SWEET PLANTAINS
Recipe courtesy Tyler Florence. This is a lovely dessert or sweet accompaniment to Arroz Con Pollo or another savory latin dish! I love to eat it with Lechon Asado and Black beans and rice; I think it offsets the garlic well.

Steps:
- To peel the plantains, cut off ends and discard. With a paring knife, make 3 shallow slits lengthwise along the seams of the skin and peel away. Split the plantains lengthwise.
- Heat 4 tablespoons butter in a large skillet and place over medium low heat (plantains have a high sugar content and will burn if the heat is too high.)
- Fry the plantains in a single layer, until golden on the bottom then turn over with a spatula.
- Add the cinnamon, vanilla, and sugar and let cook a few more seconds, just to begin caramelizing the sugar.
- Just before serving, melt remaining tablespoon of butter to finish the sauce. Serve immediately.

- Combine 3 chopped ripe plantains in a saucepan with 2 cinnamon sticks, 1/4 cup brown sugar, 4 tablespoons butter and 1 teaspon kosher salt. Cover with water and simmer until tender, 15 to 20 minutes. Drain, reserving the liquid. Mash the plantains. Brown 4 tablespoons butter in a skillet, 6 to 10 minutes. Mix into the plantains; add enough of the reserved liquid until creamy. Season with salt, pepper and ground cinnamon.
MASHED SWEET POTATOES AND PLANTAINS
The mashed sweet potatoes and plantains are my favorite. They are sweetened with a little brown sugar, but the sweetness of the plantains comes out by pan frying it instead of boiling it.

- Peel and dice the potatoes into 1 inch cubes. Place into a pot of cold water (the water should completely cover potatoes) and bring to a boil. Boil until potatoes are fork tender. Strain.
- While the potatoes are cooking, slice the plantains into 1 inch thick slices. Place some butter in a pan and pan fry the plantains until golden brown.
- Mash the potatoes and plantains together, then add milk, 2 tbsp butter, salt, and brown sugar.

- Place plantains in a large pot and cover with water and salt. Bring to a boil; cook until plantains can be easily pierced with a fork, 10 to 15 minutes. Drain plantains and cut lengthwise to remove veins; cut into smaller pieces.
- Place plantains, butter, milk, nutmeg, and white pepper in a food processor and pulse until creamy. Sprinkle cheese on top.

- Fill a small pot with water and a pinch of salt; bring to a boil. Add plantain and cook until soft, 3 to 5 minutes. Drain and immediately transfer to a ricer set over the bowl of an electric mixer and rice. Transfer bowl to mixer fitted with the paddle attachment and add butter; beat in butter. Slowly stir in cream. Season with salt and serve immediately.
SWEET PLANTAIN MASH
Steps:
- 1. Cut plantains in half cross-wise, then each in half lengthwise. Place in a saucepan with cinnamon sticks, sugar, half the butter, and water to cover. Bring to a simmer; cook until plantains are soft, about 20 minutes. 2. Remove plantains from saucepan, but do not discard the cooking liquid. Puree plantains through a mill or potato ricer into a large bowl. Do not use a food processor or they become gluey. 3. Stir in remaining butter and 1/2 cup or more of the cooking liquid, to make a soft and smooth puree. 4. Add rum, stir and season with salt.

- Cut the tips off the plantains and place in a large pot. Cover with cold water and turn heat to medium-high. Bring to a boil and then turn down to simmer until they are cooked. Depending on how ripened the plantains are, they will take between 10 to 15 minutes. They have to be soft to the touch and the skin will start to split into some of their sides.
- Remove from pot, drain excess water and let cool until you are able to handle them. Remove their peels.
- Place plantains in a frying pan and, with the help of a bean or potato masher, mash to form a puree. You can also use the bottom of a heavy glass to perform this step, as it is shown in the picture above.
- Now, turn the heat to medium-high and add the butter. Stir well, allowing it to melt, then stir in the cream and season with salt. Usually, the texture is more like a paste than a soft puree, but you can add more cream or butter if that is your choice. Once everything has been well mixed and warmed, it is ready to be served.
