PEAR AND CHEDDAR BREAKFAST QUESADILLAS
Sweet breakfast quesadillas - who knew? This one uses pear and cheddar, but raisin, apple, and cheddar would be great too!

Steps:
- In a small bowl, whisk together the honey and cream cheese. Spread the mixture evenly on one side of all the tortillas.
- In a non-stick skillet over medium heat, place one of the tortillas, cream cheese side-up. Layer 1/4 of the cheese over the cream cheese. Top with half of the pears and half of the dried cherries or cranberries. Top with another 1/4 of the cheddar cheese. Top with another tortilla, cream cheese side-down. Press down with spatula to seal.
- Once cheese is melted and tortilla is brown, carefully flip. When other tortilla is browned, remove from pan and slice into quarters. Repeat for second quesadilla.

SWEET PEAR AND CHEDDAR QUESADILLAS
Round out a Tex-Mex meal with these dessert quesadillas, made with Bosc pears and cheddar with a fragrant touch of cinnamon.

- Heat oven to 375°F.
- Cook 2 Tbsp. butter and 1 Tbsp. sugar in large saucepan on medium heat 1 to 2 min. or until butter is melted and mixture is well blended, stirring occasionally. Stir in vanilla and 1/2 tsp. cinnamon. Add pears; mix lightly. Cook 5 to 7 min. or until pears are tender, stirring frequently. Remove from heat; set aside. Mix remaining sugar and cinnamon; set aside.
- Spoon pear mixture evenly onto bottom half of each of the tortillas; sprinkle with cheese. Fold tortillas in half. Melt remaining butter. Brush half of the butter evenly onto tops of quesadillas; sprinkle evenly with half of the cinnamon mixture. Gently turn quesadillas over; place on baking sheet sprayed with cooking spray. Brush with remaining butter, then sprinkle with remaining cinnamon mixture.
- Bake 15 min. or until quesadillas are lightly browned and cheese is melted. Serve warm topped with COOL WHIP.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 2-quart casserole dish.
- Toss pears with lemon juice in a bowl. Combine 1/2 cup light brown sugar, cornstarch, cinnamon, and cloves together in a separate bowl. Add sugar mixture to pear mixture; toss to coat. Transfer to the prepared casserole dish. Sprinkle pear mixture with Cheddar cheese.
- Combine flour and 1/2 cup light brown sugar in a food processor; pulse to mix. Cut butter into flour mixture until crumb consistency. Sprinkle topping over Cheddar cheese layer.
- Bake in the preheated oven until top is golden brown, about 45 minutes.

PEAR AND BRIE QUESADILLAS
Best used as an appetizer, this quesadilla is simple to make and wonderfully tasty! As a variation, spread mango or a similar fruit chutney over the bottom tortilla before layering with cheese.

- Place slices of Brie cheese over a tortilla. Layer the cheese with pear slices. Sprinkle with nutmeg and salt as desired. Top with the second tortilla.
- Spray a skillet with cooking spray. Place the quesadilla in the skillet over medium heat, and cook until golden brown and Brie melts, about 3 minutes on each side. Cut into four or eight triangles, and serve immediately.
