Pickled Beets (For Canning) image

A wonderful combination of sweet and sour, you won't be sorry if you try this recipe! This recipe can also be made using about 15-18 larger beets.

35 -40 small beets, unpeeled
2 cups sugar
2 cups water
2 cups white vinegar
1 teaspoon ground cloves
1 teaspoon allspice
1 tablespoon cinnamon
1 teaspoon whole cloves

Steps:

  • In a large pot cook the unpeeled beets until fork-tender (do not overcook) cool and then remove the skins.
  • Slice into about 1/4-inch thick or cut into cubes.
  • Pack snuggly into the canning jars (be careful not to bruise).
  • In a large saucepan combine the sugar, water, vinegar, ground cloves, allspice, cinnamon and whole cloves; bring to a boil and simmer for about 10 minutes (no sugar granules should remain).
  • Quickly pour over the beets in the jars, leaving 3/4-inch headspace (the liquid should go no further than the shoulder of the jar!).
  • Process in a boiling water bath for 12 minutes.
  • Cool on a rack.

A classic canned pickled beets recipe, just like my Grandma used to make! This makes 4 pint ( 500ml) jars!

4-5 pounds small beets 40 - 48
2 teaspoons pickling salt
1 1/2 cups white sugar
3 cups white vinegar
2 tablespoons mixed pickling spice tied in cheesecloth bag
1 cup water

Steps:

  • Wash the beets and remove most of the tops, leaving about 1/2 inch of beet top remaining.In a large boiling pot of water, cook the beets until barely tender.Remove from the stove.
  • Submerge the beets in a large bowl of ice water, I find this helps the skins come off with more ease.
  • Cut off the tops and the roots completely, then remove the skin.Peel and slice beets into preferred size, I like larger chunks and not slices.
  • Combine the vinegar, sugar, water, salt and pickling spice in a nonreactive pot and bring mixture to a boil; reduce the heat and simmer 10 minutes.
  • Add the beets to the pickling liquid and return to a boil.Remove the spice bag.Carefully ladle the beets and pickling liquid into hot sterilized pint jars, leaving 1/2 inch headspace.
  • Remove any air bubbles with a non-metal utensil.Add additional pickling liquid, if needed, to keep the proper headspace.
  • Wipe the jar rims thoroughly with a clean damp cloth, failure to do this can result in the jars not sealing properly!
  • Seal the jars and process for 35 minutes in a boiling water bath.
  • For altitudes higher than 3000 ft (914 m), add 5 minutes to processing time.

Canning Recipe for Old Fashioned Pickled Beets {No Funky Spices!} image

Old fashioned beets, just like Grandma used to make.

Number Of Ingredients 5

10 pounds fresh beets
4 cups cups white distilled vinegar
2 cups sugar
2 cups reserved beet water
1 tablespoon pickling salt

Steps:

  • Bring a boiling-water canner, 3/4 full with water, to simmer. Wash jars {I used wide mouth pint jars for this recipe} and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Wash beets, trim the tops and cook {about 15 -25 minutes depending on size} in a large stock pot filled 3/4 full with water. Once the beets are fork tender, drain, reserving 2 cups of the beet water and set aside the beets a few minutes until they have cooled down enough to handle.
  • While the beets are cooling, combine the white distilled vinegar, sugar, beet water and pickling salt in a saucepan and bring to a boil, stirring occasionally, and then reduce to a simmer.
  • Peel beets by applying pressure against the skin of the beet with your fingers. Once you have rubbed the skin off the beets, trim the tops of the beet and any remaining root. Quarter or slice beets and pack them into sterilized pint jars.
  • Ladle hot liquid mixture over beets leaving about 1/4 inch head space. Remove any air bubbles, add two piece caps and place in canning rack. Lower rack into the canner making sure the jars are covered with at least 2 inches of boiling water and process pints for 30 minutes in a boiling water canner.
  • Remove jars and place upright on towel to cool completely. After the jars have cooled, check the seals by pressing middles of lids with finger. If lids spring back, lids are not sealed and refrigeration is necessary. Yields 7 pints.

Found this recipe in an old recipe box I bought at a rummage sale years ago. It's easy, and everyone who tries them loves them. I use large mouth quart or pint jars. Makes 6 quarts of beets.

5 ⅓ cups distilled white vinegar
4 cups white sugar
4 cups water
2 tablespoons ground cinnamon
1 ½ tablespoons salt
1 tablespoon ground cloves
12 pounds beets, peeled and sliced
6 1-quart canning jars with lids and rings

Steps:

  • In a large pot, mix the white vinegar, sugar, water, cinnamon, salt, and cloves together; bring the mixture to a boil, and stir until the sugar has dissolved. Stir in the beets, and simmer until tender, 15 to 20 minutes.
  • Sterilize the jars, lids, and rings in boiling water for at least 5 minutes. Using a slotted spoon, pack the sliced beets into the hot, sterilized jars, and pour in the beet liquid to fill the jars to within 1/4 inch of the top. Run a sterilized knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 30 minutes. Add more time if you are at high altitude.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

For the Beets:
16 baby beets , unpeeled, tops trimmed
For the Marinade:
2 medium red onions, julienned
2 tablespoons sugar
1/3 cup white vinegar
2 teaspoons salt
2/3 cup water

Steps:

  • Gather the ingredients.
  • Bring a large pot of salted water to a rolling boil.
  • Add beets, reduce heat, and simmer until tender, 12 to 15 minutes. Drain well.
  • When cool enough to handle, slip off the skin.
  • Place beets in a nonreactive bowl and set aside.
  • Gather the ingredients.
  • In a small saucepan, combine onions, sugar, vinegar, salt, and water. Bring this mixture to a boil over high heat.
  • Simmer 5 minutes and make sure that the sugar and salt are fully dissolved into the water.
  • Pour the hot marinade over beets and then allow the beets to cool to room temperature.
  • Cover the beets well and refrigerate for several hours, or ideally overnight, before serving.
  • If you prefer, divide the beet and onion mixture into individual jars for easy storage.
  • Keep refrigerated for up to two weeks.
  • Enjoy.

