2 tablespoons apple cider vinegar
1 ½ tablespoons honey
2 tablespoons finely chopped sweet onion
2 teaspoons coarse-grain mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup olive oil
4 hard-cooked eggs, peeled
8 cups mixed greens
1 ½ cups grape tomatoes, halved
4 slices bacon, cooked and chopped

Steps:

  • Dressing: In a small bowl combine apple cider vinegar, honey, onion, mustard, salt and pepper. Slowly whisk in oil. Set aside.
  • Salad: Finely grate or chop 2 eggs; slice remaining 2 eggs. In a large salad bowl, combine greens, tomatoes, bacon and grated eggs. Toss with dressing to coat and garnish with remaining egg slices. Serve immediately.

1 garlic clove, finely chopped
2 tablespoons dijon Mustard
1/4 cup champagne vinegar
2 tablespoons fresh lemon juice
2 tablespoons honey
2 or 3 dashes hot sauce
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra virgin olive oil

Steps:

  • Whisk together the garlic, mustard, vinegar, lemon juice, honey, hot sauce, salt, and pepper in a large bowl. Slowly whisk in the olive oil until the dressing is emulsified. Alternatively, you can combine all the ingredients in a blender or a food processor and puré until smooth.

1/2 large sweet vidalia onion roasted
10 clove garlic
1/4 c fresh parsley chopped
1/4 c sugar
1/4 c dijon mustard
2 c extra virgin olive oil
1/3 c champagne vinegar
1/2 c water
1 tsp each salt and pepper

Steps:

  • 1. Preheat oven to 425 degrees. Place the onion on a baking pan drizzle with a little olive oil. Roast until the onion is nice and browned. Remove from oven and let cool
  • 2. Place the onion in a food processor with the rest of the ingredients. Process until well incorporated

1/4 cup lemon juice
1/4 cup white wine vinegar
1/4 cup basil, chopped
3 tablespoons extra virgin olive oil
1 tablespoon Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
3 garlic cloves
1 large sweet onion, cut into 1/2 inch slices

Steps:

  • In food processor puree everything but the onion. Pour into a bowl and let stand at room temperature for 1 hour so that flavors blend.
  • In mean time grill onion slices.
  • Add onion slices to vinaigrette and serve at room temperature over grilled veggies.

1 large head butter lettuce, leaves torn into bite-size pieces
2 cups baby spinach
1 sweet yellow onion (1/8 finely chopped, remaining thinly sliced)
3 apples, cored and diced
3 large navel oranges
2 tablespoons white wine or champagne vinegar
2 teaspoons Dijon mustard
2 teaspoons honey
1/3 cup canola oil
2 tablespoons toasted sesame seeds
4 rounds pita bread, cut into wedges and toasted

Steps:

  • Put lettuce, spinach, sliced onions and apples into a large salad bowl and toss together; set aside.
  • Remove peel and pith from oranges.
  • Working over a bowl to catch the juices, carefully cut between the membranes to remove the oranges in sections.
  • Reserve juice in bowl and transfer orange sections to bowl with lettuce and spinach.
  • To the bowl with the reserved orange juice add finely chopped onions, vinegar, mustard and honey and whisk together.
  • Whisking constantly, add oil in a steady stream until blended.
  • Add dressing to bowl with lettuce mixture and toss gently to coat.
  • Garnish with sesame seeds and serve immediately, with pita bread on the side.

  • Homemade champagne vinegar can be done by storing leftover champagne in an open jar, at room temperature for a few weeks.
