Categories     Lunch

Time 20m

Number Of Ingredients 11

1 pound lean hamburger or ground elk
1/2 cup ketchup
1/4 to 1/3 cup brown sugar
3 tablespoons yellow mustard
2 tablespoons Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon garlic powder
Salt and pepper, to taste
4 to 6 hamburger buns
Butter, at room temperature
Pickles for serving, optional (but not really optional)

Steps:

  • In a large skillet, cook the meat over medium heat until cooked through and no longer pink. If using hamburger, drain off any extra fat.
  • Return the pan to medium heat, and add your ketchup, brown sugar, mustard, Worcestershire sauce, onion powder, garlic powder, and a sprinkle of salt and pepper. Stir to incorporate.
  • This recipe depends a lot on your taste. If the meat seems dry, add more ketchup. If it isn't sweet enough, add a little more sugar. If it needs more salt, add a little more mustard. (Don't be shy of the mustard, even if you don't like it normally. It adds the acid and salt that this dish needs, and the dish doesn't taste mustardy at all.) If it seems bland, give it another shake of garlic and onion powder. Taste and adjust as needed.
  • While the meat is browning, place a baking sheet in the oven, and preheat the sheet and the oven to 400 degrees F. Butter the inside of the top and bottom of the bun. When the meat is almost done and your oven is hot, put the buns, butter side down, on the hot pan. Close the oven and allow the buns to toast until they are golden-brown, 4 to 8 minutes.
  • When the buns are golden on buttered side, remove them from the oven. Place the meat mixture and pickles on top of the bun, and grab the napkins.

SLOPPY JOES

Sloppy Joes image

Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

Categories     Mains

Time 50m

Number Of Ingredients 16

1 tbsp /15g butter
2 garlic cloves (, minced)
1 onion (, finely chopped)
1 green capsicum/bell pepper (, diced)
500 g/1lb ground beef ((mince) (Note 1))
1 tbsp Dijon mustard (OR 1 tsp dry mustard)
1.5 tbsp brown sugar
1/2 cup ketchup
400 g/14oz crushed tomato (, canned)
2 tsp Worcestershire sauce
1 tbsp tomato paste
1 beef bouillon cube (, crumbled (Note 2))
1/4 tsp black pepper
5 to 6 soft rolls ((Note 3))
Cheese slices ((optional))
Other fixing options - see Note 4

Steps:

  • Melt butter in a large pot over high heat.
  • Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
  • Add capsicum and cook for 2 minutes until softened.
  • Add beef and cook, breaking it up as you go, until it changes from red to brown.
  • Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
  • Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
  • Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
  • Toast rolls. Butter if desired (I don't).
  • Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

KOREAN SLOPPY JOES WITH SWEET AND SPICY CUCUMBERS

Korean Sloppy Joes with Sweet and Spicy Cucumbers image

Provided by Danae

Categories     Burgers, Sandwiches + Wraps

Number Of Ingredients 18

2 teaspoons oil
1 pound lean ground turkey
1/2 cup diced onion
1 tablespoon grated fresh ginger
2 cloves garlic, grated or minced
3 tablespoons gochugang
1 tablespoon low sodium soy sauce or tamari
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/3 cup hoisin sauce, gluten-free if needed
2 tablespoons fresh lime juice
5 buns
1/2 pound cucumbers, Persian or Kirby, sliced 1/4-1/2 inch thick
3/4 teaspoon kosher salt
1 teaspoon gochugang
1 teaspoon sugar
1/2 teaspoon rice vinegar
1/4 teaspoon sesame oil

Steps:

  • Put the sliced cucumbers in a colander set over a large bowl. Sprinkle them with the salt and toss to coat. Let the cucumbers sit for 30 minutes to draw out the water from them. After they've sat, squeeze them to remove more water then pat them dry with paper towels or a clean kitchen towel.
  • Put the cucumbers in a small bowl along with the gochugang, rice vinegar and sugar. Toss everything to combine thoroughly.
  • Cover and chill the pickles for 30 to 60 minutes, or even make them a day or 2 ahead. The longer you keep them the less crunchy they will become.
  • In a small bowl stir together the hoisin sauce, gochugang, soy sauce, rice vinegar, sesame oil and lime juice. Set aside.
  • Heat the oil in a large skillet over medium-high heat, swirl the oil to coat the bottom of the skillet. When the skillet is hot add in the onion and ground turkey. Use a wooden spoon to break the turkey up into small crumbles.
  • When the turkey is nearly cooked through, turn the heat down to medium-low and add the ginger and garlic to the mixture, cook for a minute. Pour the sauce over the turkey and stir everything together until coated. Turn the heat down to low and simmer for several minutes or until everything is warmed through. Taste for seasoning and serve on buns topped with the sweet and spicy cucumbers.

  • To roast the green chiles and red pepper, preheat the oven to 400 degrees F. Rub the peppers with a bit of olive oil and place them on a baking sheet. Roast until the outside skins begin to blister and char, about 30 minutes. Remove the peppers and place them in a resealable plastic bag for 20 minutes to steam. (To shorten this process, you can grill or roast the peppers over your gas stovetop until charred, then steam in the resealable bag.)
  • Once the peppers have “steamed” in the bag, remove the blistered skin. Slice off the tops and remove the seeds (unless you want tons of heat), then dice the peppers.
  • Heat a large skillet over medium-low heat and add the olive oil. Stir in the onion, roasted peppers and garlic. Cook until the onions soften, about 5 to 6 minutes. Increase the heat to medium and add in the turkey and beef with the salt and pepper, using a wooden spoon to break it apart and combine it. Cook until browned. Stir in the tomato paste, paprika and brown sugar. Stir in the tomato puree, Worcestershire and apple cider vinegar. Cover and cook for 15 to 20 minutes, stirring often. Taste and adjust to your preferences – more salt or pepper, more sugar if it’s too tangy, more vinegar if it’s too sweet.
  • To serve. spoon the mixture between buns that are layered with the slaw and bread and butter pickles.

  • MEAT: Heat the butter in a large skillet over medium-high heat. Add the beef and crumble using a wooden spoon. Allow the meat to cook for 3 minutes before adding the minced bell pepper, onions, garlic, and tomato paste and cooking for another 5 minutes.
  • SIMMER: Then, add the remaining ingredients along with ½ teaspoon of salt and ½ cup of water and allow the mixture to start bubbling, then lower the heat to low, cover with a lid and cook for 20 minutes.
  • FINISH: Remove the lid and give the sloppy Joe filling a stir. Then, kick the heat up to medium and continue cooking for 5-7 minutes or until the mixture thickens to your liking. If at any point the mixture dries out too much, just add a small splash of water to thin it back out. Taste and adjust with additional salt as needed (it just depends on how salty your tomato sauce and ketchup are, you may not even need anymore)
  • SERVE: Place a big scoop of the sloppy joe mixture on buttered and toasted buns and serve with potato chips and pickles.
