SWEET NUT AND SEED GRANOLA
My regular Sunday morning activity: making this granola so I can fuel my week. Hyper-delicious + mega-nutrititious + not many dishes.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Spread almonds and walnuts on a rimmed baking sheet. Toast in the preheating oven until fragrant, 8 to 10 minutes.
- Transfer almonds and walnuts to a very large bowl. Add oats, apricots, cranberries, honey, olive oil, apricot preserves, wheat germ, sunflower seeds, chia seeds, flax seeds, oat bran, black sesame seeds, cinnamon, vanilla extract, and nutmeg. Mix well with your hands.
- Line the baking sheet with parchment paper. Spread granola mixture evenly across.
- Bake in the preheated oven for 15 minutes. Stir the mixture; bake for 15 minutes more. Stir once again, then press the mixture down firmly. Return to the oven for 15 minutes more.
- Let granola cool and dry for at least 2 hours. Crumble and transfer to an airtight container.

CRUNCHY GRANOLA
Steps:
- In a small saucepan, combine the honey, oil and brown sugar; cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in vanilla. , In a large bowl, combine the oats, almonds, coconut, sesame seeds and sunflower kernels. Add honey mixture, stirring until evenly coated. Spread onto two ungreased baking pans. , Bake at 300° for 20 minutes, stirring frequently. Stir in raisins. Bake 10 minutes longer. Cool, stirring occasionally. Store in an airtight container.

SWEET 'N CRUNCHY RAISIN NUT GRANOLA
This recipe was recommended to me by my nutritionist. The sweetness and crunch of the granola and the tanginess of the raisins compliment each other wonderfully. My friends and family simply cannot stop eating it...I usually make a double batch.

Steps:
- Preheat the oven to 275 F.
- In a large bowl, toss the almonds, pecans, oats, what germ, and cinnamon.
- Set aside.
- In a small saucepan, combine the honey, molasses, maple syrup, and vegetable oil.
- Warm over low heat until bubbles/foams and turns light brown.
- Add the mixture to the nuts and grains and toss throroughly.
- Spread the granola on a large, rimmed baking sheet and bake for about 40 minutes, stirring throroughly every 10 minutes, until the nuts and grains are nicely toasted.
- Let the granola cool and stir in the raisins.
- Once thoroughly cooled, store the granola in an airtight container for up to a month.

- In a mixing bowl combine the coconut sugar, maple syrup, vanilla extract, sea salt, cinnamon, and the melted coconut oil. Because the coconut oil will cool and start to harden, quickly stir in the gluten-free old-fashioned rolled oats, followed by the shredded coconut and the pecans. Stir everything together until combined. If necessary, knead by hand.
- Spread the mixture in a thin layer on each of the baking sheets. Press down with a spoon, if needed. Bake for 18-22 minutes, rotating once halfway through. Remove from the oven and let cool for several hours. Break the granola up by hand and store in an airtight container for up to one week.

- Preheat oven to 350 degrees. In a large bowl whisk together the brown sugar, honey, vanilla, oil, and salt.
- Add the old fashioned oats and stir. Add the coconut and chopped almonds. At this point if the mixture looks a little loose, like its falling apart, then add a tablespoon at a time of honey until the mixture starts to look sticky.
- Spray a cookie sheet with cooking spray and spread the granola on the sheet. You can also use parchment paper.
- 4) Bake at 350 degrees for about 20-30 minutes. Stir it around every 7-10 minutes to make sure it cooks evenly. Keep an eye on it so it doesn’t burn!
