TEXAS CAVIAR PARTY SALSA
This dip/salsa is fresh, delicious and nutritious. Everyone loves it, except my SIL who has an strange bean phobia. It's one of my most requested recipes.

Steps:
- Place all ingredients in a large bowl and mix well.
- Cover and place in refrigerator to marinate for a minimum of 2 hours.
- It's best made the day before, but my DH has been know to eat a big bowl full right away.

TEXAS CAVIAR
This is a wonderful salsa/dip that we serve at New Year's Eve parties so we can get a head start on "good luck" for the new year. Taste test to determine your own personal degree of hotness. To increase the "heat" add more jalapenos or some minced fresh cilantro.

Steps:
- Place peas in a colander and rinse off juice.
- Drain well.
- Combine black-eyed peas with next 3 ingredients in a medium size mixing bowl.
- Place jalapeno peppers, vinegar, oil, garlic clove, lime juice and avocado into blender and combine until smooth.
- Add avocado mixture to pea mixture and combine well.
- Add salt to taste.
- Chill for a minimum of 2 hours.
- Serve with tortilla chips or corn chips.

- In a large bowl, combine the peas, tomatoes, green pepper and onion. In a small bowl, whisk the dressing, lime juice, salt and pepper. Pour over black-eyed pea mixture and stir to coat. Cover and refrigerate for at least 1 hour. , Stir in avocado just before serving. Serve with chips.

THE ONLY TEXAS CAVIAR YOU SHOULD EVER EAT
I first tried this dip/salsa at a work picnic. It was so good I had to have the recipe. A real hit with parties and large gatherings. Serve with Tostitos scoop chips for a hearty taste! The secret is in the marinade. Not a difficult recipe but time consuming due to chopping of veggies.

- Mix all veggies and beans together.

I'm a "transplant" from Wisconsin currently living in Texas. Even after 20 years, I can't get enough of our wonderful local citrus. This is one way to work it into a main dish. - Chop up all the peppers,onion and cilantro.
- Put the oil, black pepper, splenda & apple cider vinegar in a saucepan. Bring to a boil and simmer until the splenda dissolves. Cool.
- Mix together all the other ingredients and pour cooled oil over.
- Refrigerate overnight.
- Serve with tostito scoops.
