HOMEMADE SLOPPY JOES
These Homemade Sloppy Joes are quick, easy, and oh-so-good. No canned food of any kind is needed for this recipe! Just ketchup, brown sugar, lots of flavor, and your favorite kitchen helpers. Sloppy Joes are such a fun treat and the absolutely easiest meal to make -- plus, kids love 'em and adults love 'em, so it's a total win all the way around!

- In a large skillet, cook the meat over medium heat until cooked through and no longer pink. If using hamburger, drain off any extra fat.
- Return the pan to medium heat, and add your ketchup, brown sugar, mustard, Worcestershire sauce, onion powder, garlic powder, and a sprinkle of salt and pepper. Stir to incorporate.
- This recipe depends a lot on your taste. If the meat seems dry, add more ketchup. If it isn't sweet enough, add a little more sugar. If it needs more salt, add a little more mustard. (Don't be shy of the mustard, even if you don't like it normally. It adds the acid and salt that this dish needs, and the dish doesn't taste mustardy at all.) If it seems bland, give it another shake of garlic and onion powder. Taste and adjust as needed.
- While the meat is browning, place a baking sheet in the oven, and preheat the sheet and the oven to 400 degrees F. Butter the inside of the top and bottom of the bun. When the meat is almost done and your oven is hot, put the buns, butter side down, on the hot pan. Close the oven and allow the buns to toast until they are golden-brown, 4 to 8 minutes.
- When the buns are golden on buttered side, remove them from the oven. Place the meat mixture and pickles on top of the bun, and grab the napkins.

- Heat the olive oil in a large skillet over medium-high heat. Add the beef and some salt and pepper and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Add the onion, pepper, and chili powder and cook, stirring, until softened, about 5 minutes. Add the tomato paste and cook, stirring, 1 minute. Add the tomato sauce, sugar, vinegar, Worcestershire, soy sauce and 1/2 cup water and bring to a simmer. Simmer, stirring occasionally, until thickened, about 10 minutes.
- Serve the meat on the buns topped with Fruit Drink Pickles.
- Drain the brine from the pickles into a bowl. Add the fruit drink packet and sugar and stir until dissolved. Add the brine back to the jar (discard any that doesn't fit). Refrigerate at least 2 days and up to 1 month.

Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

- Melt butter in a large pot over high heat.
- Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
- Add capsicum and cook for 2 minutes until softened.
- Add beef and cook, breaking it up as you go, until it changes from red to brown.
- Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
- Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
- Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
- Toast rolls. Butter if desired (I don't).
- Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

KOREAN SLOPPY JOES WITH SWEET AND SPICY CUCUMBERS
Steps:
- Put the sliced cucumbers in a colander set over a large bowl. Sprinkle them with the salt and toss to coat. Let the cucumbers sit for 30 minutes to draw out the water from them. After they've sat, squeeze them to remove more water then pat them dry with paper towels or a clean kitchen towel.
- Put the cucumbers in a small bowl along with the gochugang, rice vinegar and sugar. Toss everything to combine thoroughly.
- Cover and chill the pickles for 30 to 60 minutes, or even make them a day or 2 ahead. The longer you keep them the less crunchy they will become.
- In a small bowl stir together the hoisin sauce, gochugang, soy sauce, rice vinegar, sesame oil and lime juice. Set aside.
- Heat the oil in a large skillet over medium-high heat, swirl the oil to coat the bottom of the skillet. When the skillet is hot add in the onion and ground turkey. Use a wooden spoon to break the turkey up into small crumbles.
- When the turkey is nearly cooked through, turn the heat down to medium-low and add the ginger and garlic to the mixture, cook for a minute. Pour the sauce over the turkey and stir everything together until coated. Turn the heat down to low and simmer for several minutes or until everything is warmed through. Taste for seasoning and serve on buns topped with the sweet and spicy cucumbers.