1 (15 ounce) can sliced beets, drained with liquid reserved
½ cup apple cider vinegar
½ cup white sugar
6 whole cloves
1 pinch ground cinnamon
1 pinch salt

Steps:

  • In a saucepan, combine the liquid from the beets, vinegar, sugar, cloves, cinnamon and salt. Stir to dissolve the sugar and bring to a boil. Simmer over medium heat for 5 minutes. Add the beets and simmer for 5 more minutes. Use tongs to transfer the beets to a jar. Pour the liquid over them to cover. Cover and cool to room temperature. Refrigerate until serving.

A tasty pickled beet recipe with just a touch of sugar. Our Grandma Ann's recipe that's been updated with hot water bath canning.

Number Of Ingredients 6

4 lbs of beets (12-16 medium beets (3 inch diameter))
1 cup water
2 cups vinegar
1/2 cup granulated sugar
2 tsp pickling or kosher salt
2 Tbsp pickling spice

Steps:

  • Trim off beet tops leaving a bit of the greens and root tip to reduce bleeding. Wash and scrub well. Place in large pot, cover with water, bring to boil then simmer until tender, about 30 minutes. Remove from water and cool beets so you can trim and remove peel. Cut into 1/4" slices.
  • While beets are cooking, fill large pot or canner with water so that jars will be covered by 1" of water.
  • Check jars for cracks, wash with warm soapy water, rinse well and place in canner.
  • Heat jars in canner (no need to sterilize as final processing will be longer than 10 minutes). Keep hot until needed.
  • Heat lids in small pot of water. Do not boil, just keep hot until needed.
  • In large pot, combine water, vinegar, sugar, salt and pickling spice. Bring to boil and simmer five minutes until salt and sugar are dissolved.
  • Add beets to brine to heat through.
  • Tightly pack beet slices from brine into hot jars to within 3/4 inch of rim.
  • Add hot vinegar brine to cover beets. Use a plastic utensil to remove any air bubbles and add more brine, leaving 1/2-inch headspace.
  • Wipe rim with clean cloth and seal with hot sealing lid. Screw band on top and tighten finger tight.
  • Process in hot water bath for 30 minutes for both pint (500 mL) or quart (1 L) jars.
  • Makes 4 pint (500 mL) jars

2 cups organic sugar
2 sticks cinnamon
1 Tablespoon Pickling spice (or pickling salt)
1 1/2 teaspoon salt
3 1/2 Cups vinegar
1 1/2 Cups water from the boiled beets

Steps:

  • After beets have cooked, peel, cut into chunks, and set aside.
  • Combine all ingredients excepts beets in a large sauce pan. Bring mixture to a boil; reduce heat. Simmer 15 minutes. Remove cinnamon sticks.
  • Pack beets into hot jars, leaving 1/4-inch head space.Ladle hot liquid over beets leaving 1/4 inch head space. Remove air bubbles. Adjust two-piece caps. Process jars 30 minutes in boiling water canner.

1 bunch fresh beet (any size will do)
1 cup sugar
1 cup water
1 cup vinegar
1 tablespoon allspice, heaping

Steps:

  • Cut the leaves off the beet about 3" off the beet to prevent the beet from bleeding out. (Reserve them for cooked greens).
  • Separate into sizes so little ones don't get over cooked and big ones are not under cooked.
  • I like 3 kettles they boil faster that way.
  • No salt in the water.
  • Boil beets till tender, can be checked using a fork (like a potato).
  • Drain and discard cooking liquid; let beets cool so they can be easily peeled.
  • Cut beets into 1/2" pieces, leaving very small beets whole.
  • Combine brine ingredients in a kettle.
  • Bring brine to a boil.
  • Simmer 10 minutes.
  • You may need to make more brine for this amount of beets.
  • Wash pint jars and covers.
  • Fill jars within 1/2" from the top with beets.
  • Fill jar with boiling brine to 1/2" from top.
  • Place lids, adjust rings fingertip-tight and process in a boiling water bath for 30 minutes at up to 1000 feet in elevation.
  • Cool processed jars undisturbed for 24 hours on a cloth-protected counter.
  • Any leftover brine can be stored in the refrigerator till the next time you can.

Steps:

  • Trim leaves 2 inche from beet root.
  • Place trimmed beets in large saucepan. Cover with water. Add 1-2 T⅞ablespoons of white vinegar.
  • Boil until tender, approximately 25 minutes to an hour depending on size of beet.
  • Cool in cold water until easy to handle.
  • Remove skins using gloved hands or a vegetable peeler, and dice into bite-sized chunks.
  • Add diced beets to a clean jar or glass bowl.
  • In a saucepan, boil water, sugar and white vinegar, whisk to mix.
  • Pour hot brine over diced beets.
  • Cool, cover and refrigerate for a minimum 18 to 24 hours before eating.
