1 loaf thin-sliced white bread
5 tablespoons very soft butter
1 cup homemade mayonnaise
2 cups very thinly sliced large Bermuda or other sweet onions
Salt and pepper to taste

Steps:

  • Butter half the bread slices on one side and spread mayonnaise thinly on one side of remaining slices.
  • Place one layer of onion slices on the slices of bread with mayonnaise; top onions with additional mayonnaise; season with salt and pepper. Top with buttered bread.
  • Cut off crusts and cut each sandwich in half lengthwise. Cover tightly and chill well.

A spicy, flavorful, and moist turkey burger. This is my husband's favorite. It tastes delicious and I make it with extra lean ground turkey breast. The grated onion adds moisture as well as flavor to the turkey.

1 cup light mayonnaise
¼ cup coarse-grain mustard
¼ cup honey
1 tablespoon prepared horseradish
hot pepper sauce (e.g. Tabasco™) to taste
1 teaspoon ground cayenne pepper
1 ¼ pounds ground turkey breast
½ large onion, grated
1 jalapeno pepper, seeded and minced
2 tablespoons barbeque sauce
2 tablespoons Worcestershire sauce
¼ teaspoon liquid smoke flavoring
1 tablespoon steak seasoning
1 teaspoon dry mesquite flavored seasoning mix
1 tablespoon olive oil
½ large onion, sliced
5 hamburger buns, split

Steps:

  • Combine mayonnaise, mustard, honey, horseradish, hot pepper sauce, and cayenne pepper in a bowl. Cover and refrigerate.
  • Mix ground turkey, grated onion, jalapeno, barbeque sauce, Worcestershire sauce, liquid smoke, steak seasoning, and mesquite seasoning in a large bowl. Form into 5 patties.
  • Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
  • Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C), about 6 minutes per side. Serve on buns topped with spicy sweet mayo and caramelized onions.

2 8- to 10-ounce red onions, cut into 1/3-inch-thick rounds
3 1/2 tablespoons red wine vinegar
6 cups trimmed large arugula leaves (about 4 ounces), divided
3/4 cup mayonnaise
8 1/3-inch-thick slices seeded wheat bread (such as La Brea Bakery) or four ciabatta rolls, cut horizontally in half
12 ounces thinly sliced smoked turkey
3/4 cup coarsely crumbled blue cheese (such as Maytag; about 3 ounces)

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add onions and sauté until soft and lightly browned, breaking up onion rings, about 8 minutes. Remove from heat; stir in vinegar and season to taste with salt and pepper.
  • Chop enough arugula to measure 1 cup; place in medium bowl. Mix in mayonnaise. Season with salt and pepper. Spread about 11/2 tablespoons arugula mayonnaise over each cut side of bread. 2 large sweet onions, sliced thinly lengthwise
8 slice turkey, white and dark
4 soft hoagie rolls
4 butter lettuce leaves
chermoula mayonnaise
2 medium tomatoes, sliced thinly

Steps:

  • 1. Heat olive oil in large skillet over medium high heat
  • 2. Add onions and cook for 5 minutes. Turn down heat to medium low.
  • 3. Cook, stirring occasionally, until onions are golden brown, about 45 minutes total. Season to taste with salt and pepper.
  • 4. Season to taste with salt and pepper.
  • 5. Layer turkey on bottoms of rolls. Mound onions over the turkey. Drizzle generously with Chermoula Mayonnaise
  • 6. Add lettuce leaves and tomato slices. Put on sandwich roll top. Serve

1 large Vidalia or other sweet onion (1 to 1 1/4 pounds, at least 4 inches in diameter)
8 very thin (1/4-inch) slices firm white bread, crusts discarded
1/3 cup mayonnaise
1/2 cup finely chopped fresh parsley

Steps:

  • Cut 4 (1/8-inch-thick) slices from widest part of onion, keeping rings intact.
  • Spread each slice of bread with about 1 teaspoon mayonnaise and top 4 slices with 1 onion slice each. Top with remaining bread slices, mayonnaise sides down, then trim onion flush with bread. Quarter sandwiches into small square or triangular sandwiches.
  • Arrange 2 sheets of wax paper on a work surface. Spread remaining 2 1/2 tablespoons mayonnaise in a thin layer on 1 sheet and spread parsley evenly on the other.
  • Dip all edges of 1 sandwich in mayonnaise to coat, then dip in parsley. Transfer to a tray and repeat with remaining sandwiches.

Make this tasty grilled sandwich using deli-sliced maple turkey on black raisin bread or any other bread with raisins. Regular deli-sliced turkey can also be used.

2 slices raisin black bread

  • Place bacon into a skillet over medium heat, and cook until crisp. Remove, and drain on paper towels. Drain bacon grease from skillet. Add maple turkey to the skillet, and cook briefly, just long enough to heat through.
  • Butter both sides of the bread. Layer one slice with two slices of the Swiss cheese, then layer with the maple turkey, and the bacon. Drizzle with honey mustard, and top with remaining two slices of Swiss cheese. Top with remaining bread slice, and cut sandwich in half. Return sandwich halves to the skillet, and cook over medium heat, turning once, until cheese begins to melt, 4 to 5 minutes.
