it quickly returned to a gentle boil, and cooked the ears for about 8 minutes, until the kernels were tender.
- Dripping with sauce, the corn looked beautiful and tasted great-and no one needed butter. In addition, the sauce in the pot gained extra sweetness.
- Try this whenever you make this summer tomato sauce. It's easy to cook a half-dozen ears of corn when the large batch of tomatoes is cooking for the first time. Or you can reheat a quart or more of finished sauce and poach a couple of ears in it at a time.

- Line a strainer with a coffee filter or cheesecloth and set it over a bowl. Place the ricotta in the strainer and let sit for 15-30 minutes until most of the moisture has been drained. If you find your ricotta still has a high amount of liquid after 30 minutes, wrap it in the cheesecloth (or top with another coffee filter) and press down on the ricotta to help extract more liquid.
- Place the flour in a bowl along with the strained ricotta, Parmesan, egg yolk, and salt. Stir to combine and place in the refrigerator for 15 minutes. The mixture should be tacky but not overly wet.
- Bring a pot of salted water to a boil and prepare a floured baking sheet. Divide the chilled gnocchi dough into 6 equal pieces. Working with one piece at a time on a well-floured surface, roll dough into an even 1/2”-thick rope. With a sharp knife or bench scraper, cut the rope into 1” pieces.
- Place cut gnocchi on prepared tray, and repeat the process with the remaining dough. If desired, use a gnocchi board or fork tines to roll ridges into each piece, creating the classic gnocchi look.

- First you'll want to pull back the corn husks, but leave the attached to the cob. When they hit the grill, it lends an additional smokey layer to the finished product.
- Fill a large Dutch oven with your Stella Artois® beer of choice - about two-thirds of the way up the pot. Bring it to a boil, then insert the corn, keeping the husks out of the pot. You'll want to cook these until they are just tender, about 6-8 minutes.
