SWEET PEA CASSEROLE
A Southern favorite at holiday time. We combine sweet early peas with cream, cheddar and French fried onions rings.

Steps:
- Heat oven to 350° F. In large saucepan, melt butter over medium heat. Add onions and garlic, cook 2 minutes or until onions are tender. Stir in flour, salt, pepper; cook stirring constantly, 1 minute. Slowly stir in milk and cream; cook stirring constantly 4 to 5 minutes or until thickened.
- Stir in cheese until melted and smooth. Add peas; stir gently to combine.Spoon mixture into 8 inch square baking dish. Bake 20 minutes. Top with french fried onions; bake an additional 5 minutes. Serve immediately.

SWEET CORN CASSEROLE
This is always requested over and over again. I love it and I don't really like corn. My best friend made this once and convinced me to try it, now it's a tradition to make for all holidays.

- Preheat oven to 325 degrees F (165 degrees C).
- Stir whole kernel corn, cream-style corn, sugar, egg, and about 3/4 of the melted butter together in a casserole dish. Fold about half the crushed crackers into the corn mixture. Sprinkle remaining crushed crackers over the top of the mixture and drizzle with the remaining butter.
- Bake in preheated oven until beginning to brown, 25 to 30 minutes.

- Mix soup, sour cream and 1/3 cup 4 cheese Mexican blend and salt together.
- Fold in peas.
- Spread into an 8X8 inch baking dish.
- Sprinkle with 3/4 cup cheddar cheese.
- Mix melted butter with cracker crumbs.
- Spread over top of cheese.
- Sprinkle Cayenne pepper over the top if using.

- Preheat oven to 350°. Spray a 13x9-inch baking dish with cooking spray. In a Dutch oven, melt butter over medium heat. Add mushrooms, onion, and garlic; cook, stirring occasionally, for 5 to 6 minutes or until vegetables are tender. Stir in flour and next 4 ingredients; cook, stirring constantly, for 2 minutes. Stir in half-and-half, and cook, stirring constantly, for 6 to 8 minutes or until thickened. Stir in cheeses until melted and smooth; stir in peas. Pour mixture into prepared pan. - Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower and carrots, cover, and steam until tender, 4 to 6 minutes. Drain and set aside.
- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir flour into butter to make a smooth mixture; cook for 1 minute. Stir milk, sugar, salt, and black pepper into the flour mixture; continue cooking and stirring until the sauce thickens, 2 to 3 minutes. Fold cauliflower, carrots, peas, onion, green beans, green bell pepper, and garlic into the sauce to coat. Mix 1 cup Cheddar cheese into the vegetable mixture. - Place the peas and corn in a microwave safe casserole dish. Sprinkle the vegetables with 1/4 cup water.
- Cover the casserole with plastic wrap or the lid, pull back one corner to vent, and microwave the vegetables on high for 6 minutes. Stir the vegetables gently. Then microwave the peas and corn, uncovered, for 2 minutes longer.

- Set up a bowl of ice and water. In a saucepan of boiling salted water, blanch 1 cup of frozen peas for 1 minute. Drain the peas and shock them in the ice water. When the peas have cooled, drain them and pat them dry with paper towels. Transfer to a food processor and puree until smooth, scraping down the sides as needed. Set aside.
