This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.

1 (8 ounce) package wide egg noodles
2 cups small curd cottage cheese
1 ½ cups sour cream
½ cup white sugar
½ cup raisins
3 large eggs, beaten
½ teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cottage cheese, sour cream, sugar, raisins, eggs, salt, cinnamon, and nutmeg together in a large bowl. Mix in cooked noodles. Pour into the prepared baking dish.
  • Bake, uncovered, in the preheated oven, until golden brown on top, about 40 minutes.

"Sweet Noodle Pudding" recipe that was given to me by a dear friend who is now passed on and deeply missed. For best results, do NOT use non-fat sour cream or non-fat cream cheese in this recipe.

2 tablespoons sugar
1 teaspoon ground cinnamon
8 ounces medium egg noodles (2/3 of a 12 ounce package)
1 (16 ounce) can pitted sweet dark cherries in heavy syrup
1 (10 ounce) can mandarin oranges in light syrup
1 cup sour cream (8 ounce container)
1 (8 ounce) package cream cheese, softened and cut into small pieces
1/2 cup sugar
2 teaspoons vanilla extract
4 large eggs or 1 cup egg substitute
1 (8 ounce) can crushed pineapple in juice

Steps:

  • For the topping: Put the sugar and cinnamon in a small bowl, and mix them well. Set the topping mixture aside.
  • For the kugel: Cook the egg noodles in a 5-quart or similar pot following the package directions. While the noodles are cooking, drain cherries and mandarin oranges in a colander, and rinse them slightly with cool water. When the noodles are done cooking, drain them well, and return them to the pot off the heat. Set aside.
  • Preheat oven to 350 degrees Fahrenheit. Coat a 9"x13" baking dish with non-stick cooking spray or grease it well.
  • In a food processor(fitted with a steel blade) or a blender, combine the sour cream, cream cheese, sugar, vanilla, and eggs. Process until the mixture is completely smooth, about 1 minute or longer, scraping down the sides of the container once or twice. Pour the mixture over the noodles, then stir the noodles gently with a large spoon so that the cream cheese mixture is evenly distributed. Add the drained cherries and mandarin oranges, along with the pineapple, and gently stir so that the fruit is evenly distributed.
  • Transfer the noodle mixture to the prepared baking dish. Smooth the top, pushing down any cherries that have floated to the top. Sprinkle all of the reserved cinnamon-sugar topping over the top of the kugel.
  • Bake the uncovered kugel at 350 degrees for 1 hour or until set. Let it rest for at least 10 to 15 minutes before cutting it. Serve warm or at room temperature, cut into squares.
  • Notes: If the kugel is made ahead, let it cool to room temperature. Then cover the top tightly with plastic wrap, and refrigerate or freeze the kugel. Defrost it, covered, in the refrigerator for several hours or overnight. Shortly before serving the kugel, reheat it, covered, in a microwave oven or a 350 degree oven until warmed through.
  • Also, try to use the mandarin oranges canned in syrup. They hold their shape better than those canned in juice. For this recipe, all the syrup is drained off. And again, don't use non-fat sour cream or cream cheese.

My hubby says this is the best kugel ever--high praise as he normally won't touch kugel. Lovely!:) Enjoy!! Update: I've sort of doubled this recipe (used a 4.8 qt. or #234 Pyrex pan (15 x 10 x 3 inches), still used same # of eggs, noodles, sugar, raisins, and cottage cheese but dbld. the cream cheese and vanilla; as a variation replaced the applesauce with sour cream plus I threw in about 1 1/2 cups ricotta cheese. Great!! By the way the topping is optional and then no need to cover pan while baking just check often to make sure top does not burn. To serve cut the kugel into small squares and enjoy either warm, cold or at room temperature. Note: The nutmeg and cinnamon are to taste (I use half a pinch of nutmeg and/or about one teaspoon of cinnamon).

6 eggs, beaten
3/4 teaspoon vanilla extract
1 1/3 cups sugar
3 tablespoons sour cream
1 (8 ounce) package cream cheese, at room temperature
1 1/2 lbs cottage cheese
16 ounces applesauce (I use cinnamon flavored)

1 cup golden raisin
1/2 cup melted butter (1 stick)
2 -3 cups frosted flakes, crushed (or corn flakes, enough to cover kugel)
2 -3 tablespoons melted butter

Steps:

  • Cook noodles in a large pot of boiling water, according to package directions. Rinse the noodles with cold water and let drain in a colander.
  • Beat the eggs in a large mixing bowl. Add the vanilla, sugar, sour cream, softened cream cheese, cottage cheese, and applesauce and beat with an electric mixer until combined.
  • Use a wooden spoon to stir in the drained noodles, nutmeg, cinnamon, raisins, and melted butter, mixing well to coat.
  • Using a rubber spatula, spread mixture evenly into a 13 x 9-inch baking dish. I transfer the kugel to a foil-lined baking sheet to catch any overflow.
  • Make the topping: in a medium bowl, combine the crushed frosted flakes (or cornflakes) with enough melted butter to moisten. Add a little cinnamon if you like.
  • Spread evenly over the top of the kugel.
  • Cover with aluminum foil and bake in a preheated 350F degree oven for one hour.
  • Uncover and bake an additional 30 minutes, checking frequently to make sure top does not burn (cover if top is getting too crispy, and bake until done).
  • Let kugel cool slightly before cutting into squares to serve. Makes 12-24 servings (depending on size of squares). May be eaten warm, cold, or at room temperature.Enjoy!

8 ounces broad egg noodles
1/4 cup butter
2 large eggs, lightly beaten
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon salt
8 ounces ricotta cheese (if you can find it, pot cheese is more authentic) or 8 ounces pot cheese (if you can find it, pot cheese is more authentic)
1 cup sour cream or 4 ounces soft cream cheese
1/2 cup raisins
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350. Grease an 8-inch square baking dish.
  • Cook noodles until tender, drain.
  • Put noodles in a large bowl, add the butter, and stir until butter is melted.
  • Beat together eggs, sugar, vanilla and salt. Stir in the ricotta and sour cream or cream cheese. Stir into the noodles and add the raisins.
  • Pour into prepared baking dish. Sprinkle with cinnamon.
  • Bake until golden brown, about 45 minutes.
  • Serve warm.
